BAKED GOAT CHEESE DIP

Steps:
- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.
SUN-DRIED TOMATO DIP
Steps:
- Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade. Add the scallions and pulse twice. Serve at room temperature.

- Preheat oven to 350°F.
- Brush 1 side of baguette slices with 2 tablespoons oil and arrange, oiled sides up, on a baking sheet. Toast bread in middle of oven until golden on top, about 7 minutes, then transfer to a rack to cool. Leave oven on.
- Stir together fresh and dried tomatoes, basil, vinegar, and 1/2 tablespoon oil.
- Spread each toast with tapenade and top with a slice of goat cheese and a rounded teaspoon of tomato mixture. Arrange tartines on a baking sheet, then season with salt and pepper and drizzle with 1/2 tablespoon oil.
- Bake tartines in middle of oven until cheese is softened, about 5 minutes. Transfer to a platter and drizzle with remaining 1/2 tablespoon oil.

- Place oil and tomatoes in a skillet over medium heat. Keep over heat, shaking the pan every couple of minutes until tomatoes are beginning to soften. Just as tomatoes start to soften, stir in garlic, Italian seasoning, salt and pepper. Cook 1 minute more. Remove from heat.
- Lightly spray a small baking dish with non-stick spray. Roughly cut goat cheese into slices and place in prepared baking pan. It's okay if it crumbles. Spoon tomato mixture over the goat cheese. Bake in preheated oven 15 minutes.
- Once out of the oven sprinkle with parmesan cheese & basil. Serve while warm with crackers and/or bread slices.

- With a mixer, blend goat cheese, cream cheese, and garlic powder until combined and creamy.
