This recipe is a friend's grandma's recipe and is absolutely the best hash brown casserole I've ever had. Kentucky grandmas sure know how to cook!

1 (2 pound) package frozen hash brown potatoes, thawed
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.
  • Bake in the preheated oven until the sauce is bubbly and the top is golden brown, 1 to 1 1/2 hours.

2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cartons (8 ounces each) spreadable chive and onion cream cheese
1 package (2 pounds) frozen cubed hash brown potatoes
1 cup shredded cheddar cheese

Steps:

  • In a large microwave-safe bowl, combine the soup and cream cheese. Cover and cook on high for 3-4 minutes or until cream cheese is melted, stirring occasionally. Add the potatoes and stir until coated., Spoon into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until the potatoes are tender. Sprinkle with cheddar cheese. Bake 3-5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheddar cheese over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

You can make this hearty Glorified Hashbrown Casserole with ham and cheese.

2 pounds hash browns (frozen)
10 ounces cream of celery soup
3/4 cup onion (chopped)
1 cup bell pepper (chopped)
2 cups ham (diced)
8 ounces cheddar cheese (grated)
2 tablespoons butter (melted)

Steps:

  • Preheat oven to 350 degrees. In a large skillet melt 2 tablespoons of butter over medium heat. Saute onions, bell peppers, and ham until the onions are clear, and ham has browned. In a large bowl, combine hash browns sauteed ham and vegetables and 1 can on condensed soup. Stir until hash browns are coated.
  • Pour potatoes into a 9 x 13-inch pan that has been sprayed with non-stick spray. Sprinkle half of the cheese over the casserole and cover with foil. Bake for approximately 45 minutes, remove foil, add the remaining cheese and return to the oven, and cook for an additional 15 minutes. The cheese should begin to brown when the casserole is ready.

This is a very easy casserole using prepackaged ingredients. The Hash Browns I use are about 1/2 inch cubes, not shredded potatoes. Don't thaw them before mixing.

1 teaspoon dried onion flakes
1 cup sour cream
2 (11 ounce) cans cream of celery soup
1/2 cup cheddar cheese, shredded
Lawry's Seasoned Salt

Steps:

  • Preheat the oven to 300 degrees, and grease a 9x13 glass baking dish.
  • Mix the potatoes, onion flakes, sour cream, soup, and cheese in a mixing bowl, and spoon it into the baking dish. Spread out with a spoon or a spatula, but don't pack the mixture down.
  • Sprinkle the top with seasoning salt.
  • Bake at 300 degrees, uncovered, for 2 hours.

1/2 teaspoon garlic salt
1 (32 ounce) package frozen shredded hash browns
2 (14 ounce) cans condensed cream of potato soup
1/2 cup grated parmesan cheese
2 cups shredded cheddar cheese

Steps:

  • Combine all the ingredients in a large bowl except the parmesan cheese.
  • Spread into greased 9 X 13 casserole dish.
  • Top with parmesan cheese.
  • Bake uncovered at 350 degrees for 55 to 60 minutes or until golden brown on top.
