- In a medium bowl or pitcher, combine mint and sugar. With a wooden spoon, mash leaves until bruised. Stir in peach juice, club soda, and bourbon.
- Serve over crushed ice; garnish with more mint.
GINGER PEACH JULEP
I would never have thought myself to be a bourbon lover, but bourbon in a fruity sweet-based drink is surprisingly good. For another delicious bourbon drink, see recipe #414739. Ginger Peach Julep is from Wayne Curtis, author of "And a Bottle of Rum: A History of the World in Ten Cocktails". Fun served in an iced filled Mason jar.

Steps:
- Combine the peach slices, bourbon, ginger syrup and mint leaves in a mixing glass. Muddle gently, crushing the peaches and bruising (but not tearing) the mint leaves. Let the mixture sit for 2 or 3 minutes.
- Pack a highball glass, julep cup or Mason jar with crushed ice and insert a straw. Slowly pour the contents of the mixing glass through a strainer into the ice-packed glass. Garnish with a mint sprig.
