GRILLED PEASANT BREAD WITH OLIVE BUTTER



Grilled Peasant Bread with Olive Butter image

4 tablespoons softened unsalted butter
2 tablespoons black olive spread, such as Tapenade
1 tablespoon finely chopped fresh basil leaves (about 6)
l loaf crusty country-style bread
1/3 cup extra-virgin olive oil
Salt and freshly ground pepper
1 large clove garlic

Steps:

  • Make butter: In a bowl combine all ingredients.
  • Cut bread into 1/2 to 1-inch thick slices. Brush both sides of bread with oil, season with salt and pepper and transfer to a heated grill. Grill each side of the bread for 1 to 2 minutes, or until lightly toasted and grill marked. Rub bread with the garlic clove. While bread is still hot spread with some of the butter. Transfer to a serving dish.

2 teaspoons chili lime seasoning
1 tablespoon lime juice
1 loaf French bread, cut in 1/2 lengthwise

Steps:

  • Preheat a grill pan over a medium-high heat.
  • Combine butter, chili lime seasoning and lime juice in a bowl and mix well to blend.
  • Using a butter knife lightly coat both halves of bread with the lime butter. Place on grill and grill about 4 minutes.
  • Slice and serve with chicken.

1 loaf ciabatta bread
1 1/2 tablespoons extra-virgin olive oil
2 large cloves garlic
1 tomato, halved crosswise
Salt and freshly ground black pepper

Steps:

  • Preheat a grill pan over medium-high heat. Slice ciabatta in half lengthwise. Then cut each half into 1-inch slices. In batches as needed, grill the ciabatta slices, cut side down until they are golden and crisp, about 2 minutes. Working quickly, drizzle the toasted sides with extra-virgin olive oil. Rub the garlic cloves over the grilled bread, then rub the cut side of the tomatoes over the grilled bread. It's important to do this while the bread is still hot or warm, otherwise the garlic won't melt into the bread. Sprinkle with salt and pepper, and serve warm.

6 tablespoons butter, room temperature
2 hard-boiled large egg yolks
2 tablespoons finely chopped drained oil-packed sun-dried tomatoes, 1 tablespoon oil reserved
8 drained pimiento-stuffed green olives, finely chopped
4 canned anchovy fillets, drained, finely chopped
4 teaspoons drained capers
2 teaspoons chopped fresh rosemary
2 teaspoons fresh lemon juice
1/2 teaspoon dried crushed red pepper
2 cups hickory smoke chips, soaked in water 30 minutes, drained
12 1/2-inch-thick crusty country-style bread slices (each about 4 x 3 inches)

Steps:

  • Mash butter and yolks in medium bowl to form paste. Mix in sun-dried tomatoes, reserved 1 tablespoon oil and next 6 ingredients. Season with salt and pepper. (Can be made 1 week ahead. Cover and freeze. Bring to room temperature before continuing.)
  • Prepare barbecue (medium-high heat). Place smoke chips in 8 x 6-inch foil packet with open top. Set atop coals 5 minutes before grilling bread. Grill bread until toasted, about 2 minutes per side.
  • Spread butter mixture over hot bread. Transfer to platter and serve.

a 16- to-18 inch ficelle (very thin French bread)
about 1/4 cup olive oil
2 ripe avocados (preferably California)
2 tablespoons diced onion
1 1/2 tablespoons fresh lemon juice
1 garlic clove, chopped
3/4 teaspoon ground cumin

  • Cut bread diagonally into 1/4-inch-thick slices and brush both sides of each slice with oil.
  • Prepare grill (or preheat oven).
