BARBECUE CHICKEN FOIL PACKETS
Tender bbq chicken, potatoes and loads of bacon and cheddar make the perfect summer meal on the grill!

Steps:
- Preheat grill to medium high heat.
- Prepare foil packets. Lay out 4 large pieces of heavy duty foil then top each with a large piece of parchment paper (or spray with non stick spray).
- Place equal amounts of sliced potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.
- Place a chicken breast on top of potatoes. Brush each side of each chicken breast with barbecue sauce.
- Wrap up each foil packet by bringing two sides together and rolling it up. Then roll up each open end to seal the packet.
- Place on hot grill and cook (potatoes down) for about 25 minutes or until potatoes are tender and chicken is cooked through (chicken should be 165°F).
- Cut open packet, brush chicken with more barbecue sauce if desired and top with cheddar cheese and bacon bits. Place back on grill (do not reseal) to melt about 5 minutes.
- Garnish with sour cream and chives.

- Preheat oven to 450*.
- Center one chicken breast half on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Spoon barbecue sauce over chicken. Top with vegetables.
- Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
- Bake 18 to 22 minutes on a cookie sheet in oven.

BBQ CHICKEN PACKET
I know there are a lot of yummy variations of this, but thought I would post my own. Simple, versatile, healthy----and there you go! I used slices of red and green pepper as well as red onion. My DH, who doesn't like peppers or onions, suggested I use more----it was excellent with the combo of chicken, pineapple and BBQ sauce. No pots, pans or bowls and on the grill----my favorite way of cooking! Make as many as you want, no brainer, I made 8 for lunches.

- Preheat your grill to medium.
- Make sure your chicken breasts are about the same size and thickness (pound out ends that are too thick).
- Place a chicken breast in the middle of a large sheet of heavy duty foil (important).
- Top with pineapple rings, peppers & onions and BBQ sauce.
- Double fold top and ends to seal packet, leaving room for heat circulation.
- Put on grill of 15 minutes, I rotated my packets mid way because my grill doesn't cook evenly.
- Remove and of course you want to make sure the chicken is cooked all the way through, mine was perfect.
- Now you can serve it as is, and it is a lovely presentation. I personally felt the juices left at the bottom of the packet were too valuable to waste, so I cut up the chicken, pineapple and veggies and mixed them with the juices. YUMM! I didn't do it at the time, but I'm sure it would be wonderful served over rice. Don't pass up this super easy, healthy, dish free entree!

BARBECUED CHICKEN
Barbecued chicken isn't, really: It's grilled rather than smoke-roasted at low temperature. But it requires a similar attention to technique. You'll want to move the pieces around on the grill to keep them from burning, and flip them often as well. Cooking barbecued chicken benefits from a basting technique used by the chef and outdoor cooking maven Adam Perry Lang, who thins out his sauce with water, then paints it onto the meat he's cooking coat after coat, allowing it to reduce and intensify rather than seize up and burn.

- Build a fire in your grill, leaving one side free of coals. When coals are covered with gray ash and the temperature is medium (you can hold your hand 5 inches above the coals for 5 to 7 seconds), you are ready to cook. (For a gas grill, turn one of the burners down to low or off, lower cover and heat for 15 minutes.)
- Meanwhile, combine barbecue sauce with 1 cup water and stir to combine. Set aside.
- Sprinkle the chicken pieces generously with salt and pepper, then put them on the grill directly over the coals and cook for about 15 minutes, turning once every 5 minutes or so, and brushing with the thinned barbecue sauce. When the chicken skin starts to crisp and darken, move the pieces to the cooler side of the grill and let them cook for 15 to 20 minutes more, or until a peek inside shows that the meat no longer has any red at the center.
- Move the chicken back onto the hot side of the grill and baste with sauce again, turning the meat a few times. Remove to a warmed platter and serve.
