4 (8 ounce) salmon fillets
4 cups chopped fresh spinach
½ cup sun-dried tomatoes packed in oil, drained and chopped
½ cup artichoke hearts, drained and chopped
¼ cup crumbled feta cheese
1 pinch garlic powder, or to taste
salt and ground black pepper to taste

Steps:

  • Make a horizontal slice in the center of each salmon fillet but do not cut all the way through.
  • Fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add spinach and cook uncovered until tender, about 40 seconds. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain thoroughly and transfer to a bowl.
  • Add sun-dried tomatoes, artichokes, and feta cheese to the blanched spinach; mix to combine. Divide evenly and stuff into the salmon "pockets." Season fillets with garlic powder, salt, and pepper.
  • Heat a cast iron skillet over medium heat. Place salmon fillets, skin-sides down, in the hot skillet and sear for 5 minutes. Gently flip and sear the other sides for 5 minutes. Flip again to finish cooking, about 5 minutes more.

This is a dish my brother prepared for me in Seattle. It is by far the best salmon I've ever eaten. I like to serve it with an Asian-inspired rice and roasted asparagus.

3 (12 inch) untreated cedar planks
⅓ cup vegetable oil
1 ½ tablespoons rice vinegar
1 teaspoon sesame oil
⅓ cup soy sauce
¼ cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed

Steps:

  • Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
  • In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
  • Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
  • Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

By using this old-school cooking technique, the fish absorbs fragrant wood smoke and is layered with flavours. Say bye bye to bottled marinade after you make this Chili Marinade.

2 (4 -5 ounce) salmon fillets, skin removed
6 shrimp
1/2 cup crabmeat, squeezed dry
2 tablespoons panko breadcrumbs
1 dash olive oil
3/4 cup coconut milk
1/2-1 teaspoon hot chili sauce
3/4 teaspoon finely grated gingerroot
1 stalk lemongrass, chopped
4 garlic cloves, minced
2 tablespoons brown sugar
2 1/2 limes, juice of
1/4 teaspoon ground black pepper

Steps:

  • FOR THE THAI CHILI AND MARINADE AND GLAZE: Place all above ingredients into a small mason jar. Shake well. Allow to sit for 20 to 30 minutes before using.
  • This makes an excellent marinade for seafood and chicken and can also be brushed onto seafood and chicken during cooking to add a nice subtle flavour and glaze. Keeps well refrigerated for two weeks.
  • PLANKED SALMON: Oil the seasoned cedar plank thoroughly on both sides. Place the salmon steak on the oiled plank.
  • Using a sharp knife, make an incision through the centre of the salmon steak.
  • Dice 4 of the 6 shrimp and mix into the crab meat, followed by the panko breadcrumbs, splash of olive oil and 1 tsp of the Thai chili marinade and glaze. Mix thoroughly and stuff into the salmon steak, placing one whole shrimp on top.
  • Brush with a little more of the marinade glaze and place onto the upper rack of a barbeque preheated to 375 degrees Fahrenheit.
  • Cook for approximately 7 to 10 minutes, brushing two to three more times with the marinade glaze throughout the cooking time. Serves 2.

  • To season cedar plank: To reduce the burning of the wood to a point where you can effectively grill on a plank you need to make sure that it has been soaked in water for at least an hour. This will get the wood as wet as it can get and give you the time you need to get your fish completely cooked before the board starts really burning. If you notice that the board has caught fire while you are grilling, spray it down with water to put out the fire. This isn't to say that you don't want the board to burn a little. The smoldering of the wood is what creates the smoke and flavors the fish.

Using a cedar plank to grill salmon is an effortless way to add enormous flavor to your dish. The fish takes on a lovely smokiness, stays wonderfully moist and the skin doesn't stick to the grates. We spiced ours up with a maple-ginger marinade and whipped up a quick side salad for a tasty, incredibly easy weeknight meal.

1/2 cup rice wine vinegar
2 tablespoons pure maple syrup
2 tablespoons low-sodium soy sauce
2 tablespoons grated ginger (from a 2-inch knob)
3 cloves garlic, grated
1/2 cup olive oil
Four 6-ounce salmon fillets, skin on (about 1 1/2 pounds)
Kosher salt and freshly ground black pepper
One 10-ounce bag coleslaw mix
1/2 cup sliced almonds
1/2 cup sesame sticks or wonton chips

Steps:

  • Soak a cedar grill plank in water for at least 1 hour and up to 4 hours. Preheat the grill to medium.
  • Mix the rice wine vinegar, maple syrup, soy sauce, ginger and garlic in a medium bowl. Slowly drizzle in the olive oil, whisking constantly, until emulsified. Reserve 1/4 cup for the salad dressing and set aside. Pour the remaining mixture over the salmon and let marinate in the refrigerator for 15 minutes.
  • Meanwhile, place the soaked cedar plank in the center of the preheated grill. Close the lid and let the plank heat until you hear it start to crack, about 15 minutes. Place the salmon fillets, skin-side down, on the plank. Season with 1/2 teaspoon salt and a few grinds of pepper. Close the lid and cook until the salmon is opaque throughout and large flakes break off when flecked with a fork, 15 to 20 minutes. Remove the plank from the grill and serve the salmon from the plank (the fish will slide right off with a metal spatula, leaving the skin behind). Discard the plank.
  • While the salmon is cooking, add the coleslaw mix, almonds, sesame sticks or wonton chips and the reserved dressing to a large bowl and toss until well combined. Serve alongside the salmon.

3/4 cup water, divided
3/4 cup STOVE TOP Everyday Stuffing Mix for Chicken
2 Tbsp. chopped fresh parsley
1/2 cup KRAFT Shredded Parmesan Cheese, divided
1 beef flank steak (1/2 lb.)
1 cup CLASSICO Roasted Garlic Pasta Sauce

Steps:

  • Heat oven to 350ºF.
  • Melt 1 tsp. butter in medium ovenproof skillet on medium-high heat. Add celery and onions; cook and stir until 2 to 3 min. or until crisp-tender. Stir in 1/4 cup water; bring to boil. Add stuffing mix, parsley and 6 Tbsp. cheese; mix lightly. Remove from heat.
  • Butterfly steak by cutting it horizontally in half, cutting into thickest long side of steak and being careful to not cut all of the way through to opposite side of steak. Open steak like a book; spread bottom 3/4 of steak with stuffing mixture. Roll up, starting at bottom end; tie securely with string.
  • Melt remaining butter in same skillet on medium heat. Add steak; cook 5 min. or until evenly browned on all sides, turning occasionally. Mix pasta sauce and remaining water until blended; pour over steak. Place in oven.
  • Bake 30 to 35 min. or until steak is done. Remove from oven; cover loosely with foil. Let stand 5 min. Transfer steak to cutting board. Remove and discard string. Slice steak. Serve topped with pasta sauce and remaining cheese.

1-1/2 cups cooked long grain rice
1 package (8 ounces) imitation crabmeat
2 tablespoons cream cheese, softened
2 tablespoons butter, melted
2 garlic cloves, minced

1/2 teaspoon celery seed, crushed
12 salmon fillets (8 ounces each and 1-1/2 inches thick)

Steps:

  • Preheat oven to 400°. In a large bowl, combine rice, crab, cream cheese, butter, garlic, basil, marjoram, oregano, thyme, rosemary and celery seed., Cut a pocket horizontally in each fillet to within 1/2 in. of opposite side. Fill with stuffing mixture; secure with toothpicks. Place salmon on 2 greased 15x10x1-in. baking pans.
