GREEN BEANS & BACON WITH PASTA
Here's a quick and easy weeknight pasta that's a break from the usual. Get out the egg noodles, green beans and bacon, and let's get started!

Steps:
- Cook and stir onions in dressing in large skillet on medium-high heat 5 min. or until onions are crisp-tender.
- Add beans and bacon; stir gently. Cook 8 to 10 min. or until heated through, stirring occasionally. Meanwhile, cook noodles as directed on package, omitting salt.
- Drain noodles. Serve topped with bean mixture.

GRANDMA'S GREEN BEANS WITH BACON VINAIGRETTE
Ridiculously good beans that make a great side dish to just about anything. One of those recipes that grandma made for years that we could never get enough of. Garnish with sliced or slivered almonds.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
- Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
- Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.
- Add green beans to the skillet with the sauce; toss to coat well. Chop cooked bacon and stir into the beans. Serve hot.

PASTA SALAD WITH STEAK, BELL PEPPER, GREEN BEANS AND BACON

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; drain and rinse under cold water. Transfer to a large bowl.
- Add the steak, bell pepper, green beans and bacon to the bowl with the pasta.
- Make the dressing: Mix the mayonnaise, sour cream, lemon juice, garlic, parmesan, and salt and pepper to taste in a bowl. Pour over the pasta salad and toss to coat. Season with salt and pepper. Chill for up to 3 hours.

Steps:
- Sauté chopped bacon in heavy large pot over medium-high heat until fat is rendered, about 5 minutes. Add onions, mushrooms, garlic and oregano and sauté until onions are soft, about 8 minutes. Add wine and bring to boil. Add beans and tomatoes with juices. Reduce heat to medium. Simmer until liquid thickens and flavors blend, stirring occasionally, about 25 minutes.
- Mix in pasta and 3/4 cup cheese and simmer 2 minutes. Season to taste with salt and pepper.
- Transfer pasta to large bowl. Serve, passing remaining cheese.

- Bring a large pot of salted water (I recommend about 1 teaspoon kosher salt) to a boil. Add green beans and boil for 8 minutes, or until just tender. Drain into a colander, then plunge the colander with the beans into a bowl of ice water. Drain again.
- Meanwhile, in a large frying pan over medium heat, cook chopped bacon until crispy, about 10 minutes. Remove with slotted spoon to a paper towel lined plate. Remove all but 1 tablespoon of bacon grease from frying pan.
- Carefully add onions to bacon grease and cook over medium heat, stirring, for 5 minutes or until translucent. Add garlic and continue to cook, stirring, for 1 minute or until fragrant.
- Add red pepper flakes and green beans, stirring to combine (tongs work great here, too!). Sprinkle with bacon immediately before serving. Serve with lemon wedge, if desired.
