Irish Oatmeal Soda Bread ~ I've made this authentic Irish quick bread even more delicious with the addition of oat flour...you won't find an easier, or more tasty quick bread anywhere ~ it's ready in under an hour!

3 cups all purpose flour
1 cup oat flour
1 tsp salt
1 tsp baking soda
1 3/4 cups buttermilk (possibly a little bit more)

Steps:

  • Set oven to 425F
  • Whisk the flours, salt, and soda together in a large mixing bowl. Make a well in the center, and add about 1 1/2 cups of the buttermilk. Gradually mix the flour and buttermilk, adding the remaining buttermilk if your dough seems too dry. The dough will have a rough texture to it.
  • Transfer the dough to a floured surface and knead briefly until it comes together. Form into an 8 inch round disk. Transfer to a baking sheet and cut a cross in the top with a sharp knife.
  • Bake for about 25-30 minutes, or until golden brown. It should sound hollow when you rap the bottom.
  • Let cool for a few minutes, but then enjoy it while still warm, with some good Irish butter, of course!

2 1/2 cups oatmeal
2 cups buttermilk
2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
Flour for dusting
1/2 teaspoon butter

Steps:

  • In a mini-food processor, fitted with a metal blade, pulse the oatmeal until the meal is very fine. Remove from the processor and turn into a mixing bowl. Stir the buttermilk into the oats and cover with plastic wrap. Let the oatmeal steep in the buttermilk for 12 hours.
  • In a mixing bowl, sift the other ingredients together. Stir in the steeped oatmeal and mix well. If the mixture is too wet add a little more flour.
  • Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan with the butter.
  • Lightly dust the work surface with some flour. Turn the dough out onto the surface and knead the dough a couple of times to form a soft ball like shape. Press the dough into a round about 2 inches thick. Using a sharp knife, make a criss-cross cut into the bread. Place the bread in the prepared pan. Bake until golden brown, about 25 to 30 minutes. Remove from the oven and cool on a wire rack. Serve the bread warm with butter.

For years I've been trying to make a moist soda bread loaf like the kind I love to eat when I'm in Ireland. Finally I've achieved it with this recipe, which is adapted from Bon Appétit's recipe for Fallon & Byrne Soda Bread (Fallon & Byrne is a restaurant in Dublin). The bread is a whole-wheat loaf with both rolled and steel-cut (pinhead) oats, and does not have the hard crust that round soda breads can have. One reason is that the moist dough is baked at a lower temperature than free-form soda bread.

Soft butter for the bread pan
125 grams (approximately 1 cup) whole-wheat flour
62 grams (approximately 1/2 cup) unbleached all-purpose or bread flour
25 grams (2 rounded tablespoons) steel-cut oats, either regular or quick-cooking
40 grams (approximately 1/3 cup) rolled oats
8 grams (approximately 2 teaspoons, tightly packed) brown sugar
3.5 grams (1/2 teaspoon) salt
10 grams (2 teaspoons) baking soda, sifted
290 grams (approximately 1 1/4 cups) buttermilk

Steps:

  • Preheat oven to 350 degrees. Butter an 8 1/2 x 4 1/2 x 2 1/2-inch bread pan.
  • In a large bowl, mix together flours, steel-cut oats, rolled oats, brown sugar, salt and sifted baking soda. Mix well with your hands.
  • Make a well in the center of flour mixture. Pour in buttermilk. Working from the center of the bowl in concentric clockwise circles, with fingers outstretched, stir buttermilk into flour mixture. (You can use a rubber spatula instead if you don't like getting dough on your hands.) This should take about a half a minute at most. Dough will be quite moist. Use a rubber spatula to scrape into bread pan and smooth out the dough to fill pan evenly ( the pan will be filled only about halfway.)
  • Place in the oven and bake 40 minutes, until dark brown and a tester inserted comes out clean. Remove from pan and cool on a rack.

I don't remember where I got this recipe, but the family loves it. We often have it in place of biscuts or corn bread. Great in the fall with a nice bowl of soup.

2 1/4-2 1/2 cups unbleached flour
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoons salt
2 cups wheat flour
1 cup oats, plus additional for top of loaves and baking stone
2 cups buttermilk or 2 cups sour milk (pour 2 T. of vinegar into a 2 c. measuring cup fill the rest of the cup with milk- let stand 5 minut)
1 large egg

Steps:

  • If using sour milk, prepare and set aside.
  • In a large bowl mix 2 1/4 cup of the flour with the rest of the dry ingredients.
  • Form a well in the center.
  • In another bowl (or large measuring cup) whisk together the egg and milk.
  • Pour milk mixture into the dry ingredients and fold until JUST combined.
  • Turn out onto floured surface and knead the other 1/4 cup of flour into the bread being careful not to overwork the dough.
  • Cut dough in half.
  • Form into 2 round loaves.
  • Cut a cross into the top of each loaf.
  • Dust with flour and sprinkle with additional oats.
  • Sprinkle baking sheets (I prefer to use baking stones) with oats to prevent sticking and bake loaves at 350 for 30-35 minutes.

