1/2 cup tomato juice, chilled
1 tomatoes, finely chopped
1/2 seedless cucumber, finely chopped
1/2 sweet red pepper, deseeded, finely chopped
1/4 red onion, finely chopped
1 small garlic clove, crushed
1/2 teaspoon Worcestershire sauce
2 -3 drops Tabasco sauce (or to taste)
salt & freshly ground black pepper
1/2 cup vodka, chilled

Steps:

  • Place the tomato juice, tomato, cucumber, capsicum, onion, garlic and Worcestershire sauce in the jug of a blender and blend until almost smooth.
  • Add Tabasco sauce.
  • Taste and season with salt and pepper.
  • Divide vodka evenly among shot glasses.
  • Top with the gazpacho and serve immediately.

1 1/4 cups chopped tomatoes
3/4 cup coarsely chopped peeled English cucumber
1/4 cup chopped sweet green pepper
2 tablespoons chopped onions
1 clove garlic, smashed
2 cups tomato juice
2 tablespoons red wine vinegar or 2 tablespoons cider vinegar
1/4 teaspoon dried dill
1 dash hot pepper sauce
pepper
alfalfa sprout

Steps:

  • In food processor or blender, process tomatoes, cucumber, green pepper, onion and garlic until smooth.
  • Stir in tomato juice, vinegar, dillweed,hot pepper sauce, and pepper to taste.
  • Refrigerate at least 1 hour or until chilled.
  • Pour into glasses, garnish with alfalfa sprouts.

A homemade tomato basil shrub does all the heavy lifting in this refreshing drink. This fruit-forward vinegar can be mixed into mocktails or cocktails - we opted to omit the alcohol in this cooler that you can enjoy all day long. So summery, it has savory, garden-fresh vibes from vine-ripe tomatoes. Sweet and aromatic notes come from the basil sugar, which is simmered into the shrub as well as used to rim the glass. It's so good, you might find yourself adding any leftover basil sugar to other recipes, such as sugar cookies or a peanut sauce to toss with cold noodles.

1 cherry tomato, for garnish
1/4 cup Basil Sugar, recipe follows
1 teaspoon kosher salt
2 ounces Tomato Basil Shrub, recipe follows, chilled
6 ounces sparkling water, chilled
1 pound vine-ripe tomatoes, chopped
1 cup Basil Sugar, recipe follows
1 teaspoon kosher salt
1/2 cup white balsamic vinegar
1 1/4 cups sugar
1/3 cup packed fresh basil leaves

Steps:

  • Prepare the garnish by cutting a small X in the top and bottom of the cherry tomato. Skewer a paper straw through the two X's and set aside.
  • Fill a small bowl with 1/4 inch water. Mix the basil sugar with the salt on a small plate.
  • Dip the rim of an 8- to 10-ounce rocks glass in the water then in the basil sugar mixture. Add two or three 1-inch ice cubes to the rimmed glass, carefully pour in the tomato basil shrub then top with the sparkling water. Stir with the prepared straw, adjust the tomato so it sits about 1/2 inch above the rim and serve.
  • Combine the tomatoes, basil sugar and salt in a small saucepan and stir together to start to dissolve the sugar and break down the tomatoes. Bring to a simmer over medium-high heat and cook, stirring occasionally to break up the tomatoes, until the tomatoes are saucy and the skins are loosened, 25 to 30 minutes. (No need to add water; there will be plenty of liquid from the tomatoes.)
  • Remove from the heat and stir in the vinegar. Strain through a fine-mesh sieve into a medium heatproof bowl, pressing as much juice as possible through the sieve; discard the solids. Transfer the shrub to a glass jar and refrigerate for 24 hours before enjoying so the flavors can meld together. The shrub can be refrigerated for up for 2 weeks. Makes about 2 cups.
  • Combine the sugar and basil in a mini food processor and pulse until the basil is finely chopped and blended into the sugar. You might need to stop and stir occasionally to help disperse the basil. Transfer to a jar and refrigerate for up to 2 weeks. Makes about 1 1/2 cups.

16 cucumber slices
12 fresh mint leaves
1/2 cup freshly squeezed lime juice
8 ounces vodka
Ice cubes
4 cups club soda

Steps:

  • To make simple syrup, bring the sugar and 1/2 cup water to a simmer in a saucepan on medium heat, then turn off the heat and let cool to room temperature.
  • In a tall thermos, add the cucumbers, mint and simple syrup. Stir with the handle of a wooden spoon. Add the lime juice and vodka, then cover and shake vigorously for about 30 seconds. Chill until ready to serve.
  • Pour over ice in glasses, then top off with the club soda. Serve immediately.

CANDY CANE COOLER

1 tablespoon crushed candy cane or peppermint candy
1 1/2 ounces Mint-Infused Vodka, recipe follows
1/2 ounce B&B (Benedictine and brandy)
1/2 ounce half-and-half
Ice
Peppermint stick
Mint sprig for garnish
2 cups fresh mint leaves, de-stemmed
1 bottle quality vodka

Steps:

  • Place crushed candy cane bits into pint glass. Muddle the candy cane slightly, breaking up the bigger pieces. Do not over-muddle into a powder. Add vodka, brandy and half-and-half and stir. Pour into a shaker with ice. Shake lightly to chill and strain into old-fashioned glass full of ice. Add a peppermint stick and stir. Garnish with a mint sprig.
  • Thoroughly wash mint leaves and place in a decanter or jar. Empty vodka into container and muddle slightly to release the essential oils. Store in a cool, dark place for at least 3 days - longer if you want a stronger taste.
