EASY CLASSIC GOULASH
This version of classic American beef goulash makes an easy one-pot meal for the whole family. We love it.

- Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
- Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
- Pour macaroni into beef mixture, cover the pot, and continue simmering until pasta is tender and flavors are completely blended, about 25 minutes. Discard bay leaves.

BEEF GOULASH WITH POTATOES
Serve this rich beef stew over egg noodles on day two.

- Season steak with salt and pepper. Heat oil in a large pot over medium-high heat. Cook steak in batches, turning, until browned, about 5 minutes. Transfer to a cutting board; cut into bite-size pieces.
- Add onions and vinegar to pot; cook, stirring occasionally, until onions are soft, about 5 minutes. Stir in tomato paste and spices; cook, stirring, 1 minute. Add broth and potatoes; bring to a gentle boil and cook until potatoes are tender, about 30 minutes.
- Return steak to pot, along with any juices. Cook until warmed through. Season with salt and pepper. Reserve half of stew for next day; serve remainder with sour cream, parsley, and more pepper.

- Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
- Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
- Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

- Heat the oil in a large frying pan and brown the meat in batches over a high heat, making sure that the pan isn't overcrowded. As the meat is browned, remove to a large casserole with a draining spoon, and repeat. The pork will release some fat, so you shouldn't need to add any more oil. Don't hurry the process (it will take about 20 minutes in all) as it really boosts the flavour of the finished dish. Preheat the oven to 150°C, fan 130°C, gas 2.
- Reduce the heat to medium, tip the chorizo into the frying pan and cook for 1-2 minutes until it starts to release its fat, then stir in the onions. Cook for 6-8 minutes to soften, stirring frequently, then add all the spices and the garlic and tomato purée and cook for 1-2 minutes until fragrant. Stir in the flour, then gradually add the stock to make a sauce. Tip this into the casserole and add the pork, tomatoes, sugar and plenty of seasoning. Bring to the boil, cover with a lid and transfer to the oven to cook for 2 hours.
- Stir the peppers and olives into the casserole and return to the oven for 30 minutes until the pork and peppers are tender. Serve with mash and greens.
