Yet another one of those good for you, and hide the veggies things. I love chickpeas, but my kids think they look weird. This is very plain for picky palates.

3 garlic cloves
1/4 cup plain low-fat yogurt
1 tablespoon fresh lemon juice
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
1 (19 ounce) can chickpeas, drained

Steps:

  • Put all ingredients into a food processor, and blend until smooth.
  • Serve at room temperature with pita chips, crackers, carrots, or other dipping vegetables.

If you've never liked hummus that's because you only bought that yucky store bought "stuff". Stay away from that and serve this on nice warm crusty bread and watch everyone's faces in delight! I always add more lemon juice, garlic, and salt to my tastes.

1 (15 ounce) can garbanzo beans (or about 5 oz. of dried chickpeans or garbanzo beans which have been soaked overnight and cooked for)
1/2 cup vegetable oil (typically olive oil is used)
2 tablespoons fresh parsley or 1 1/2 tablespoons dried parsley
2 tablespoons lemon juice
1 whole scallion
2 garlic cloves
1/4 teaspoon salt
1 tablespoon water

Steps:

  • Blend all ingredients except for beans in a food processor.
  • Add beans and process until it resembles a chunky dip; not completely smooth.
  • Enjoy!

2 cups canned garbanzo beans, drained
⅓ cup tahini
¼ cup lemon juice
1 teaspoon salt
2 cloves garlic, halved
1 tablespoon olive oil
1 pinch paprika
1 teaspoon minced fresh parsley

Steps:

  • Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
  • Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

1 tablespoon lemon juice
1 tablespoon olive oil
1 clove garlic, crushed
½ teaspoon ground cumin
½ teaspoon salt
2 drops sesame oil, or to taste

Steps:

  • Blend garbanzo beans, lemon juice, olive oil, garlic, cumin, salt, and sesame oil in a food processor; stream reserved bean liquid into the mixture as it blends until desired consistency is achieved.

I made this for my husband and myself but I now make it regularly for my 11 month-old son to eat since he gobbled it up when I let him try it! I'm not sure where the original recipe came from but after I made it, I thought the lemon juice overpowered everything and there wasn't enough flavor. I played around with it and this is what I came up with. It's a great dip for carrot and raw green pepper sticks (not to mention that it's pretty healthy to boot!) Enjoy! **NOTE: THIS RECIPE IS FOR THE PARTY BATCH OF DIP. IT CAN EASILY BE HALVED SINCE IT SHOULD BE EATEN WITHIN 4 DAYS OF MAKING IT.**

2 tablespoons lemon juice
4 tablespoons water
2 tablespoons olive oil
2 teaspoons garlic, minced

1 teaspoon chili powder
1 teaspoon adobo seasoning
1/2 teaspoon oregano (optional)

Steps:

  • Blend all ingredients together.
  • Mash or puree until smooth, adding more water as needed until the dip is at your personal desired consistancy (I like mine thick!).
  • Cover and store in the refrigerator for up to 4 days (the longer it sits in there, the better the flavors will blend).
