This pizza with chicken, bacon and a garlic cream sauce is pizza comfort food 101 and makes for a great change-up to pizza night.

250 grams all-purpose flour (2 cups)
1 tsp sea salt
1/4 tsp dry active yeast
3/4 cup warm water
2 chicken breasts, shredded
Emeril's Essence seasoning
1 tbsp olive oil
6 slices bacon, chopped
1 tbsp unsalted butter
1 shallot, chopped
4 garlic cloves, minced
1 tbsp all-purpose flour
1/2 cup heavy cream
1/4 cup low-sodium chicken stock
1/4 tsp Italian seasoning
1 cup shredded mozzarella cheese
1 cup shredded sharp cheddar cheese
1/2 cup freshly grated Parmesan cheese, divided
sprinkle of cornmeal

Steps:

  • In a medium bowl, mix together the flour, salt and yeast. Add the water and mix with a wooden spoon or your hands. It should be sticky, but not lumpy.
  • Cover with saran wrap and a towel in a warm place, allowing it to rise for 24 hours. Transfer to a floured surface and shape into ball. Use when ready.
  • Place pizza stone in oven 8" from the broiler element and preheat to 500°F. You want stone to be in oven for at least 30 minutes at 500°F.
  • If using chicken breasts, heat medium skillet with 1 tbsp olive oil over medium heat. Season with Emeril's Essence and cook in skillet for 4 minutes on each side until completely cooked through and shred. If using rotisserie chicken, just shred, add the seasoning and set aside.
  • In a medium skillet, cook the bacon over medium heat until fat is rendered and crisp. Place on paper towel-lined plate and reserve 1 tbsp bacon fat.
  • In same skillet over medium heat, add butter. Add shallot and cook for about 2 minutes. Add garlic and cook for another 30 seconds. Add flour and cook for about 1 minute, or until bubbly.
  • Slowly whisk in cream and chicken stock and cook for about 1 minute or until thickened. Add Italian seasoning and 1/4 cup Parmesan cheese and stir to combine. Remove from heat and set aside.
  • Sprinkle pizza peel with cornmeal or flour. Use your hands to gently tug, pull and push the dough to the shape you want and place on pizza peel.
  • Spread a light layer of the garlic cream sauce over the dough, leaving about 1 inch around the edges untouched. Spread the cooked chicken and bacon throughout the pizza. Add the mozzarella, cheddar and remaining Parmesan cheese on top.
  • Once stone is preheated, turn broiler to high. Transfer pizza to pizza stone and bake for 4-5 minutes or until top is bubbly and bottom is golden brown.

1/2 cup Philadelphia savory garlic cooking creme
1 package (6 ounces) ready-to-use grilled chicken breast strips
4 strips ready-to-serve fully cooked bacon, chopped

Steps:

  • Place pizza crust on a greased 14-in. pizza pan. Spread with cooking creme. Top with chicken and bacon; sprinkle with cheese., Bake at 425° for 10-15 minutes or until cheese is melted.

We love pizza in our house. But you can't always get the flavors you want by ordering out. So, we make what we like at home. This is one of our favorites and it is so easy.

1 boboli pizza crust
2 c mozzarella cheese
1 large chicken breast
6 to 8 slice cooked bacon
1 medium tomato slices
pinch salt and pepper
1 c garlic alfredo sauce
2 tsp olive oil
1/2 c red onion slices

Steps:

  • 1. Pre-heat oven per directions on Boboli pkg. I cut the chicken breast in pieces before cooking because it cooks faster. Cook in skillet with little olive oil and salt and pepper. Cook bacon prior or same time as chicken breast but in another skillet till crispy. Let bacon cool on paper towel and then crumble.
  • 2. I will slice and tomatoes and red onions while the chicken and bacon are cooking.
  • 3. Spread alfredo sauce on crust..(use as little or as much as you like) spread chicken evenly over sauce, then layer bacon, tomato and red onion around the pizza. Spread cheese all over pizza.
  • 4. Cook pizza according to Boboli pkg or till golden brown. The meat is already cooked , so no worry about that. I like black pepper on top of my pizza as you can see. Use what tastes good to you! Remove and slice and enjoy!

2 tablespoons butter or margarine, softened
2 cloves garlic, minced
2 tablespoons chopped green onion

½ cup chopped fresh cilantro
½ cup ricotta cheese
¼ cup grated Parmesan cheese

Steps:

  • Place the chicken breast in a saucepan with enough water to cover. Bring to a boil, and cook until no longer pink, about 20 minutes. Drain and cool slightly, then cut into strips.
  • Meanwhile, in a small skillet over medium heat, melt the butter with garlic, onion and basil. Pour into a chilled dish to cool, and refrigerate until set.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll out the pizza dough, place onto a pizza pan or other baking sheet, and spread the herb butter over the surface using the back of a spoon. Arrange chicken on top, then dot with ricotta cheese. Top with tomato slices, cilantro and Parmesan cheese.
  • Bake for 15 to 20 minutes in the preheated oven, until crust is browned and center is cooked through.

