5 large eggs (room temp)
3/4 cup granulated sugar
3/4 cup all-purpose flour
1/2 tsp baking powder
1/4 cup warm water
1 Tbsp granulated sugar
4 Tbsp fresh lemon juice (from 1 med/large lemon)
8 oz cream cheese (softened)
8 Tbsp 113 grams unsalted butter, softened
1 cup powdered sugar
6 oz blackberries (chopped (reserving 6 whole berries to garnish))
3/4 cup heavy whipping cream (chilled)
1 Tbsp powdered sugar
2 lemon slices (cut into triangles)

Steps:

  • Preheat oven to 350˚F. Line the bottom of an 18x13 baking sheet with parchment paper (do not grease).
  • Add 5 eggs to the bowl of a stand mixer fitted with whisk attachment and beat on high speed 1 min, or until foamy. Gradually add sugar and beat on high 7 min. It will be thick, fluffy and tripled in volume**
  • Whisk together flour and baking powder and sift into egg batter one third at a time, folding to incorporate between each addition and scraping from the bottom to catch hidden flour pockets. Stop mixing when you no longer see streaks of flour.
  • Transfer to lined baking sheet and bake right away at 350˚F for 13-15 min (mine took 15 min) or until top is golden. Remove from oven and right away run a thin edged spatula or knife around edges of your cake to loosen from the pan. While cake is hot***, invert cake face down onto a clean, dry linen towel, remove parchment paper then roll cake into the towel. Let cool to room temp (30 min - 1hr) in a draft free room.
  • Meanwhile, combine all ingredients for lemon syrup (water, sugar, lemon juice), stir to dissolve sugar and set aside.
  • In a large mixing bowl, combine 8 oz softened cream cheese, 8 Tbsp softened butter and 1 cup powdered sugar. Beat together starting on low speed to incorporate sugar, then turn the mixer up to high speed for 2-3 min or until whipped, white and fluffy, scraping down the bowl as needed. Add coarsely chopped blackberries and stir into cream with mixer on low, just until incorporated.
  • Carefully Unroll cake and loosen from the towel. Brush the top evenly with your lemon syrup. Put dollops of blackberry frosting over the surface and spread evenly. Roll the cake tightly in the same direction you rolled it the first time. Slice off the edges if desired and dust generously with powdered sugar.
  • For the topping, beat together 3/4 cup heavy cream with 1 Tbsp powdered sugar for 2 min on high speed until fluffy and spreadable. Transfer to a large piping bag with a large open star tip and pipe 6 flowers over the top, placing a fresh blackberry and lemon triangle into the center of each one.

8 large egg yolks, plus 3 egg whites, room temperature
2 large eggs
1 cup plus 3 tablespoons, plus 1 teaspoon sugar
1 tablespoon plus 1 teaspoon finely grated lemon zest, plus 2/3 cup fresh lemon juice (3 to 4 lemons total)
2 tablespoons unsalted butter
3/4 pound mascarpone cheese, room temperature
1 pint blackberries

Steps:

  • Make lemon curd: Put egg yolks, eggs, 3/4 cup sugar, and lemon juice in a medium heatproof bowl; set over a pan of simmering water. Whisk until mixture is very thick and smooth and temperature registers 165 degrees on an instant-read thermometer, about 5 minutes. Remove from heat; whisk in butter. Pour through a fine sieve into a medium bowl; cover with plastic wrap, pressing wrap directly on surface of curd. Refrigerate until cool and firm, about 1 hour.
  • Put egg whites in the bowl of an electric mixer fitted with the whisk attachment; beat on low speed. Meanwhile, bring 1/3 cup sugar and 2 tablespoons water to a boil in a small saucepan over high heat. Swirl pan to dissolve sugar. Wash down sides of pan with a wet pastry brush to prevent crystals from forming. Boil until syrup registers 248 degrees on an instant-read thermometer. Raise mixer speed to medium high; beat until egg whites have formed almost-stiff peaks. With mixer running, slowly pour in syrup; beat until mixture has cooled and stiff, glossy peaks have formed, about 4 minutes. Set meringue aside.
  • Stir mascarpone in a large nonreactive bowl with a rubber spatula until smooth. Fold in lemon curd and lemon zest. Fold in meringue.
  • Pulse berries and remaining 2 tablespoons sugar in a food processor until berries are broken up but not smooth. Fold into lemon mixture, leaving it slightly swirled. Freeze until slightly firm, about 20 minutes. Use immediately.