3 ½ cups all-purpose flour
½ cup quick cooking oats
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 (8 ounce) container low-fat sour cream
¾ cup skim milk
2 tablespoons honey
1 tablespoon white sugar
¼ cup butter, melted
2 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix together flour, 1/2 cup oats, salt, baking powder, and baking soda.
  • In another bowl, mix together sour cream, milk, honey, and sugar. Add to the flour mixture, and mix just until well blended. Stir in melted butter or margarine.
  • Turn dough onto a lightly sprayed baking sheet. Shape into a round, lightly mounded circle, about 8 inches diameter. Brush the top of the loaf with melted butter or margarine, and sprinkle with remaining 1 tablespoon oats. With a knife, score the top of the loaf into quarters.
  • Bake for about 40 minutes, or until browned. Cool completely before slicing.

120g rolled oats, plus extra for the topping
250g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
150g mature cheddar, grated
4 spring onions, chopped
350ml buttermilk, plus a little extra (optional)
½ tsp Dijon mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Blitz the oats in a food processor until fine, then tip into a large bowl along with the flour, bicarbonate of soda, ½ tsp salt and 1 tsp freshly ground black pepper. Quickly mix together to combine. Mix in 130g of the cheese and all of the spring onions.
  • Mix the buttermilk and mustard together in a jug, then pour this into the dry ingredients and use a cutlery knife to quickly mix into a soft, shaggy dough. If the dough still looks dry, add another 1-2 tbsp buttermilk. Turn the dough out on a floured surface and knead briefly to just bring it together into a ball.
  • Transfer the dough to the prepared tray and flatten it slightly into a thick disc using your palm. Use a sharp knife to cut a very deep cross into the top, then scatter with the remaining cheese and a small handful of oats. Bake for 35-45 mins until deeply browned and the loaf sounds hollow when tapped on the bottom. Leave to cool on a wire rack before slicing and serving.

1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon baking powder, plus

1/3 cup sugar
1 cup oat bran
1 1/2 cups rolled oats
1 1/4 cups skim milk, plus
1 1/4 tablespoons lemon juice or 1 1/4 tablespoons buttermilk
1/4 cup melted margarine
2 eggs, slightly beaten (or 4 tablespoons water + 4 tsp baking powder)

Steps:

  • Preheat oven to 350* F.
  • Sift (or mix with electric mixer) flour, soda, salt, powder, sugar, bran in large bowl.
  • In separate bowl, mix milk, lemon juice, melted marjarine, and eggs or egg substitute.
  • Form well in the dry ingredients and add wet ingredients.
  • Mix until dough begins to form.
  • Kneed into ball either in bowl or on very lightly floured surface.
  • Place dough either in greased bread pan or on greased baking sheet.
  • Bake for 45- 60 minutes or until knife test comes out clean.

250g plain white flour
250g plain wholemeal flour
100g porridge oats
1 tsp bicarbonate of soda
1 tsp salt
25g butter, cut in pieces
500ml buttermilk

Steps:

  • Preheat the oven to 200C/gas 6/fan 180C and dust a baking sheet with flour. Mix the dry ingredients in a large bowl, then rub in the butter. Pour in the buttermilk and mix it in quickly with a table knife, then bring the dough together very lightly with your fingertips (handle it very, very gently). Now shape it into a flat, round loaf measuring 20cm/8in in diameter.
  • Put the loaf on the baking sheet and score a deep cross in the top. (Traditionally, this lets the fairies out, but it also helps the bread to cook through.) Bake for 30-35 minutes until the bottom of the loaf sounds hollow when tapped. If it isn't ready after this time, turn it upside down on the baking sheet and bake for a few minutes more.
  • Transfer to a wire rack, cover with a clean tea towel (this keeps the crust nice and soft) and leave to cool. To serve, break into quarters, then break or cut each quarter in half to make 8 wedges or slices - or simply slice across. Eat very fresh.

oil or butter, for greasing
250g plain flour , plus extra for dusting
200g wholemeal flour
50g porridge oats , plus extra for sprinkling
1 tsp bicarbonate of soda
150ml pot live bio yogurt
1 tbsp black treacle
1 tbsp clear honey

Steps:

  • Heat oven to 200C/180C fan/gas 6 and grease a baking sheet. Put the flours, oats, bicarb and 1 tsp salt in a large bowl and stir to combine. Tip the yogurt into a jug, add enough water to make it up to 400ml and mix well. Stir the treacle and honey into the yogurt mixture until they dissolve. Pour onto the dry ingredients and stir with a round-bladed knife until you have a soft, sticky dough.
  • Tip onto a lightly floured surface and lightly form the dough into a round. Lift onto the baking sheet, cut a deep cross in the dough and sprinkle with oats. Bake for 30 mins or until the crust is golden and the loaf sounds hollow when tapped underneath. Soda bread should be eaten the same day, or toasted the next.