CRUST:
3 to 3-1/2 cups all-purpose flour
2 tablespoons sugar
3 teaspoons quick-rise yeast
1 teaspoon salt
1 cup buttermilk
1/4 cup olive oil
1 tablespoon butter
1 tablespoon honey
1 tablespoon cider vinegar
1 large egg yolk
1 teaspoon vanilla extract
GARLIC SAUCE/TOPPINGS:
6 garlic cloves, minced
2 tablespoons olive oil
1 cup heavy whipping cream
Salt and pepper to taste
2 cups cubed cooked chicken
1 cup julienned sweet red pepper
2 cups shredded pizza cheese blend

Steps:

  • In a large bowl, combine 3 cups flour, sugar, yeast and salt. In a saucepan, heat the buttermilk, oil, butter, honey and vinegar to 120°-130°. Add to the dry ingredients; beat just until moistened. Add egg yolk and vanilla; beat until smooth. Stir in enough remaining flour to form a soft dough. Cover and let rest for 10 minutes., Press dough into a greased 15x10x1-in. baking pan. Prick with a fork. Bake at 400° for 10-12 minutes or until lightly browned., Meanwhile, in a saucepan, saute garlic in oil. Add the cream, salt and pepper. Bring to a boil; reduce heat. Simmer, uncovered, until reduced to 2/3 cup, about 10 minutes. Spread over crust. Sprinkle with chicken, red pepper and cheese. Bake 10-15 minutes longer or until the cheese is melted.

2 heads garlic, tops, removed
¼ cup olive oil, divided, plus 3 1/2 tablespoons
2 teaspoons kosher salt, divided
2 teaspoons freshly ground black pepper, divided
1 boneless, skinless chicken breast
1 boneless, skinless chicken thigh
½ teaspoon paprika
1 teaspoon italian seasoning
3 strips hickory smoked thick cut bacon
1 lb pizza dough
⅓ cup pizza sauce
1 ¼ cups shredded mozzarella cheese
⅓ cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat the grill to 400°F (200°C).
  • Place the garlic heads on a small sheet of aluminum foil. Drizzle 1½ tablespoons of olive oil over the garlic and season with ½ teaspoon salt and ½ teaspoon pepper, then wrap tightly. Place the garlic on one side of the grill, close the lid, and roast for 35-40 minutes, until the cloves are tender and golden brown. Remove from the grill and let cool for 10 minutes, then unwrap the foil and squeeze the garlic cloves out of the skins.
  • Meanwhile, season the chicken breast and thigh with the remaining 1½ teaspoons of salt, remaining 1½ teaspoons black pepper, the paprika, Italian seasoning, and 2 tablespoons of olive oil. Add the seasoned chicken to the rotisserie basket and turn on the motor so that the chicken rotates and cooks evenly. Cook for 10-12 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken and let rest for about 5 minutes, then roughly chop.
  • Heat a small cast-iron skillet on the sizzle zone over medium-high heat. Add the bacon to the pan and cook, flipping occasionally, for 6-8 minutes, until very crispy and cooked through. Remove the bacon from the pan and roughly chop.
  • Roll out the pizza dough to your desired shape, about ½ inch thick. Brush the remaining ¼ cup of olive oil over both sides of the dough, then place directly on the grill grates (or use a pizza stone if preferred). Close the lid and cook for 5-6 minutes, or until the bottom is lightly browned.
  • Flip the dough over and top with the pizza sauce, mozzarella cheese, cheddar cheese, chopped chicken, chopped bacon, and roasted garlic cloves. Close the lid and cook for another 5-6 minutes, or until the bottom of the dough is cooked through and the cheese has melted.
  • Remove the pizza from the grill and sprinkle with the parsley. Slice and serve immediately.

2 1/2 cups flour
2 tablespoons oil

2 tablespoons minced garlic
2 cups grilled chicken, cut into thin strips
2 cups mozzarella cheese

Steps:

  • Crust: Dissolve yeast in warm water.
  • Add flour, oil, salt and sugar.
  • Stir together to form dough.
  • I have used either my dough hook or bread machine for this.
  • Let dough rest 20 minutes.
  • Divide in half and press each into a 12 inch pizza pan.
  • Prick all over with a fork, bake at 425°F for 8 minutes.
  • Remove from oven and brush with melted butter.
  • Spread ranch dressing over butter and sprinkle with garlic, chicken and cheese.
  • I like to add just a little cheddar with the mozzarella.
  • Put back in oven until desired doneness.
