GRILLED POTATOES IN FOIL (POTATO PACKETS)



Grilled Potatoes in Foil (potato packets) image

Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

Number Of Ingredients 7

3 lbs potatoes (cut ¼" slices)
1 small onion (thinly)
3 tablespoons butter
salt & pepper (to taste)
mushrooms
real bacon bits
cheese

Steps:

  • Place foil packets on the counter and spray with cooking spray.
  • Wash and slice potatoes (and onions/mushrooms if using).
  • Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.
  • Grill over medium heat for 30 minutes or until soft.

3 tablespoons olive oil
3/4 pound red potatoes, cut into 1/4-inch dice
1 small onion, finely chopped
1/4 pound sweet Italian sausage, casings removed
1/2 teaspoon dried thyme
1/2 teaspoon salt
1 sheet frozen puff pastry, from standard package (17.3 ounces), thawed
All-purpose flour, for dusting
1 large egg, lightly beaten

Steps:

  • Preheat oven to 425 degrees. Heat oil in a large saucepan over medium heat until hot but not smoking. Add potatoes, and cook, stirring frequently, until tender, about 12 minutes. Stir in onion and sausage, breaking up sausage as it cooks; continue cooking until meat is no longer pink, about 5 minutes more. Stir in thyme and salt; remove from heat.
  • Place puff pastry on a lightly floured surface, unfold, and roll out to a 12-inch square. Cut into quarters to get four 6-inch squares. Place one quarter of the sausage mixture in the middle of each puff-pastry square. Gently fold one corner of the square over the filling to the opposite corner, forming a triangle; press edges to seal. Repeat with each remaining square.
  • Place filled pockets on a rimmed baking sheet, and brush lightly with egg. Bake until golden brown, about 20 minutes. Serve immediately.

2 pounds medium red potatoes (about 7), cut into wedges
1/4 cup thinly sliced green onions
6 slices ready-to-serve fully cooked bacon, chopped
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a large bowl, toss potatoes with green onions, bacon, salt and pepper. Place half of the mixture on a greased double thickness of heavy-duty foil (about 18 in. square); dot with 1 tablespoon butter. Fold foil over potato mixture and crimp edges to seal. Repeat to make a second packet., Grill, covered, over medium heat 20-23 minutes on each side or until potatoes are tender. Remove from grill., Open foil carefully to allow steam to escape. Sprinkle potatoes with cheese. Grill opened packets, covered, 3-5 minutes longer or until cheese is melted.

3 1/3 ounces instant mashed potatoes, sour cream and cheddar
1 3/4 cups hot water
3 ounces cream cheese, softened
3/4 cup cooked ham, finely chopped
2 medium green onions, chopped
1/4 cup bacon bits
1/4 cup shredded cheddar cheese
8 ounces Pillsbury Refrigerated Crescent Dinner Rolls
1 tablespoon butter, melted
1 teaspoon red pepper sauce

Steps:

  • 1. In large bowl, mix the mashed potatoes and hot water. Add cream cheese; beat until blended. Stir in the ham, onions, bacon and Cheddar cheese.
  • 2. Separate crescent dough into 8 triangles. Slightly stretch corners of short side of each triangle to make longer. Place on ungreased cookie sheet. Spoon 1/3 cup potato mixture on center of each triangle. Bring corners to center over filling, overlapping ends; press gently to seal.
  • 3. Mix butter and pepper sauce; brush over tops. Bake at 375°F 10 to 12 minutes or until golden brown.

These easy Baked Stuffed Potato Pockets, make the perfect appetizer for any occasion. A tasty potato pastry is filled with ham or prosciutto and your favourite cheese.

Number Of Ingredients 11

1 cup mashed potatoes* cooled (lightly packed - about 2 medium potatoes) ((250 grams))
1 large egg yolk
¼ teaspoon salt
1-2 dashes pepper
½ cup freshly grated parmesan cheese ((50 grams))
¾ cup all purpose flour ((100 grams))
½ teaspoon baking powder
1 tablespoon fresh parsley minced
2-4 slices ham/prosciutto/turkey (thin strips or cubes)
½ cup cheese small cubes (fontina, gruyere or firm mozzarella - or your choice)
1-2 tablespoon olive oil

Steps:

  • In a large bowl add the mashed potatoes, egg, salt and pepper. Start to combine with a fork. Then add the parmesan cheese, flour, baking powder and chopped parsley and mix to almost combine.
  • You can either mix this dough by hand or with a food processor. When almost combined move to a floured flat surface and knead into a ball. Wrap in plastic and chill for at least 30 minutes.
  • Cut your choice of cheese and ham or prosciutto into small pieces.
  • Pre-heat oven to 350F (180C). Line 2 cookie sheets with parchment paper.
  • It's easier to work with half the dough at a time, on a floured flat surface, lightly flour the top of the pastry (if you find it sticky) roll the dough into 1/8 inch thickness and cut out with round or even heart cookie cutters (2 ¾ - 3 inches / 7 cm). Make sure you have an even amount of cut outs. Place half the rounds on the prepared cookie sheets.
  • On one of the rounds, place some cut up ham or prosciutto and 3-4 small cubes of your favourite cheese. Cover with another round, seal shut with your fingers (easier if you dip them in water first) then close again with the tongs of a fork. Drizzle with olive oil then bake for 15-20 minutes or until golden brown. Serve immediately.

This portable recipe was created by Kathy Patalsky, of Los Angeles. Ms. Patalsky came up with the recipe in college to bring to a family feast. "Since I love Thanksgiving, I didn't want to miss out on any of my favorite dishes," she said. "So instead of bringing multiple dishes and crowding the already crowded dinner table, I made these little gems. I wanted my entire vegan Thanksgiving meal stuffed inside a puffy pita pocket."

1 medium sweet potato, peeled, cooked and mashed
1/4 cup garlic hummus
1 tangerine, peeled and chopped
2 teaspoons maple syrup
1/8 teaspoon black pepper
pinch of salt
1/2 cup onion, chopped
1/2 cup carrot, peeled and chopped
1/2 cup flat leaf parsley, finely chopped
2 pita pockets
Extra virgin olive oil, to brush pitas
1-2 sprigs fresh thyme
1 cup garlic hummus
2 cups Sweet Potato Mash
1/2 cup cranberry sauce
1 cup baby spinach, chopped

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Combine the sweet potato, 1/4 cup hummus, tangerine, maple syrup, black pepper and salt. Mash until completely incorporated, and then fold in the onion, carrot and parsley. Set aside.
  • Brush the pitas with olive oil, sprinkle with a pinch of fresh thyme and slice into four triangular quarters. Arrange pita bread on a baking sheet and bake for 10 minutes. You want the edges to brown and the pitas to lightly toast, yet still stay soft on the inside. Do this right before you are ready to fill your pockets.
  • Open pita and add the following to each pocket - 1 teaspoon garlic hummus, 2 tablespoons sweet potato mash, 1 tablespoon cranberry sauce, a tablespoon of spinach. Close the pitas and return to baking sheet. Continue until all the pita triangles are assembled.
  • Warm stuffed pitas in oven for another 5 to 10 minutes before serving to lock in the flavors. Serve warm.
