1 1/2 lbs boneless, skinless chicken breasts (4-5 small-ish breasts) or boneless, skinless chicken thighs (6-8 pieces- see notes.)
2 tablespoons fresh oregano, rosemary, thyme, or sage, finely chopped (or use a combo)
zest from one medium lemon (2 tablespoons) and save the lemon for grilling/ juicing.
1 tablespoon granulated garlic, or 4 garlic cloves, finely minced
1 1/4 teaspoons kosher salt
1/2 teaspoon cracked pepper
1/4 teaspoon chili flakes- optional (Aleppo or Urfa Biber are good here)
1/4 cup olive oil

Steps:

  • thickest part of the chicken breast into uniform thickness aiming for 3/4 inch thick and if very large, cut into uniform sizes roughly 5-6 ounces each.
  • Mix marinade ingredients together in a small bowl. Set aside 2 tablespoons (for garnish). Place chicken and marinade in a bowl, baking dish or large zip lock bag and massage to coat all sides well. Marinate for 30 minutes, a few hours, overnight or even a few days.
  • Grill: Preheat grill to medium-high. (See notes for chicken thighs.) Lift chicken breasts out of the bowl, letting most of the oil drip off -before carefully placing it on the grill. Cut the zested lemons in half, placing open sides down on the grill too. Feel free to add any veggies to the grill- here we added halved tomatoes. Close the grill lid and cook for 5-6 minutes (or until deep golden grill marks appear) before flipping. Cook the other side, 5-7 minutes, and lower heat or move to a cooler spot until the thickest part of the breast registers at 160F and meat is no longer pink, and the meat looks opaque. Let it rest 5-10 minutes before serving.
  • Place the grilled chicken on a serving platter, squeeze generously with the grilled lemon, and tuck in fresh herbs for garnish. Spoon the reserved 2 tablespoons marinade over the chicken, and serve! (NOTE: DO not use the "used marinade" that the raw chicken was in for this!).

You'll need a perforated grill pan for this recipe (or use a double thickness of foil, oiled, with dime-size holes poked through about an inch apart). 1/2 cup finely chopped flat-leaf parsley
1/4 cup finely chopped mint
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon ground allspice
2/3 cup plus 2 tbsp. extra-virgin olive oil
About 1/2 tsp. kosher salt
About 1/4 tsp. freshly ground pepper
8 boned, skinned chicken thighs (about 1 1/2 lbs. total)
4 large firm-ripe heirloom tomatoes (about 2 lbs.), sliced 1/2 in. thick

Steps:

  • Set a large perforated grill pan to one side of a grill's cooking grate. Heat grill to medium-high (450°).
  • In a large bowl, whisk together parsley, mint, lemon juice and zest, allspice, 2/3 cup olive oil, and 1/4 tsp. salt. Reserve 1/2 cup herb oil and set aside. Whisk 1/4 tsp. salt and the pepper into herb oil in bowl; add chicken and turn to coat well.
  • Set chicken next to grill pan and grill, covered, 5 minutes. Discard marinade.
  • Gently toss tomatoes with remaining 2 tbsp. olive oil, plus salt and pepper to taste. Arrange tomatoes in a single layer on grill pan. Turn chicken over. Cook tomatoes and chicken, covered, until tomatoes are softened with a bit of char and chicken is nicely browned and cooked through (cut to test), 4 to 6 minutes.
  • Transfer tomatoes to a platter. Arrange chicken on top and drizzle with 1/4 cup reserved herb oil. Serve with remaining herb oil.

1/4 cup tightly packed fresh basil leaves

1 garlic clove, minced

8 plum tomatoes
4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • For marinade, place first five ingredients in a blender. Cut 4 tomatoes into quarters and add to blender; cover and process until blended. Halve remaining tomatoes for grilling., In a bowl, combine chicken and 2/3 cup marinade; refrigerate, covered, 1 hour, turning occasionally. Reserve remaining marinade for serving., Drain chicken, discarding marinade. Place chicken on an oiled grill rack over medium heat. 2 tablespoons minced fresh oregano or 2 teaspoons dried oregano
2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 shallot, minced
1 tablespoon minced fresh lemon balm or 1 teaspoon grated lemon zest
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon crushed red pepper flakes
1 broiler/fryer chicken (3 to 4 pounds)

Steps:

  • Prepare grill for indirect heat using a drip pan. In a small bowl, mix the first 11 ingredients. With fingers, carefully loosen skin from chicken; rub seasoning mixture under and over skin. Tuck wings under chicken and tie legs., Place chicken over drip pan and grill, covered, over indirect medium heat until a thermometer inserted in thickest part of thigh reads 170°-175°, 1-1/4 to 1-1/2 hours, rotating occasionally. 1 chicken, 3 to 3 1/2 lbs., cut up
1 dash(es) salt
1 dash(es) black pepper
BASTING SAUCE
2 Tbsp oil or melted butter
3/4 c tomato ketchup or chili sauce
2 Tbsp lemon juice
2 clove garlic, minced or pressed
3 Tbsp fresh chopped basil or 2 tsp. dried basil leaves

Steps:

  • 1. Cut off excess fat from chicken pieces.
  • 2. Loosen the skin away from the meat (this helps the basting sauce to reach the meat underneath).
  • 3. Sprinkle chicken with salt and pepper.
  • 4. Mix together and blend well the oil, tomato ketchup or chili sauce, lemon juice, the garlic and the herbs used.
  • 5. Place chicken pieces on rack.
  • 6. Brush on both sides with basting sauce.
  • 7. Grill chicken for 12 to 15 minutes on one side, brushing with basting sauce from time to time.
  • 8. Turn chicken over.
  • 9. Brush again with sauce.
  • 10. Grill chicken for another 12 to 15 minutes or until chicken is done and juices run clear when pierced with a fork.
  • 11. Serve immediately with crusty bread and a tossed green salad, tomatoes and crispy baked potato wedges.

While you could rest grilled chicken on a cutting board to ensure the juices don't run out of the meat when it's sliced, a more delicious option is to place the chicken on a pile of tomatoes, corn and red onion. The seasoned drippings act as a no-effort warm dressing, bolstering the flavor of the vegetables and softening their raw edges. Before grilling, the chicken is rubbed with chili powder, the spice mix that typically includes dried oregano, garlic, onion, cumin and ground chiles, for complex flavor with minimal effort. Fresh oregano, while optional, emphasizes the herbs in the chili powder. Use this technique of resting grilled proteins on fresh produce for many summer dinners: pork chops on peaches, steak on chopped scallions and ginger, sausages on radicchio and halloumi on citrus.

1 1/2 pounds boneless, skinless chicken thighs, patted dry
3 tablespoons extra-virgin olive oil, plus more for greasing the grill grates

Steps:

  • Heat the grill to medium-high. In a medium bowl, coat the chicken with 2 tablespoons olive oil, the chili powder and 1/2 teaspoon salt; set aside. (You can do this step up to 1 day ahead; refrigerate and bring to room temperature before cooking.)
  • On a large platter, layer the tomatoes, corn kernels, red onion and fresh oregano (if using). Season with 3/4 teaspoon salt and drizzle with the remaining 1 tablespoon olive oil.
  • When ready to grill, clean the grates with a grill brush, then lightly grease the grates. Grill the chicken until browned and cooked through, and it releases easily from the grates, 5 to 7 minutes per side. (If flare-ups occur, move the chicken to an area of the grill with smaller flames underneath. For a gas grill, close the lid between flips, listening and peeking occasionally for flare-ups.)
  • Transfer the chicken to the platter. Let rest for 5 to 20 minutes before serving.
