GREEN BEAN CASSEROLE WITH PUMPKIN SEED CRUMBLE (EAT CLEAN FOR THANKSGIVING)

Green Bean Casserole with Pumpkin Seed Crumble (Eat Clean for Thanksgiving) image

I came up with this 'eat clean' healthy green bean casserole recipe for the Thanksgiving feature article of Natural Health magazine using Dr. Oz's 10 super foods. The super food in this dish is pumpkin seeds. As for green bean casserole, although it's always been a hit in our family, I realize there are two types of people; those who love green bean casserole, and those who don't. As for me, even before I became enthused with eating and cooking healthfully I was never a particularly enthusiastic fan of mushroom soup dumped on top of green beans. Garnish with whole pumpkin seeds.

Yield 4

Number Of Ingredients 12

1 tablespoon sea salt
1 pound fresh green beans, trimmed
2 tablespoons extra-virgin olive oil, divided
1 tablespoon minced garlic
1 (8 ounce) package baby portobello mushrooms, stemmed and roughly chopped
salt to taste
½ teaspoon ground white pepper, or to taste, divided
2 tablespoons white whole wheat flour (such as King Arthur®)
2 tablespoons whole milk (such as Natural by Nature®)
½ cup pumpkin seeds
¼ cup whole wheat panko bread crumbs
2 teaspoons extra-virgin olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch glass baking pan.
  • Fill a large bowl with cold water and ice to make an ice bath.
  • Fill a large pot with water and add 1 tablespoon salt; bring to a boil. Add green beans; boil until fork-tender, 5 to 6 minutes. Drain beans in a colander and immediately plunge them into the ice bath. Drain again. Pat dry with a kitchen towel or paper towels.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Add garlic; saute for 1 minute. Add mushrooms; saute until softened, about 5 minutes. Season with salt and white pepper. Remove from heat. Toss in the cooked green beans. Transfer mixture to the baking pan.
  • Heat 1 tablespoon oil and flour in the skillet over medium-high heat. Cook, whisking constantly, until incorporated, about 1 minute. Add milk slowly, whisking until the roux is creamy and smooth, about 2 minutes. Season with salt and white pepper. Add roux to the pan, tossing to coat the green bean-mushroom mixture.
  • Combine pumpkin seeds, bread crumbs, and 2 teaspoons oil in a food processor. Pulse about 10 times until ground. Season with salt; pulse once more. Top green bean-mushroom mixture with the pulsed pumpkin seed mixture.
  • Bake in the preheated oven until top is golden brown, about 10 minutes.

GREEN BEAN CASSEROLE WITH WALNUT BACON CRUMBLE

Green Bean Casserole With Walnut Bacon Crumble image

Chanterelle mushrooms and a crunchy, sweet, and salty walnut-bacon topping make this holiday side dish a stand-out.

Yield Serves 6 as a side

Number Of Ingredients 15

For the topping:
4 slices thick-cut bacon, finely chopped
1 medium onion, diced
½ cup walnuts
½ cup finely chopped parsley
For the beans and sauce:
1 pound fresh green beans, rinsed and trimmed
2 tablespoons unsalted butter
12 ounces chanterelle mushrooms, roughly chopped
Hefty pinch of salt and freshly ground black pepper
2 cloves of garlic, minced
¼ teaspoon freshly grated nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream

Steps:

  • Preheat the oven to 475°F.
  • Make the topping:
  • In a large cast-iron skillet over medium heat, cook the bacon until it is lightly crisp (it will cook a little more in the oven, so no need to get it extra crispy). With a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Add the onion to the bacon drippings (there should be about 1 tablespoon in the skillet; if there's way more than that, pour out some and save it for future use). Cook the onion until it is soft and tender, about 8 minutes. Transfer it to a bowl.
  • Add the walnuts to the same pan and cook, shaking the pan often, until they are lightly golden, about 5 minutes. Add the walnuts to the bowl with the onion and crumble in the bacon. Add the parsley and toss the whole mixture well. Set aside.
  • Wipe out the skillet (you'll be using it again).
  • Make the beans:
  • Bring a large pot of heavily salted water to a boil. Add the beans and blanch them for 5 minutes. While they cook, prepare a large bowl of ice water. Drain the beans in a colander and immediately plunge them into the ice water to stop the cooking. Drain them again and set them aside.
  • Make the sauce:
  • Melt the butter in the cast-iron skillet set over medium-high heat. Add the mushrooms and a hefty pinch of salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the cream. Cook until the mixture thickens, stirring occasionally, 6 to 8 minutes.
  • Remove the pan from the heat and add the green beans. Sprinkle them evenly with the bacon and onion mixture and bake until bubbly, approximately 15 minutes.
  • Serve immediately.

GREEN BEAN CASSEROLE

Green bean casserole image

Make this easy green bean and mushroom casserole as a veggie side to accompany a main course. You could add cheese to the white sauce if you fancy

Provided by Anna Glover

Categories     Side dish

Time 1h10m

Yield Serves 6 as a side

Number Of Ingredients 7

50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.
