1-1/2 cups boiling water
1 pkg. (3 oz.) JELL-O Orange Flavor Gelatin
2 cups cold seltzer
1/2 cup cold orange juice
1 cup fresh raspberries

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in seltzer and orange juice. Refrigerate 1-1/2 hours or until thickened.
  • Place raspberries in 8 stemmed glasses. Spoon gelatin evenly over raspberries.
  • Refrigerate 2 hours or until firm.

1 package (6 ounces) lemon gelatin
2 cups boiling water
2 cups miniature marshmallows
4 large ripe bananas, cut into 1/4-inch slices
1 can (20 ounces) crushed pineapple
2 cups cold water
1/2 cup sugar
2 tablespoons all-purpose flour
2 tablespoons butter
1 cup heavy whipping cream
1/2 cup chopped walnuts

Steps:

  • Sprinkle gelatin over boiling water. Remove from the heat; stir until gelatin is completely dissolved, about 5 minutes. Stir in marshmallows until melted. Stir in bananas. Drain pineapple, reserving juice. Add pineapple and cold water to gelatin mixture. , Pour into a 13-in. x 9-in. pan; chill until set. In a small saucepan, combine the sugar and flour. Gradually stir in reserved pineapple juice. Add butter; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; cool to room temperature, about 35-40 minutes. , In a small bowl beat the cream until firm peaks form; fold into pineapple juice mixture. Spread over gelatin mixture. Sprinkle with nuts. Chill for 1-2 hours.

Steps:

  • Fill a cocktail shaker halfway with ice; add orange juice and club soda. Cover and shake until the outside of shaker has frosted. Strain into a chilled champagne flute. Stir in sugar and serve immediately.

3 (.25 ounce) envelopes unflavored gelatin powder
3 cups hot brewed coffee
1 ⅓ cups water
1 tablespoon lemon juice
1 cup sweetened whipped cream for garnish

Steps:

  • In a saucepan, stir together the sugar and gelatin. Mix in hot coffee and water. Cook over low heat, stirring frequently until the gelatin and sugar have completely dissolved. Remove from heat, and stir in lemon juice. Pour into a 4 1/2 cup mold. Refrigerate until set, at least 6 hours or overnight. Serve with whipped cream.

1 1/2 cup(s) boiling water
1 package(s) (8 oz.) jello sparkling white grape flavor gelatin dessert - or - sparkling wild berry flavor gelatin dessert
2 cup(s) cold seltzer or club soda
1 can(s) (11 oz.) mandarin orange segments, drained
1 cup(s) sliced strawberries

Steps:

  • In a large bowl stir boiling water into gelatin for at least 2 minutes until completely dissolved. Stir in cold seltzer. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves a definite impression).
  • Stir in oranges and strawberries. Spoon into a 6-cup mold.
  • Refrigerate 4 hours or until firm. Unmold on lettuce-lined platter. Store leftover gelatin mold in refrigerator.
  • NOTE: To unmold, dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Shake gently to loosen. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.
  • NOTE: 5-1/2 hours is total time in refrigerator.
