Creamed corn is mixed into a custard-like cornbread to make this American classic side dish.

4 eggs
½ cup sugar
½ cup sour cream
30 ounces creamed corn ((2 cans))
4 tablespoons butter (melted and slightly cooled)
½ cup all-purpose flour * (plus 2 tablespoons)
6 tablespoons cornmeal
2 teaspoons baking powder
¼ teaspoon kosher salt
½ cup brown rice flour
2 tablespoons potato starch

Steps:

  • Preheat the oven to 350 degrees. Grease a 9x13 baking dish and set aside.
  • Whisk together the eggs and the sugar and then add in the sour cream, creamed corn and butter, stirring between each addition. Whisk together the dry ingredients and then add to the corn mixture. Stir until well combined.
  • Pour into the prepared pan and bake for 45-55 minutes, depending on your pan. When the pudding is golden brown and slightly firm to the touch, it is done.
  • Let cool at least ten minutes before serving. Scoop with a spoon or slice into squares to serve. Enjoy!

"ALMOST FAMOUS" CORN PUDDING

Three 15-ounce cans creamed corn
Three 8-ounce boxes cornbread mix
4 large eggs
6 cups fresh or frozen corn kernels
2 cups sour cream
1/2 cup sliced scallions (green and white parts)
1 1/2 sticks (12 tablespoons) unsalted butter
8 ounces mascarpone
Kosher salt and freshly cracked black pepper
Unsalted butter, for the Dutch oven

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Whisk together the creamed corn, cornbread mix, eggs, corn kernels, sour cream and scallions in a large bowl. Melt the butter and mascarpone in a small saucepot over low heat, stirring occasionally. (Be careful not to simmer or the mixture will separate.) Pour the melted butter and mascarpone into the large bowl with the rest of the ingredients. Season with salt and pepper and mix well to combine.
  • Butter a large Dutch oven and pour the mixture in. Place over indirect heat, cover the grill and bake at 325 to 375 degrees F until the mixture is set and golden brown on top, about 1 hour. Take off the grill and serve!
  • (Alternatively, you can bake the corn pudding in a 350 degrees F oven for 1 hour.)

1 tablespoon butter
1/2 cup onion, chopped
1/2 cup green onion, chopped
3 cups corn kernels (fresh or frozen, or Trader Joe's canned)
1/4 teaspoon salt
1/4 teaspoon dried thyme, crushed
1/4 teaspoon cayenne pepper (or chili powder)
1/4 teaspoon black pepper
3 eggs
1 1/4 cups cream
2 cups gouda cheese, grated (Edam or Fontina, Cheddar and Jack combined works too.)
2 tablespoons parsley, chopped (optional)

Steps:

  • Preheat oven to 350.
  • Melt butter in a large skillet over medium heat. Add the onion and green onion and saute until the onions soften. Add the corn, salt ,thyme, cayenne and black pepper, and cook until the corn is tender and warmed through, about 3 to 5 minute.
  • In a large mixing bowl, beat the eggs with the cream until blended. Stir in 1 cup of the grated cheese and the corn mixture. Pour the mixture into a greased 8x11 baking pan(or close to). Top with the remaining grated cheese and bake for about 25 to 30 minute The gratin is done when a knife inserted in the center comes out clean. Top with the chopped parsley and serve warm.
