There are so many methods for cooking corn, but this grilled corn on the cob comes out delicious every time. It's an easy side dish for summer!

8 ears yellow corn, in the husk
Kosher salt, for serving
6 tbsp. salted butter, softened
1 garlic clove, chopped
2 tbsp. chopped chives
1/4 tsp. ground paprika
1/4 tsp. ground black pepper

Steps:

  • Heat a grill pan or outdoor grill over high heat (about 450˚ to 500˚).
  • For the grilled corn: Pull off all of the layers of the green husk, except for the two layers closest to the kernels. Pull those two layers back without detaching them. Remove all of the thin threads of silk from around the kernels of the corn. Fold the reserved pieces of husk back over the corn kernels, leaving a couple of gaps of open space.
  • Place the corn on the grill over direct heat, cover and cook for 5 minutes. Rotate each ear with a ¼ turn, cover and continue to cook 5 more minutes. Repeat 1 to 2 more times to cook all sides of the corn, 15 to 20 minutes total. Corn will become bright yellow and caramelized in spots when cooked through. Remove from the heat.
  • For the garlic-chive butter: In a small bowl, combine the butter, garlic, chives, paprika, and black pepper. Mash and stir with a fork to combine.
  • Remove the charred husks from the corn. Spread all over with garlic-chive butter, sprinkle with salt, and serve immediately.

4 ears fresh sweet corn (husks on* (see notes))
2 tablespoons unsalted butter
1 tablespoon finely grated Parmesan cheese (or nutritional yeast)
1/2 teaspoon chili powder
1/4 teaspoon chipotle chile powder
¼ teaspoon ground cumin
¼ teaspoon kosher salt (plus additional to taste)
Zest and juice of 1 small lime (divided)
3 tablespoons unsalted butter
Kosher salt
Ground black pepper

Steps:

  • Fill a large bowl or your largest pot with enough cold water to completely submerge the corn.
  • Pull away the outermost layer of the husks. With scissors or kitchen shears, trim off the topmost part of the husks up to the cob, including the silk tassel. Place the ears in the water. Let sit for at least 10 minutes or up to 8 hours (this will keep the husks from burning).
  • Heat a gas or charcoal grill to medium (about 350 to 400 degrees F).
  • Remove the corn from the water and shake off excess. Place the corn on the grill, cover, then grill for 15 to 20 minutes, turning it every 5 minutes or so to ensure the corn cooks evenly. When the corn is done, the kernels should be tender when pierced with a thin, sharp knife.
  • Meanwhile if making the Mexican corn, in a small bowl, melt the butter. Stir in the Parmesan, chili powder, chipotle chile powder, cumin, and salt. Zest the lime directly into the bowl, then cut the lime into wedges. If making classic corn, skip this step and butter and season the corn directly.
  • Let the corn cool for at least 5 minutes. When cool enough to handle, peel back the husks and remove any stuck-on bits of silk (any remaining silk should come away easily, but if it is stubborn, it can be rubbed away with a kitchen towel).
  • Brush the grilled corn all over with the Mexican butter; serve hot with a wedge of lime to squeeze over the top. Or for classic corn, butter the corn and season with salt and pepper as desired.

2 pounds red tomatoes, halved
2 lemons, halved
7 small-to-medium celery stalks, preferably with leaves
1 1/2 tablespoons Worcestershire sauce
1 1/2 teaspoons freshly grated horseradish
1 1/2 teaspoons sugar
1 1/2 teaspoons kosher salt, plus more, for seasoning
1/2 teaspoon freshly ground black pepper, plus more, for seasoning
8 ounces (1 cup) vodka
Tabasco sauce or Sriracha, for serving

Steps:

  • Light a grill and set it up for direct heat or preheat a grill pan. Brush the grill grates with oil and arrange the tomatoes and lemons cut side down and grill over high heat until well browned on the bottoms, 4 to 5 minutes. Grill 3 of the celery stalks, turning occasionally, until the leaves are dark brown or black and the stalks are blistered in spots, 5 to 6 minutes. Grill the remaining 4 celery stalks just until the leaves are singed, about 1 minute.
  • Transfer the tomatoes and fully grilled celery stalks to a food processor and let cool slightly. Squeeze 3 tablespoons of juice from the lemons and add it to the food processor; reserve the lemons. Add the Worcestershire, horseradish, sugar, 1 ½ teaspoons of salt and ½ teaspoon black pepper to the processor and process until as smooth as possible.
  • Strain the Bloody Mary mix through a fine sieve into a liquid measuring cup, pressing on the solids; you should have at least 2 cups of mix. Season the mix with more lemon juice, salt and pepper, if desired.
  • For each drink: In an ice-filled cocktail shaker, combine ½ cup Bloody Mary mix with 2 ounces of vodka; close and shake well. Pour the Bloody Mary into a tall ice-filled, garnish with a singed celery stalk and serve with Tabasco or Sriracha, for seasoning. Fill the cocktail shaker with clean ice before making each drink.

4 ears sweet corn in the husks
6 tablespoons unsalted butter, at room temperature (if using salted butter, omit the salt)
3 tablespoons minced fresh flat leaf parsley or cilantro
1 clove garlic, minced
Salt and freshly ground black pepper

Steps:

  • Set up the grill for direct grilling and preheat to high.
  • Strip back the corn husks, as you would peel a banana, exposing the kernels. Bring the husks together beneath the ear of corn to make a sort of handle and tie with string.
  • Place the butter, parsley, and garlic in a mixing bowl and whisk or beat until smooth and creamy.
  • Lightly brush the corn with a little of the butter and arrange on the grate, positioning the ears in such a way that the husks are away from the fire. Grill the corn until the kernels are handsomely browned on all sides, turning as needed, basting with the remaining butter, and most important, seasoning generously with salt and pepper. Serve at once and get ready for one of the most fabulous tastes in life.

1 1/2 sticks butter, cut into chunks, at room temperature
2 tablespoons Cajun seasoning
1 celery stalk, finely chopped
1/4 small white onion
1/4 green bell pepper, cut into chunks
6 ears unhusked corn, soaked in water for 20 minutes
Lemon wedges, for serving

Steps:

  • Heat a grill to 400 degrees F.
  • In a small food processor add the butter, Cajun seasoning, celery, onion and bell pepper.
  • Pull the corn husks open, then remove the silk and secure the husks open in a bundle with soaked twine or a piece of husk ripped from each ear.
  • Place the corn over the direct heat of the grill and cook, rotating occasionally, until the corn chars, 10 to 15 minutes.
  • Brush or smear with butter and cook over the indirect heat while basting and turning for a few more minutes. Serve warm with a spritz of lemon.
