WHOLE30® BANANA BREAD DROP MUFFINS
You miss bread. I get it. I do, too. Try these delicious banana bread drop muffins, using almond flour and sweetened only with bananas. No grains, no added sugar, no dairy, but you won't believe how good these things are. Makes 12 muffins. Easily split the recipe in half for 6.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking pan with 2 teaspoons coconut oil.
- Combine almond flour, salt, and baking soda in a bowl. Mix well.
- Break bananas into pieces and place in a microwave-safe bowl. Microwave until soft, about 30 seconds. Mash until creamy. Add eggs and 1/4 cup coconut oil; mix well. Combine with the almond flour mixture. Drop batter onto the prepared baking pan in biscuit shapes.
- Bake in the preheated oven until peaks are lightly browned, about 17 minutes. Allow to cool slightly before serving.

- add shortening mix.
- then add eggs,bananas, vanilla and blend well.
- drop on ungreased cookie sheet.
- sprinkle with sugar and cinnamon mixture.

- Puree bananas to 1 cup.
- Cream butter and sugar.
- Beat in bananas, eggs and vanilla.
- Combine flour, cinnamon and baking soda.
- Gradually beat in dry ingredients into banana mixture.
- Fold in chips, nuts and raisins.
- Drop by tablespoon onto greased cookie sheets - bake in 375°F oven for 12 minutes until golden brown.
- Cool.

- To make the drop scones, place all the ingredients together in a bowl. Mix until well combined, to create a thick batter.
- Heat the vegetable oil in a medium non-stick frying pan on a medium heat.
- Ladle the mixture into the pan in small dollops. Cook for 1-2 minutes and turn over. Cook until golden brown.
- To make the caramelised bananas, in a medium sized frying pan on a medium heat melt the butter.
- Add the sugar and cook for two minutes until golden.
- Add the cream and banana and cook for one more minute.
- Serve the drop scones with the caramelised bananas on top.

- Preheat oven to 400 degrees Fahrenheit.
- Sift flour, baking powder, baking soda, and salt together in a small, separate bowl.
- Beat shortening in larger bowl until creamed, adding sugar. Stir in vanilla.
- Beat in eggs.
- Add flour mixture alternately with mashed bananas, beating after each addition until smooth.
- Fold in chocolate chips with a large spoon, if desired.
- Drop by spoonfuls onto ungreased cookie sheets.
- Bake for 8-10 minutes. Let cool on pan for 1-2 minutes before removing to allow the bottoms to properly solidify.
