EASY GINGER BEEF



Easy Ginger Beef image

In looking for a healthier version of the standard ginger beef, I came up with this non-deep fried version. The longer you marinate the beef, the more ginger flavor it soaks up.

1 pound round steak, thinly sliced
1 (1 inch) piece fresh ginger root, peeled and thinly sliced
1 tablespoon soy sauce
1 teaspoon butter
1 red bell pepper, chopped
1 onion, chopped
12 mushrooms, sliced
¼ cup sweet and sour sauce
4 cups cooked rice

Steps:

  • Place steak, ginger, and soy sauce in a bowl; turn to coat steak. Cover tightly; marinate in the refrigerator for at least 30 minutes or up to overnight.
  • Heat a wok over high heat; pour in beef mixture. Cover wok; cook until beef is browned, about 5 minutes. Remove beef from wok.
  • Heat butter in wok over high heat; stir in bell pepper, onion, mushrooms, and sweet and sour sauce. Cover and cook until vegetables begin to soften, about 3 minutes. Stir cooked beef into vegetable mixture; cook until heated through, about 2 minutes. Serve over cooked rice.

6 tablespoons soy sauce
3 teaspoons sugar
3 tablespoons sesame seed oil
1 tablespoon freshly grated ginger
1 lb boneless beef sirloin or 1 lb flank steak, sliced into 1/4 inch strips
5 teaspoons sesame oil, divided
1 onion, chopped
2 cloves garlic, minced
2 teaspoons freshly grated ginger
1 cup grated carrot
1 red pepper, seeded,and cut into strips
2 teaspoons cornstarch
1 tablespoon water

Steps:

  • In a medium bowl, whisk together the marinade ingredients and add beef strips.
  • Toss to coat well.
  • Allow to marinade 30 minutes or overnight.
  • In frying pan or electric wok, heat 2 tsp oil over medium heat.
  • Stir fry beef mixture in oil 2-3 minutes or until browned.
  • Remove from pan, and set aside.
  • In pan add remaining 3 tsps of oil, and stir fry vegetables, garlic and ginger for 1 minute.
  • Add beef back to pan and stir fry 2 minutes.
  • Mix cornstarch and water together and add to frying pan.
  • Cook, stirring constantly, until sauce is thickened.
  • Serve with rice or oriental noodles.

1 1/2 lbs beef flank steak
1 (10 1/2 ounce) can beef consomme or 1 (10 1/2 ounce) can condensed beef broth
1/4 cup soy sauce
1 teaspoon fresh ginger, grated
1 garlic clove, crushed
1 bunch green onion, sliced diagonally into 1-inch pieces
3 tablespoons cornstarch
2 tablespoons water
1/4 lb sugar snap pea
1 1/2 cups fresh bean sprouts
2 cups cooked rice

Steps:

  • Thinly slice flank steak diagonally across the grain.
  • In a slow cooker, combine steak, consomme, soy sauce, ginger, onions, and garlic.
  • Cover and cook on LOW 5-6 hours or until steak is tender.
  • Turn control to HIGH.
  • Dissolve cornstarch in water in a small bowl and stir into cooker.
  • Cover and cook on HIGH 10-15 minutes or until thickened.
  • During the last 5 minutes, drop in vegetables and re-cover.
  • Serve over rice.

¾ cup cornstarch
½ cup water
2 eggs
1 pound flank steak, cut into thin strips
½ cup canola oil, or as needed
1 large carrot, cut into matchstick-size pieces
1 green bell pepper, cut into matchstick-size pieces
1 red bell pepper, cut into matchstick-size pieces
3 green onions, chopped
¼ cup minced fresh ginger root
5 garlic cloves, minced
½ cup white sugar
¼ cup rice vinegar
3 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon red pepper flakes, or to taste

Steps:

  • Place cornstarch in a large bowl; gradually whisk in water until smooth. Whisk eggs into cornstarch mixture; toss steak strips in mixture to coat.
  • Pour canola oil into wok 1-inch deep; heat oil over high heat until hot but not smoking. Place 1/4 of the beef strips into hot oil; separate strips with a fork. Cook, stirring frequently, until coating is crisp and golden, about 3 minutes. Remove beef to drain on paper towels; repeat with remaining beef.
  • Drain off all but 1 tablespoon oil; cook and stir carrot, green bell pepper, red bell pepper, green onions, ginger, and garlic over high heat until lightly browned but still crisp, about 3 minutes.
  • Whisk sugar, rice vinegar, soy sauce, sesame oil, and red pepper together in a small bowl. Pour sauce mixture over vegetables in wok; bring mixture to a boil. Stir beef back into vegetable mixture; cook and stir just until heated through, about 3 minutes.

I have been making these spicy cookies for about 30 years, and they are always a hit! I have tweaked the recipe over the years, and they are truly addictive!

¾ cup shortening
1 cup white sugar
1 egg
¼ cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper, or you may use ungreased cookie sheets.
  • In a medium bowl, cream together the shortening and sugar until smooth. Beat in the egg and molasses. Combine the flour, baking soda, salt, cinnamon, ginger and cloves; stir into the batter until it forms a dough. The dough may seem a bit crumbly, but that is ok. Keep mixing and it will come together.
  • Remove dough from the bowl, and knead for a few turns. Pat out into a square, and divide into 6 equal pieces. Roll each piece out into a 12 inch long log. Place 3 logs onto each cookie sheet. Wet the tops of the logs with a little bit of water using your fingertips, then sprinkle with sugar.
  • Bake for 10 to 12 minutes in the preheated oven. Allow the cookies to cool for a couple of minutes, then slice the bars diagonally into 1 inch pieces using a knife or pizza cutter. Remove from cookie sheets to cool on wire racks. When completely cool, store in an airtight container at room temperature.

1 can (14 ounces) pineapple tidbits
1 can (11 ounces) mandarin oranges
2 tablespoons cornstarch
1-1/2 pounds beef top sirloin steak, cut into strips
4-1/2 teaspoons minced fresh gingerroot
1 tablespoon olive oil
1 can (14 ounces) whole-berry cranberry sauce
1 cup thinly sliced green onions
Hot cooked rice

Steps:

  • Drain pineapple and oranges, reserving juice; set fruit aside. In a small bowl, combine cornstarch and juices until smooth; set aside., In a large skillet or wok, stir-fry beef and ginger in oil until meat is no longer pink. Add the cranberry sauce, onions and pineapple. Stir cornstarch mixture and gradually add to skillet; cook and stir until slightly thickened. Gently stir in oranges. Serve with rice.
