Gluten Free Chocolate Mocha Mug Cake Recipes
CHOCOLATE MUG CAKE - GLUTEN FREE
Perfect for the coeliac with a craving for dessert. Yes, it's not a typo, this is a cake made in a mug...the dangerous thing is it only takes 3-3 1/2 minutes in the microwave!

Steps:
- Required:.
- 1 large coffee mug.
- Add dry ingredients to mug and mix well.
- Add egg, mix thoroughly.
- Add milk and oil, mix again.
- Add chocolate chips and vanilla, mix.
- Cook for 3 to 3 1/2 minutes in the microwave. Cake will rise over the top of the mug!
- This may serve 2 as a dessert depending on your appetite.
- Variation: In the bottom of another mug place 2 Tablespoons of jam. Mix the cake up and pour over the jam. When cooked, tip out for a chocolate dessert with jam sauce topping.
- Second variation: Make as for jam variation but leave out cocoa replacing it with same amount of rice flour. Add grated orange rind to mixture.

- Whisk in the vegetable oil, vanilla extract, and water until all ingredients are combined and the batter is smooth.
- Microwave mug cake for 70 seconds on high. Please watch your microwave. I have a 1500 watt microwave oven. Do not overcook or the cake will be dry. I recommend that you place a plate or paper towel under your mug the first time you make this cake to catch any potential spillage if your cup is not large enough.

- Spray a large (12 ounces) mug with nonstick cooking spray. Stir together gluten-free flour, cocoa powder, sugar, and baking powder in the mug. Add egg, oil, and milk. Stir until smooth with a fork or mini whisk. Stir in mini-chocolate chips if using.
- Preheat oven to 350 degrees. Follow step one above. Be sure to use an oven-safe mug. Place mug on a baking sheet. Bake until set, about 20 minutes.
- Beat together the butter and powdered sugar until smooth with a spoon. Add milk. Mix until creamy. Spread frosting on cooled cake. If you put the frosting on the hot cake, it will melt.
