½ cup raw honey
¼ cup white sugar
2 large eggs
1 ½ teaspoons pure vanilla extract
½ cup unbleached all-purpose flour
½ cup unsweetened cocoa powder (such as Fry's®)
½ teaspoon baking soda
½ teaspoon salt
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish with cooking spray.
  • Scoop out avocado pulp and place into the bowl of a food processor. Add honey and sugar; blend until smooth. Add eggs and vanilla extract and blend, scraping down the sides of the bowl as needed. Add flour, cocoa powder, baking soda, and salt; pulse until blended.
  • Remove the blade from the food processor and scrape down the sides to ensure the batter is completely blended. Stir in chocolate chips.
  • Pour brownie mixture into the prepared baking dish and spread evenly using a spoon that has been sprayed with cooking spray.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.

Coconut oil or olive oil cooking spray, for the baking dish
Flaxseed egg: 1 tablespoon flaxseed meal, plus 3 tablespoons warm water
3/4 cup gluten- free all- purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon aluminum- free baking powder
1/2 teaspoon spirulina powder (optional)
1/4 teaspoon sea salt
1/2 ripe avocado, pitted, peeled, and mashed until smooth
1/2 cup unrefined coconut oil
1/4 cup hot water
1 teaspoon organic vanilla extract
1/2 cup packed organic light or dark brown sugar
1 teaspoon baking soda
1 tablespoon raw, unfiltered apple cider vinegar
1 cup semisweet or bittersweet chocolate chips (preferably with a minimum of 65 percent cacao) or 1 cup chopped bittersweet chocolate (not milk or dairy chocolate)

Steps:

  • Preheat the oven to 350°F. Lightly coat an 8-or 9-inch square baking dish with coconut oil spray and set aside (the smaller dish will yield slightly thicker brownies).
  • In a small bowl, combine the flaxseed meal and hot water; set aside to coagulate.
  • In a medium bowl, whisk together flour, cocoa powder, baking powder, spirulina, and salt. Set the dry ingredients aside.
  • In a large bowl, whisk together the avocado, water, coconut oil, and vanilla extract. Using an electric mixer, beat in the brown sugar to combine until the avocado is smooth. Add the dry ingredients to the wet, and beat well to combine.

8 oz good-quality semisweet chocolate, or bittersweet chocolate, 60-70% cacao, roughly chopped
¾ cup unsweetened dutch process cocoa powder, divided
1 tablespoon espresso powder
2 cups granulated sugar
½ cup dark brown sugar, packed
2 teaspoons vanilla extract
2 teaspoons kosher salt
6 large eggs
1 cup all-purpose flour
flaky sea salt, for sprinkling

Steps:

  • Grease a 9x13-inch (23x33-cm) dark metal pan with softened butter, then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.
  • Combine the chopped chocolate, ¼ cup (30 g) of cocoa powder, and espresso powder in a heatproof liquid measuring cup or medium bowl and set aside.
  • Add the butter to a small saucepan over medium heat and cook until the butter just comes to a vigorous simmer, about 5 minutes, swirling the pan occasionally. Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is completely smooth and melted, then set aside.
  • Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat with an electric hand mixer on high speed until light and fluffy, about 10 minutes. It will be similar to the texture of very thick pancake batter.
  • With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.
  • Position a rack in the middle of the oven and preheat to 350°F (180°C).
