These spicy Szechuan Green Beans are the perfect addition to any meal!

1 pound green beans
2 tablespoons vegetable oil
2 cloves garlic (minced)
1 teaspoon fresh ginger (minced)
2 tablespoons soy sauce
1 tablespoon garlic chili paste or Sambal Oelek (or more to taste)
½ teaspoon sesame oil

Steps:

  • Rinse and trim green beans. Pat dry.
  • Heat oil in a skillet over medium-high heat. Add green beans and stir-fry 3-4 minutes.
  • Add garlic and ginger, cook 30 seconds, or until fragrant. Stir in remaining ingredients and cook 3 minutes or until beans are tender-crisp and sauce is slightly thickened

Kosher salt
2 pounds green beans, trimmed
3 tablespoons unsalted butter
4 medium shallots, sliced
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Fill a large bowl with ice water; generously salt the water.
  • Add the green beans to the boiling water and cook until bright green and just tender, 4 to 6 minutes. Drain and transfer to the ice water to cool completely. Drain again and transfer to a paper towel-lined baking sheet; pat dry.
  • Meanwhile, melt 2 tablespoons butter in a large wide pot over medium-high heat. Add the shallots, season with salt and cook, stirring, until slightly softened, 3 to 4 minutes.
  • Add the green beans to the pot; season with salt and pepper. Cook, stirring, until hot, 4 to 6 minutes. Remove from the heat and add 1 tablespoon water and the remaining 1 tablespoon butter; stir to coat.

This is a wonderful,classic preparation for a green beans side dish - simmer beans until bright green then toss with garlic until golden and crispy. Serve as a side with everything, any cuisine, from Western to Italian, Middle Eastern to French!If serving with Asian food, I like to add the tiniest drizzle of sesame oil at the end and sometimes a sprinkle of sesame seeds. 250g/ 8oz green beans (, trimmed (Note 1))
1 tsp salt
1 tbsp extra virgin olive oil ((or... butter!))
2 garlic cloves (, finely minced (~ 2 tsp), do not use jar or garlic crusher (Note 2))
1/8 tsp salt
1 pinch black pepper

Steps:

  • Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
  • Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
  • Serve: Transfer beans to serving dish. Serve warm!
  • Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!

1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

3 tablespoons unsalted butter
1/4 cup finely minced shallot
1 teaspoon sugar
1/4 cup chicken broth or 1/4 cup water
1 teaspoon cornstarch or 1 teaspoon potato starch
1 tablespoon apple cider vinegar
fresh ground pepper
1 pinch of freshly ground nutmeg
1 tablespoon finely minced fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook, uncovered, until fork-tender, 15 to 20 minutes. Drain.
  • Melt the butter in a large saucepan over medium heat. Add the shallots and cook, stirring, until lightly browned, about 5 minutes. Sprinkle the sugar over the shallots and cook 1 minute longer until the sugar carmelizes. Be careful not to let it burn.
  • Add the water. Cover and let simmer for 10 minutes. Dissolve the cornstarch in the vinegar and add it to the shallots. Bring to a boil, stirring constantly. Remove from the heat and season with salt, pepper, and nutmeg.
  • Add the green beans to the shallots, mix well, and heat through. Adjust the seasoning. Sprinkle with parsley and serve.

1 pound green beans
2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

1 bag of frozen petite beans
1 small to medium onion
Olive oil
Salt
Pepper
Chopped curly parsley

Steps:

  • Preparation Boil water and add petite beans. Do not cook longer than directions, or even cook ½ minute to 1 minute less. Drain. In the meantime cut onion into very fine pieces. Fry onion in olive oil. Do not use too much as it will make the beans soggy, but do not use to little as that will make the not allow the onion to cook properly. Heat the oil on high to medium/high heat and once you add the onion lower the heat to medium. Fry the onion until golden. Add the drained petite beans. Lower the heat and add salt and pepper to taste. Add the chopped parsley. Stir everything and let simmer for a while.
