OH MY CHOCOLATE BARK
This bark is so yummy flavored with orange zest and candied ginger use store bought or Recipe #102933.This is a good way to use left over melted chocolate. 2009 I added 2 ounces of caramel squares that I diced to the semi sweet chocolate. Toffee added to the white chocolate in 2009 as well. As you see this is a very flexible recipe. Swirling is key for the bark look. Taste is all up to you!

Steps:
- Melt chocolates in separate microwavable containers according to directions on bags.
- Mix almonds, caramel, and semi-sweet chocolate then place randomly in blobs on a cookie sheet with wax paper on it.
- Mix ginger, cardamom, toffee and orange zest with white chocolate.
- Then place in random spots among the chocolate.
- Swirl the two together to make streaks.
- Place another piece of wax paper on top. Then another cookie sheet to slightly flatten smooth. 2009 I used sil pads below and above the melted bark. It`s 20 degrees outdoors with 12 inches of snow expected so out goes the tray of bark to harden. ;).
- Chill till hard and break into pieces.

- Melt the chocolate in short bursts in the microwave, stirring every 20 secs, until smooth. Spoon onto a parchment-lined baking tray and smooth over with a spatula to make a thinnish layer, around 35 x 20cm.
- Sprinkle over the chocolate chips along with the pieces of pretzel and honeycomb, then chill until solid. For neat slices, remove the bark from the fridge and leave for a minute to come to room temperature. Use a sharp knife to cut it into shards (if it's fridge cold, the chocolate will snap rather than cut).

- Line a baking sheet with waxed paper. Place two-thirds of the bag of chocolate in a microwave safe bowl. Microwave on high in 15-30 seconds intervals, stirring each time, until chips are completely melted. This will take about 2 minutes total, but watch carefully the last 45 seconds. (If using thermometer to take temperature it should read 110-115ºF / 43-48ºC)
- Add the remaining one-third of the bag of chocolate and stir to combine and melt. Continue to stir until all the chocolate is melted, smooth, and glossy. Don't be tempted to put it back in the microwave to finish melting added chips. Let it sit a minute and stir again. It will eventually melt from the residual heat. (If using thermometer to take temperature it should read 88-90ºF / 31-33ºC )
- Pour melted chocolate on prepared baking sheet. Use an offset spatula to spread chocolate to about 1/4" thick. Immediately sprinkle on desired toppings. Allow chocolate to set and harden on counter. Do not break into pieces until chocolate is completely set, about 2-3 hours.