4 ounces bittersweet chocolate
Confectioners' sugar, for dusting

Steps:

  • Make chocolate genoise and mousse, ganache icing, and meringue mushrooms.
  • To assemble cake, carefully unroll genoise on the back side of a baking sheet (discard the plastic wrap and waxed paper, but keep the towel). Spread chocolate mousse evenly on cake to within 1 to 2 inches of one long end. Reroll cake, starting from other long end, using towel to help roll it. Cover with plastic wrap; chill until firm, about 1 hour.
  • Place cake, seam side down, on a serving platter; tuck parchment around it to keep platter clean while decorating.
  • Whip ganache at medium speed until it has the consistency of soft butter. Cut two wedges off ends of cake at a 45-degree angle; set aside. Ice log with a thin layer of ganache. Attach wedges on diagonally opposite sides of log. Spread ganache all over log, using a small spatula to form barklike ridges. Chill until ganache is firm, about 30 minutes.
  • In the top of a double boiler or in a heatproof bowl set over simmering water, melt chocolate until smooth. Line a baking sheet with parchment. Spread melted chocolate 1/8 inch thick over parchment. Refrigerate until cold, 10 to 15 minutes. Roll paper back and forth until chocolate splinters; sprinkle over cake. Chill cake until ready to serve.
  • When ready to serve, arrange meringue mushrooms around and on cake, and dust lightly with confectioners' sugar.

Steps:

  • To make this cake, you will double the Genoise cake recipe, stirring 1/3 cup unsweetened Dutch-process cocoa powder into the flour and salt. Bake in two 9-inch round cake pans that are buttered, lined with parchment paper, and dusted with cocoa powder. To make simple syrup with kirsch, stir in 1/3 cup kirsch to simple syrup recipe.
  • Slice each cake in half horizontally. Place 1 cake layer on a cake stand. Brush top with 1/4 cup simple syrup. Spread with 2 cups whipped cream, leaving a 1/2-inch border. Remove cherries from filling syrup with a slotted spoon, and transfer to a medium bowl. Scatter 1 1/4 cups cherries evenly over whipped cream. Drizzle with 2 tablespoons filling syrup. Repeat 2 times. Place final cake layer, cut side down, on top, and spread with ganache. Serve immediately.

1/2 cup sifted unsweetened Dutch-process cocoa powder, plus more for dusting
1 cup sifted cake flour (not self-rising)
1/2 teaspoon kosher salt
6 large eggs, plus 4 large egg yolks, room temperature
1 cup sugar
1 stick unsalted butter, melted and cooled
2 1/2 teaspoons unflavored gelatin (one 1/4-ounce package)
1/3 cup light rum
4 large eggs, separated, room temperature
1 1/4 cup sugar
2 1/2 cups cold heavy cream
1/2 teaspoon freshly grated nutmeg
2 teaspoons pure vanilla extract
5 large egg whites, room temperature
1 1/4 cups sugar
1/4 teaspoon cream of tartar
3/4 teaspoon pure vanilla extract

Steps:

