FRESH RASPBERRY JELLY

This make-ahead summer dessert is bursting with intense fruity flavour - set in a classic jelly mould for a retro dinner party centrepiece

½ tsp flavourless oil for greasing, such as sunflower oil
5 gelatine leaves
140g golden caster sugar
500g raspberries , plus extra to serve
juice 1 lemon
clotted cream or ice cream, to serve

Steps:

  • Use the oil to lightly grease the inside of a 600ml jelly mould. Put the gelatine leaves in a small bowl of cold water, one at a time so they don't stick together. Leave to soak while you cook the raspberries.
  • Pour 300ml water into a large saucepan. Add the caster sugar, heat gently over a medium heat, stirring occasionally until the sugar has dissolved, then add the raspberries. Bring to the boil, then turn the heat right down so the mixture is barely simmering, and cook for 5 mins until the raspberries break down. Stir well, but don't mash them too much as the raspberries will break down in the heat.
  • Carefully pour the raspberry mixture through a sieve set over a large heatproof measuring jug. Stir in the lemon juice, then either top up with cold water or pour some away to ensure you have exactly 600ml total liquid. Drain the water from the gelatine leaves and squeeze out any excess before adding to the raspberry mix. Stir well until the gelatine has completely dissolved, then pour into your jelly mould (see tip below). Once cold, place in the fridge and leave overnight to set.
  • Turn the jelly out onto a large plate just before serving. Serve with a scoop of clotted cream or ice cream, and some raspberries.

1 tablespoon fennel seed
6 green cardamom pods
12 whole cloves
1 cinnamon stick
1 (1/4-inch) piece ginger root, peeled and thinly sliced
6 black peppercorns
7 cups water
2 tablespoons Darjeeling tea
4 tablespoons brown sugar
1 cup milk

Steps:

  • In a medium saucepan, combine fennel seed, cardamom, cloves, cinnamon stick, ginger root, peppercorns and water. Boil for 5 minutes. Remove from the heat and steep for 10 minutes. Add the tea, bring to a boil, reduce the heat, and simmer 5 minutes.
  • Strain mixture, discard spices and return the tea to the saucepan. Stir in the brown sugar and milk. Serve immediately.

2 tablespoons boiling water
2 teaspoons gelatin powder
400 ml low-fat milk
2 chai tea teabags
2 teaspoons sugar (or granulated sugar substitute)
40 g raspberries (1/3 cup fresh or defrosted frozen)
1 tablespoon mint (small leaves)

Steps:

  • Put water in a small heatproof bowl and sprinkle the gelatine powder over and stir until dissolved and set aside.
  • Put milk in a small saucepan and bring to a simmer over a medium heat.
  • Remove pan from the heat and add tea bags and jiggle and cover and set aside for 5 minutes to steep and then remove tea bags.
  • Add gelatine mixture to milk mixture and stir until combines and then pour into dishes and put in the fridge for 4 hours or until set.
  • Top the jellies with raspberries and mint leaves to serve.

I was intrigued by the idea of making jelly out of tea when someone posted a request for recipes. I tried this one, and I like it alot. Obviously, it all depends on the quality of your tea. 1 3/4 cups water
12 tea bags
1/4 cup juice (flavor should compliment the tea flavor)
3 cups sugar
1 (3 ounce) package liquid pectin

Steps:

  • (If not including juice and using a tea infusion as your only liquid, increase the amount of water to 2 cups.).
  • Bring water to boil, add tea bags and steep for 30 minutes.
  • Discard tea bags. Add sugar (and optional juice) to brewed tea and bring to a boil.
  • Boil for 2 minute stirring.
  • Remove from heat and add pectin, return to boil and allow to do so for 1 minute.
  • Skim off any foam.
  • Pour hot jelly into jars and process for 20 minutes.

You can use any tea and any fruit zest, lemon would taste great. You can use banana instead of orange or whatever fruit you like or none at all for a smoother consistency. See what flavor combinations you like. If you like very sweet foods you will want to add sugar or honey to taste.

1 cup boiling water
1 (.25 ounce) package unflavored gelatin
½ orange, zested
½ teaspoon ground cinnamon
½ teaspoon ground cardamom

1 orange, peeled and chopped

Steps:

  • Place tea bag into the boiling water. Steep to desired strength. Place gelatin in a bowl. Whisk the tea into the gelatin until dissolved. Stir in orange zest, cinnamon, cardamom, sugar, almond extract, ginger, cloves, and honey. Stir in diced orange. Cover and chill in the refrigerator until set, 2 to 3 hours.
