Sweet and savory come together beautifully in this salad of marinated grilled chicken and pineapple on a healthy bed of baby spinach. We never have leftovers and everyone who eats it wants the recipe! Use fresh pineapple and rosemary; it makes the dish.

1 (12 fluid ounce) can or bottle beer
½ cup honey
⅓ cup Dijon mustard
2 tablespoons olive oil
1 tablespoon fresh rosemary, or more to taste
1 teaspoon garlic powder
1 teaspoon salt
⅛ teaspoon freshly cracked black pepper
2 pounds chicken breast tenderloins
1 fresh pineapple
1 (10 ounce) bag baby spinach leaves
¼ cup pine nuts
1 (10 ounce) can mandarin oranges, drained
6 tablespoons poppy seed salad dressing (such as Kraft®), or to taste

Steps:

  • Mix beer, honey, Dijon mustard, olive oil, rosemary, garlic powder, salt, and black pepper in a large resealable plastic bag until thoroughly combined. Add chicken to the marinade, evenly coat, and squeeze air from the bag. Seal and refrigerate several hours to overnight, turning bag over occasionally.
  • Preheat outdoor grill for medium-high heat and lightly oil the grate.
  • Twist top from pineapple and cut peel off in long vertical strips. Cut pineapple into wedges vertically and cut the tough core from each wedge.
  • Thread marinated chicken tenders onto skewers. Grill chicken and pineapple wedges on the preheated grill until chicken is no longer pink inside, chicken juices run clear, and pineapple wedges are tender and show light brown grill marks, 10 to 12 minutes. Cut chicken and pineapple into bite-sized pieces.
  • Toss spinach with pine nuts and mandarin orange segments in a large bowl. Top salad with chicken and pineapple pieces. Serve on salad plates; drizzle each serving with 2 teaspoons poppy seed dressing.

1/2 fresh pineapple, peeled, cored and cut into 1/2-inch thick lengthwise slices
6 small boneless skinless chicken breasts (1-1/2 lb.)
1/4 cup KRAFT Original Barbecue Sauce
8 cups torn mixed salad greens
1 red pepper, cut into short thin strips
1/2 cup KRAFT Lite Raspberry Vinaigrette Dressing

Steps:

  • Heat greased grill to medium heat.
  • Grill pineapple slices 4 min. on each side; remove from grill. Grill chicken 5 min. on each side. Brush with 2 Tbsp. barbecue sauce; grill 2 to 4 min. or until chicken is done (165°F), turning after 2 min. and brushing with remaining barbecue sauce.
  • Cut chicken crosswise into strips. Cut pineapple into 1/2-inch chunks.
  • Cover 6 serving plates with greens; top with pineapple, peppers, chicken and dressing.

1 cup honey garlic sauce (VH is a good choice, plus remainder of bottle for grilling)
1 1/2 lbs chicken breasts, boneless, skinless cut into thick strips
7 ounces mixed greens
1/4 cup red onion, finely diced
14 ounces can pineapple chunks, drained
Pam cooking spray, grilling spray
asian-style dressing (i.e. sesame, mandarin etc.)

Steps:

  • Marinate chicken breast strips in 1 cup (250mL) VH Honey Garlic Sauce for 1 hour.
  • Spray grill with PAM Grilling Spray, heat grill and grill chicken over medium high heat until cooked through, about 7 minutes.
  • In a large bowl place pineapple, red onion and greens. Just before serving toss with dressing, put salad onto individual plates and top with equal amounts of grilled chicken.

1 small fennel bulb (3/4 cup)
1 large pineapple (1 1/2 cups)
8 ounces skinless, boneless chicken
8 ounces fresh corkscrew pasta
8 large black Italian, Greek or French olives
1 tablespoon grated onion
1 teaspoon anchovy paste
1 teaspoon dry mustard
1 teaspoon Dijon mustard
4 teaspoons Worcestershire sauce
1/2 cup plain nonfat yogurt
1 teaspoon raspberry or balsamic vinegar
1 bunch arugula
Freshly ground black pepper

Steps:

  • If using a broiler, turn it on.
  • For the pasta, bring water to boil in a covered pot.
  • Wash, trim and chop fennel finely and place in large serving bowl.
  • Cut pineapple into small pieces. You will need about 3/4 of the pineapple to make 1 1/2 cups. Add to fennel.
  • If using a stove-top grill, prepare. Grill or broil chicken until it is brown on both sides, about 10 minutes, depending on thickness of pieces.
  • Cook pasta according to package directions.
  • Cut up olives and grate onion; add to bowl along with anchovy paste, mustards, Worcestershire sauce, yogurt and vinegar.
  • Wash, trim and dry arugula.
  • When chicken is cooked, remove and cut into julienne strips; add to bowl.
  • Drain pasta and add to bowl. Season with pepper.
  • Arrange arugula on two serving plates and top with chicken salad. Add two slices of crusty French or Italian bread.

