Coconut Banana Bread image

Coconut Banana Bread is a yummy snack, and goes great with your morning tea or coffee. Tropical flavors abound!

Number Of Ingredients 9

2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup shredded coconut (plus a tablespoon for sprinkling)
1/2 cup butter (softened)
3/4 cup sugar
2 eggs (lightly beaten)
3 overripe bananas (you need a cup and a half of mashed bananas)
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350F.
  • Generously butter the inside of a (9x5) loaf pan.
  • In a small bowl, combine the flour, baking powder, salt and coconut and set aside.
  • In a stand mixer, cream together the butter and sugar until fluffy (about 3-4 minutes on medium speed).
  • Add the eggs, and mix well.
  • Add the mashed bananas and vanilla and beat until smooth.
  • Fold in the mixed dry ingredients, until just combined. Don't over blend!
  • Pour the batter into the prepared loaf pan - it will be slightly shaggy.
  • Sprinkle a small amount of coconut on top.
  • Bake until golden and a toothpick comes out clean - about 50 minutes.
  • Let it cool in the pan for a few minutes, then invert onto a wire rack, to cool completely.
  • Slice, and devour.

1/2 cup unsalted butter (melted)
1 cup white granulated sugar
2 eggs (room temperature)
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
3 large ripe bananas
1 cup coconut flakes (packed)
milk (enough to cover coconut flakes)

Steps:

  • Place coconut flakes in a measuring cup and add enough milk to cover the flakes. Let it sit for 10-15 minutes. (Milk will be squeezed out. You can drink coconut milk or use it in pancakes or cereal.)
  • Preheat oven to 350° and grease an 8x4 bread baking dish.
  • Mash bananas with a fork in a large mixing bowl.
  • Whisk in eggs, sugar, melted butter, and vanilla extract until all mixed.
  • Add flour, baking soda, and salt and gently whisk until the batter is smooth and everything is evenly combined.
  • Squeeze milk out of coconut flakes and add flakes to the batter. Fold them in.
  • Transfer batter into the prepared baking dish. Bake for 55-60 minutes. If the top of bread is browning too fast, loosely cover with aluminum foil to keep direct heat away.
  • Take bread out and let it cool before cutting. Use serrated bread knife to slice the bread.

2 large eggs, room temperature
1-1/2 cups mashed ripe bananas (2 to 3 medium)
1/4 cup reduced-fat plain yogurt
3 tablespoons unsweetened apple juice
1/2 teaspoon vanilla extract
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plus 1 tablespoon sweetened shredded coconut, divided
1/2 cup confectioners' sugar
1 tablespoon lime juice

Steps:

  • Preheat oven to 350°. Grease and flour a 9x5-in. loaf pan. In a large bowl, beat butter and sugar until crumbly. Add eggs, one at a time, beating well after each addition. Beat in bananas, yogurt, apple juice and vanilla. In another bowl, whisk flour, baking soda and salt; stir into butter mixture. Fold in 1/2 cup coconut., Transfer to prepared pan. Sprinkle with remaining coconut. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool., In a small bowl, mix confectioners' sugar and lime juice until smooth; spoon over warm bread.

1 teaspoon baking soda
½ teaspoon salt
1 cup white sugar
¼ cup sweet butter, softened
2 large eggs
1 ½ cups mashed bananas
¼ cup plain yogurt
3 tablespoons dark rum
½ cup grated fresh coconut
½ cup powdered sugar
1 ½ tablespoons Key lime juice
1 tablespoon coconut flakes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
  • Mix flour, baking soda, and salt together in a bowl.
  • Beat sugar and butter together in a large bowl with an electric mixer until smooth and well blended. Add eggs, one at a time, beating well after each addition. Add bananas, yogurt, and rum; beat until blended. Add flour mixture and beat on low speed or by hand until just moist. Stir in fresh coconut and pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour. Cool in the pan for 10 minutes.
