Sweet and Sour Green Beans made with canned green beans, smokey bacon, crunchy water chestnuts, and sweet onions, are a little bit sweet, a little bit sour, and a whole lot of delicious, bite after bite! It's also one of those classic dishes that you will turn to time and time again when you want a special vegetable side dish.

6 slices bacon
⅔ cup granulated sugar
⅔ cup white vinegar
½ yellow sweet onion (medium, sliced)
2 cans cut green beans (14.5 oz cans, low sodium)
8 ounces water chestnuts (canned, sliced)

Steps:

  • Preheat the oven to 350 degrees F.
  • Pan-fry the bacon in a large oven-safe saute pan over medium-low heat and frequently turn for about 10 minutes or until it is browned and crispy. Remove from the pan and drain on paper towels. Leave the drippings in the pan.
  • Add sugar and vinegar and stir until everything is well combined. Add the onions and cook for 15 minutes.
  • Add two cans of green beans, one drained and one not drained, and add the can of drained sliced water chestnuts. Combine and simmer for 5 minutes.
  • Crumble the bacon and add it to the green bean mixture - cover and bake for 30 minutes.
  • Serve immediately!

1 ½ pounds green beans, trimmed, or more to taste
1 tablespoon water, or as needed
1 teaspoon peanut oil
1 cup chopped onion
6 slices bacon, or more to taste
¾ cup brown sugar
¾ cup apple cider vinegar
¼ teaspoon liquid smoke flavoring
½ teaspoon ground black pepper

Steps:

  • Place green beans in a microwave-safe bowl and add enough water to make a layer in the bottom; heat in microwave until green beans are tender yet firm to the bite, 1 to 3 minutes. Drain.
  • Heat peanut oil in a large wok or skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Transfer onion to a bowl and discard any remaining oil.
  • Place the bacon in the wok or skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and cut into bite-size pieces. Reserve 4 to 5 tablespoons bacon drippings in the wok.
  • Mix onion, brown sugar, vinegar, and liquid smoke in the reserved bacon drippings; cook and stir until sauce is bubbling and brown sugar is dissolved, about 5 minutes. Add green beans to sauce and stir to coat; cook until green beans are heated through, 2 to 3 minutes.
  • Transfer green bean mixture to a microwave-safe casserole dish; season with black pepper. Serve immediately or warm in the microwave, if needed.

2 (15 ounce) cans green beans, drained, juices reserved
3 slices bacon, chopped
1 cup chopped onion
1 tablespoon all-purpose flour
¼ cup apple cider vinegar
2 tablespoons sugar
1 teaspoon salt
¼ teaspoon pepper

Steps:

  • Cook bacon in a medium skillet over medium-high heat, stirring occasionally, until well-browned. Add onion and cook until translucent. Stir in flour and cook 2 minutes more.
  • Pour vinegar and 3/4 cup of the reserved green bean liquid into the pan. Add sugar, salt, and pepper, and stir to combine. Bring to a boil, reduce to a simmer, and stir in the green beans. Continue cooking at a low simmer until beans are hot.

1 1/2 pounds green beans, trimmed
1/4 pound smoked bacon, chopped (about 3 slices)
1/4 cup chopped shallots (about 2 shallots)
1 garlic clove, chopped
2 tablespoons sherry wine vinegar
1 1/2 tablespoons Dijon mustard
1/2 teaspoon dry mustard
1/4 cup extra-virgin olive oil
Kosher salt
1/2 cup crumbled soft fresh goat cheese
1/4 cup dried sweetened cranberries

Steps:

  • Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain. Pat dry. Place the beans in a large bowl.
  • Cook the bacon in a skillet, and transfer to drain, reserving the drippings in the skillet. Add the shallots and garlic to the drippings. Saute over medium, 1 minute or just until soft. Add the vinegar, Dijon and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Remove from the heat and slowly whisk in the olive oil.
  • Toss the beans with the warm dressing. Season with salt. Arrange on a serving platter. Sprinkle with the reserved bacon, goat cheese and dried cranberries. Serve immediately.

8 bacon strips, diced
2 medium onions, halved and thinly sliced
1 cup packed brown sugar
1/2 cup cider vinegar
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon garlic powder
1 can (28 ounces) baked beans, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) lima beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove with slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onions in the drippings until tender. Add brown sugar, vinegar, salt, mustard and garlic powder. Bring to a boil. , In a 5-qt. slow cooker, combine beans and peas. Add onion mixture and bacon; mix well. Cover and cook on high for 3-4 hours or until heated through.

The beans can be left whole (for effect) or cut - it's your choice. Note that the marinating time is very important, and is included in the cooking time.

Steps:

  • Trim beans, steam for 15 minutes, and set aside.

We rarely have leftovers of this recipe, and when we do, they're GREAT the second time around. NOTE: You can substitute canned beans for fresh, just skip the directions for cooking the beans.

1/2-1 lb thick-cut bacon (or less)
1 lb green beans
2 tablespoons bacon fat (reserved)
1 cup boiling water
1/2 teaspoon salt
1 teaspoon cornstarch
3 tablespoons brown sugar
3 tablespoons cider vinegar (white will do in a pinch)
1 tablespoon soy sauce
1/4 cup cold water

Steps:

  • In a large cast-iron skillet, fry bacon until nearly crisp; reserve at least 2 T. bacon fat in the pan.
  • Meanwhile, prepare beans: cut into 1-inch pieces; place in skillet with reserved grease, boiling water, and salt. Cover and heat quickly until beans steam (boil), then turn heat down and cook for 15-20 minutes (tender-crisp) DO NOT DRAIN.
  • Mix cornstarch with sugar, vinegar, soy sauce and water; pour over beans; stir and cook until slightly thickened and clear.
  • Crumble at least 4 slices of bacon into the beans; stir to mix. Use MORE bacon if this is more of a "main dish"
  • OPTION: Fry 1 medium chopped onion in the bacon grease; remove from pan BEFORE cooking the beans; add with the bacon at the end.

1/2 lb. thick-cut bacon, cut crosswise into 1/8-inch strips
1/2 yellow onion, finely minced
1 cup apple cider vinegar
1 cup sugar
1 cup chicken stock
Kosher salt and freshly ground pepper, to taste
3 lb. green beans, trimmed

Steps:

  • Directions: In a large Dutch oven over medium heat, cook the bacon until browned and crispy, 8 to 10 minutes. Transfer to a paper towel-lined plate. Reserve 2 Tbs. of the bacon fat in the pan. Pour the remaining fat into a heatproof container and set aside. Return the pot to medium heat, add the onion and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Stir in the vinegar and, using a wooden spoon, scrape up the browned bits from the pan bottom. Stir in the sugar, bring to a simmer and cook until the mixture is reduced by half, about 10 minutes. Add the stock and half of the bacon. Simmer over medium heat until the liquid is slightly reduced, about 5 minutes. Add the reserved bacon fat and season with salt and pepper. Add the green beans and bring to a simmer over medium heat, stirring occasionally to coat them with the dressing. Cook until the beans are crisp-tender, about 20 minutes. Remove from the heat and let the beans stand in the dressing for at least 30 minutes or up to 1 hour, stirring occasionally to coat them with the dressing.
