QUICK OVEN ROASTED TOMATOES RECIPE

Quick Oven Roasted Tomatoes Recipe image

Tomatoes, tossed with garlic, fresh thyme, and spices, then roasted in a high-heated oven until super tender and bursting with intense, concentrated flavor. There are so many ways to use up roasted tomatoes--as a delicious side; tossed in pasta or soup; or served bruschetta-style on top of your favorite toasted bread. Heck, you can serve them with homemade pita chips.

Provided by Suzy Karadsheh

Categories     Side Dish

Number Of Ingredients 8

2 lb Smaller Tomatoes, (halved (I used Campari tomatoes) )
2 to 3 garlic cloves, (minced)
Kosher salt and black pepper
2 tsp fresh thyme, (stems removed)
1 tsp sumac
1/2 tsp dry chili pepper flakes,
Extra virgin olive oil,
Crumbled feta cheese, (optional)

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the tomato halves in a large mixing bowl. Add minced garlic, salt, pepper, fresh thyme, and spices. Drizzle a generous amount, about 1/4 cup or more, quality extra virgin olive. Toss to coat.
  • Transfer the tomatoes to a baking sheet with a rim. Spread the tomatoes in one single layer, flesh side up.
  • Roast in your heated oven for 30 to 35 minutes or until the tomatoes have collapsed to your desired doneness.
  • Remove from heat. If you are planning to serve it soon, feel free to garnish with more fresh thyme and a few sprinkles of feta cheese. Enjoy warm or at room temperature.

TOMATO AND GARLIC PASTA

Tomato and Garlic Pasta image

There is nothing nicer than the flavor of fresh tomatoes. You can use canned, but the trouble you take to prepare this dish is worth it. You prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.

Provided by ALMA-LOU

Categories     Main Dish Recipes     Pasta

Yield 4

Number Of Ingredients 9

1 (8 ounce) package angel hair pasta
2 pounds tomatoes
4 cloves crushed garlic
1 tablespoon olive oil
1 tablespoon chopped fresh basil
1 tablespoon tomato paste
salt to taste
ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Place tomatoes in a kettle, and cover with cold water. Bring just to the boil. Pour off water, and cover again with cold water. Peel. Cut into small pieces.
  • Cook the pasta in a large pot of boiling salted water until al dente.
  • In a large skillet or saute pan, saute the garlic in enough olive oil to cover the bottom of the pan. The garlic should just become opaque, not brown. Stir in the tomato paste. Immediately stir in the tomatoes, and salt and pepper. Reduce heat, and simmer until the pasta is ready; add the basil.
  • Drain the pasta, but do not rinse in cold water. Toss with a couple of tablespoons of olive oil, and then mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 10 minutes when it is ready to serve. Garnish generously with fresh Parmesan cheese.
  • VARIATIONS: Saute fresh quartered mushrooms with the garlic, or add shoestring zucchini along with the tomato.

GARLIC ROMANO TOMATOES

Garlic Romano Tomatoes image

My father conjured up this delicious and fresh appetizer or side dish, inspired by a recipe that he felt "lacked kick". You can vary this recipe based on personal preference very successfully. You can subsitute parmesan for Romano if you must, but it has a milder taste. A phenominal addition to a nicely grilled Rib-eye, Delmonico, or Filet Mignon. Are you a garlic lover? This is a must try!

Provided by Shandobando

Categories     Cheese

Time 45m

Yield 6 serving(s)

Number Of Ingredients 6

5 large red ripe tomatoes, Sliced 3/8th to 1/2 inch thick
1/2 cup extra virgin olive oil
1 tablespoon salt
1 tablespoon cracked black pepper
4 -6 garlic cloves, crushed (2 tbsp)
3/4 cup romano cheese, grated

Steps:

  • In a small bowl combine olive oil, salt, pepper, and garlic. Set aside to let the flavors blend together(At least 30 minutes), stirring occasionally.
  • Slice tomatoes and lay side by side on a serving platter. (May need more than one platter).
  • Stir oil mixture one last time and spoon out the garlic from the oil, placing a small amount of garlic on each tomato - evenly distributing the garlic amongst slices.
  • Spoon or drizzle the oil mixture over all the tomato slices evenly.
  • Sprinkle the romano over the tomatoes evenly.
  • Serve!
  • If these are as popular in your house as they are in mine, there won't be any left!

STEWED ROMANO BEANS WITH TOMATOES

Stewed Romano Beans With Tomatoes image

Romanos hold up to longer cooking, as you'll see when you make this dish. Even when they soften, after 20 minutes of braising or stewing, they still have plenty of texture, their color remains good and they become somewhat juicy. If you can't find romano beans use regular green beans. Just reduce cooking time to 15 minutes.

Categories     easy, lunch, quick, snack, vegetables, main course, side dish

Time 35m

Yield Serves 4 to 6

Number Of Ingredients 10

3 tablespoons extra-virgin olive oil
1 large red onion, finely chopped
Salt
2 large garlic cloves, minced
1 1/2 pounds fresh romano beans, trimmed and cut in 2- to 3-inch lengths
1 cup grated or chopped peeled tomatoes (about 3/4 pound)
1/4 cup chopped fresh dill
Ground black pepper
Feta cheese for topping
Cooked pasta or grains, such as bulgur, quinoa, polenta or brown rice (optional)

Steps:

  • Heat 2 tablespoons olive oil over medium heat in a wide, lidded skillet or Dutch oven and add onion and a pinch of salt. Cook gently without browning, stirring often, until tender and translucent, about 8 minutes. Add garlic and cook, stirring, for another minute, until fragrant.
  • Stir in romano beans, tomatoes and half the dill. Add 1/2 cup water, bring to a simmer, season with salt and pepper, cover and simmer 20 minutes, until beans are tender. Stir in remaining dill and olive oil and simmer another 2 to 3 minutes. Taste and adjust seasonings.
  • Serve hot, warm or room temperature, with feta sprinkled over the top. If serving as a main dish, serve over cooked grains such as bulgur, quinoa, polenta or brown rice, or toss with pasta.
