Packed with Italian flavor, these mouthwatering cubed steaks from Jo Ann Honey of Longmont, Colorado are ready in no time, and cleanup is a breeze! "This is one of my favorite quick meals that's fairly inexpensive and healthy," says Jo Ann.

1 teaspoon dried basil
1/2 teaspoon garlic powder
1/4 teaspoon pepper
2 small zucchini, sliced
8 cherry tomatoes, halved
1 small onion, chopped
1 teaspoon olive oil, divided
2 beef cube steaks (4 ounces each)
2 teaspoons shredded Parmesan cheese

Steps:

  • In a small bowl, combine the basil, garlic powder and pepper. In a large skillet, saute the zucchini, tomatoes, onion and 1 teaspoon spice mixture in 1/2 teaspoon oil until zucchini is crisp-tender. Remove and keep warm. , Sprinkle the remaining spice mixture over cube steaks. In the same skillet, cook steaks in remaining oil over medium heat for 1-2 minutes on each side or until no longer pink. Sprinkle with Parmesan cheese. Serve with vegetables.

A simple-to-make recipe that's also inexpensive! Makes the house smell wonderful as it cooks, and tastes great on those chilly fall nights. We typically serve this over cooked egg noodles with a tossed green salad, but it would be nice over rice, as well. Enjoy!

2 lbs beef cube steaks
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 (14 1/2 ounce) can canned diced tomatoes
1 (15 ounce) can canned tomato sauce
1 large onion, thinly sliced
1 teaspoon italian seasoning
5 small zucchini, cut into 1/2 inch slices

Steps:

  • In a large resealable plastic bag, place the cube steak, flour, salt, and pepper. Seal, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat, and brown the cube steak.
  • Reduce heat to low, and mix in the tomatoes, tomato sauce, onion, and Italian seasoning.
  • Cover, and simmer at least 1 hour, stirring once.
  • Place the zucchini in the skillet, and coat with the tomato sauce.
  • Continue to simmer uncovered 10 minutes, or until zucchini is tender.

Cube steaks are quickly simmered in a beefy tomato sauce for an easy weeknight dinner.

Number Of Ingredients 9

1/4 cup all-purpose flour
1/2 teaspoon paprika
1/4 teaspoon black pepper
4 beef cube steaks, about 6 ounces each
1 cup prepared beef stock
1 can (8 ounce size) Italian style stewed tomatoes, undrained
1 teaspoon garlic granules
1/4 cup water
2 tablespoons cornstarch

Steps:

  • In a shallow dish, combine flour, paprika and black pepper. Add steaks and turn to coat lightly. Coat a large skillet with cooking spray and heat over medium high heat. Cook steaks 3-5 minutes on each side. Transfer steaks to a platter and cover to keep warm. Reduce heat to medium and add broth, tomatoes and garlic powder to the skillet. Heat until the mixture just begins to boil, stirring occasionally. In a small bowl, stir together water and cornstarch until smooth. Slowly add to the tomato mixture, stirring until thickened. Return the steaks to the skillet and cook until heated through.

this version is healthier because it doesn't have flour,bread crumbs,or cracker crumbs. Also, to cut back on fat the mozzerella cheese can be left out and use only the lower fat parmesan.This is my own creation.

4 cube steaks
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1 (8 ounce) can tomato sauce
1 (4 ounce) can mushrooms
1/4 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon garlic
1/8 cup onion, finely diced
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
2 tablespoons oil

Steps:

  • Preheat oven to 350 degrees.
  • Put oil in skillet, and add cube steaks. Cook until just brown.About 8 minutes.
  • Mix the tomato sauce with the basil, oregano, garlic, onion, and mushrooms.Pour over cube steak and put in preheated oven for 20-25 minutes.
  • Top with the mozzerella, and then the parmesan cheese. Return to oven til melted. About 5 minutes.