  • Cake: Preheat oven to 425 degrees. Spray two 12 1/2-by-17 1/2-inch rimmed baking sheets with cooking spray. Line with parchment; spray parchment, then dust with cocoa, tapping out excess. Dust 2 kitchen towels with cocoa.
  • Whisk together cocoa, flour, and salt. Combine eggs, yolks, and sugar in the heatproof bowl of an electric mixer, then set over (not in) a pot of simmering water. Whisk until sugar is dissolved and mixture is warm to the touch, about 2 minutes. Transfer bowl to mixer fitted with the whisk attachment; beat on medium-high speed 2 minutes. Increase speed to high and beat until mixture is pale and thick, about 3 minutes more.
  • In two additions, sift cocoa mixture over top of egg mixture, then fold in. When almost incorporated, pour melted butter down side of bowl; gently fold to combine, scraping bottom of bowl to make sure dry ingredients are fully incorporated. Divide between prepared sheets, using an offset spatula to spread evenly and smooth tops. Bake until center springs back when lightly touched, 5 to 7 minutes. One sheet will bake quicker than other, depending on which is closer to heat source; remove that sheet and run a small sharp knife around edges of cake. Invert onto a prepared towel; remove parchment. Immediately, starting at one short side, roll into a log, incorporating towel. Repeat with second cake. Let cool while preparing filling.
  • Filling: Sprinkle gelatin over rum; let stand until softened, 5 minutes. Combine egg yolks and 3/4 cup sugar in a heatproof bowl set over (not in) a pot of simmering water. Whisk until pale and fluffy, about 2 minutes. Remove from heat; whisk in gelatin mixture. Set bowl over pot of simmering water again and whisk until gelatin has dissolved. Transfer mixture to another bowl.
  • Whisk cream with nutmeg and vanilla to medium peaks. Fold one-third of whipped cream into gelatin mixture, then fold gelatin mixture into remaining cream. In a clean mixing bowl, whisk egg whites and remaining 1/2 cup sugar on medium-high speed to stiff peaks, about 6 minutes. Fold into cream mixture.
  • Unroll cooled cakes, remove towels, and transfer each to a separate rimmed baking sheet. Set aside 1 cup filling; immediately divide remaining filling among cakes, spreading it evenly over each. Freeze cakes until filling is starting to firm up but is still pliable, 20 minutes.
  • Slice each cake in half length-wise to create 4 cake strips. Starting at a short end of one strip, roll up cake and place vertically in the center of a cake stand. Starting where rolled strip ends, wrap next strip around cake. Continue to wrap with remaining strips. Use reserved filling to fill in top of cake. For added stability, wrap a parchment collar around base of cake, keeping bottom of paper flush with cake stand. Freeze until firm, at least 8 hours and up to 2 days. Once frozen, trim top of cake with a serrated knife to level. Keep frozen until ready to frost.
  • Frosting: Combine egg whites, sugar, and cream of tartar in mixer bowl set over (not in) a pot of simmering water. Whisk constantly until sugar has dissolved and whites are warm to the touch, about 3 minutes (test by rubbing between your fingers).
  • Transfer bowl to mixer fitted with whisk attachment and beat, starting on low speed and gradually increasing to high, to stiff, glossy peaks, about 10 minutes. Add vanilla and beat until combined.
  • Spread frosting evenly over top and sides of cake; apply with offset spatula, using an S motion to create a textured appearance. Freeze cake at least 30 minutes and up to 1 day. Use a kitchen torch to brown meringue; serve immediately.

3/4 cup milk

24 ounces mascarpone cheese

Steps:

  • For the cake:.
  • Preheat oven to 350°F.
  • Grease and flour two 9" round pans.
  • Mix the dry ingredients together in a large mixing bowl.
  • Add the butter, water, and lemon juice and beat on medium for one minute.
  • Add the remaining ingredients and beat on medium for one minute more.
  • Pour the batter into the prepared cake pans.
  • Bake for about 30 minutes, or until a toothpick inserted into the middle of the cakes comes out clean.
  • Let the cakes cool thoroughly before filling and frosting.
  • For the frosting:.
  • Combine the mascarpone cheese, lemon juice, and powdered sugar in a bowl and beat on high until thoroughly combined and medium peaks form.
  • Use it to fill and frost the cake.