8 small boneless skinless chicken breasts (2 lb.)
1 fresh pineapple, peeled, cut lengthwise into 1/2-inch-thick slices
1 serrano chile
1/2 cup KRAFT Zesty Italian Dressing
8 cups tightly packed mixed salad greens
1 red pepper, cut into thin strips
1 small jicama, peeled, cut into matchlike sticks
1 Tbsp. lime juice

Steps:

  • Heat grill to medium heat.
  • Grill chicken 5 to 7 min. on each side or until done (165°F). Meanwhile, grill pineapple slices and chile 8 to 10 min. or until tender, turning occasionally.
  • Cut pineapple into 1/2-inch chunks. Blend dressing, 2/3 cup pineapple chunks and chile in blender until smooth. Cut chicken into strips.
  • Combine chicken, dressing mixture, remaining pineapple chunks and all remaining ingredients except lime juice. Drizzle with lime juice.

1 cup BBQ sauce
⅔ cup soy sauce
2 tablespoons rice wine vinegar
2 tablespoons minced fresh ginger root
4 teaspoons sesame oil
2 teaspoons honey
4 cloves garlic, minced
2 teaspoons red pepper flakes
1 pinch kosher salt to taste
4 boneless, skinless chicken breasts, pounded thin
10 pineapple rings

Steps:

  • Whisk BBQ sauce, soy sauce, rice vinegar, ginger, sesame oil, honey, and garlic together in a large bowl until completely combined. Season with red pepper flakes and salt. Pour 1/2 of the marinade over the chicken. Marinate in the refrigerator for 4 hours. Set aside remaining marinade.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken and discard marinade.
  • Cook on the preheated grill until browned and no longer pink in the center, brushing with reserved marinade and flipping as needed, 10 to 15 minutes. Add pineapple to the grill during the last 5 minutes of cooking time. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

This is a copycat recipe I put together for a salad I ate at The Rivoli in Toronto. The flavours are harmonious and bold, and make your guests go "mmmmmmmm". I didn't do this because I just thought of it now, but a minced and seeded Thai red chili would add a nice subtl-ish heat to the dressing. I plated the salads individually.

6 pineapple rings, 1/2 inch thick
4 boneless skinless chicken breasts
1/2 cup teriyaki sauce
1/4 cup water, to thin marinade
1/4 cup pineapple juice
1/4 cup fresh lime juice
1/3 cup walnut oil
1 tablespoon grated gingerroot
salt and pepper, to taste
6 cups gourmet salad greens
1 red pepper, julienned
1 cup bean sprouts
1/2 cup cashews, toasted
teriyaki sauce, to baste chicken and pinapple

Steps:

  • Marinate the chicken breasts in teriyaki sauce and water (I included the water to prevent the sugar from blackening too much when grilling the chicken) for at least an hour.
  • Make the salad dressing by whisking together the pineapple juice, lime juice, walnut oil, ginger, salt and pepper.
  • Put aside.
  • Grill the chicken and pineapple until done, basting for the last couple of minutes.
  • Let rest while assembling the rest of the salad, then slice to your liking.
  • Toss together the remaining vegetables with as much of the dressing as you like, and serve with fanned chicken slices on top.
  • I used about half of the dressing, and served extra at the table for anyone who likes more.
  • The ginger and lime juice give it lots of zing, so you don't need too much.
  • Cut the rings in half, arrange among the chicken slices, and sprinkle with the cashews.

1 can (8 ounces) unsweetened sliced pineapple
3 tablespoons canola oil
2 tablespoons light soy sauce
1 tablespoon white vinegar
1 tablespoon honey
1/4 teaspoon ground ginger
1/4 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (1 pound)
1/2 to 1 teaspoon black pepper
5 cups torn salad greens
1 small green pepper, julienned

1 small onion, sliced into rings

Steps:

  • Drain pineapple, reserving 2 tablespoons juice. In a small bowl, combine the juice; oil, soy sauce, vinegar, honey, ginger and cayenne. Brush some over pineapple slices; set aside. , Sprinkle both sides of chicken with pepper; grill or broil for 4-5 minutes on each side or until a thermometer reads 170°. Slice into strips. , Grill or broil pineapple, turning to brown both sides, for 2-3 minutes or until heated through. In a large bowl, toss the greens, peppers, mushrooms and onion. Top with chicken and pineapple; or arrange on four plates. Drizzle with remaining dressing.
