2 teaspoons kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 lb shrimp, peeled and deveined
1 ½ cups all purpose flour
3 large eggs, beaten
1 ½ cups panko breadcrumbs
1 ¾ cups unsweetened shredded coconut flake
canola oil, for frying
4 limes, juiced
2 limes, zested
2 tablespoons sesame oil
1 tablespoon brown sugar
2 teaspoons sriracha
1 lb rice noodle, 1/4 in (6 mm), cooked according to package instructions and drained
1 large carrot, sliced into ribbons
1 avocado, thinly sliced
1 persian cucumber, thinly sliced
1 bunch fresh basil, leaves torn
1 bunch fresh mint, leaves torn
1 bunch fresh cilantro, leaves torn
1 bunch scallions, thinly sliced on the diagonal
2 tablespoons black sesame seeds, for garnish (optional)

Steps:

  • In a small bowl, stir together the salt, pepper, garlic powder, and paprika.
  • Place the shrimp on a cutting board and pat dry with paper towels. Season the shrimp on both sides with the spice mixture.
  • Add the flour, eggs, and panko to 3 separate shallow bowls. Add the coconut flakes to the bread crumbs and stir to combine.
  • Dredge the shrimp in the flour, shaking off any excess. Dip the floured shrimp in the beaten egg, then into the panko mixture. Transfer the breaded shrimp to a baking sheet until ready to fry.
  • Heat 3 inches (7 ½ cm) of canola oil in a heavy-bottomed pot over medium-high heat until it reaches 350˚F (180˚C).
  • Working in batches, fry the shrimp in the hot oil until golden brown on both sides, 2-3 minutes, turning halfway through. Transfer the shrimp to a wire rack to drain.
  • In a large bowl, whisk together the lime juice, lime zest, sesame oil, brown sugar, and Sriracha. Using tongs, toss the rice noodles in the sauce until fully coated.
  • Divide the noodles between 4 bowls. Top with the carrot ribbons, avocado, coconut shrimp, cucumber, basil, mint, cilantro, and scallions. Sprinkle with black sesame seeds, if using.

1 teaspoon McCormick® Garlic Powder
1 teaspoon McCormick® Paprika
1 ¼ teaspoons kosher salt, plus more to taste
⅛ teaspoon cayenne
½ teaspoon freshly ground black pepper
1 lb shrimp, shrimp, peeled and deveined, tails left on
½ cup all purpose flour
2 large eggs, beaten
1 cup unsweetened coconut flakes
⅓ cup panko breadcrumbs
coconut oil spray, for greasing
½ lime, juiced
½ cup sweet chili sauce, for serving (optional)

Steps:

  • In a small bowl, mix together the garlic powder, paprika, salt, cayenne, and black pepper.
  • Place the shrimp on a cutting board and pat dry on both sides with a paper towel. Season on both sides with the spice blend.
  • Add the flour, eggs, and coconut flakes to 3 separate shallow bowls. Add the panko to the bowl with the coconut flakes and mix to combine.
  • Dredge the shrimp in the flour, shaking off any excess. Dip the floured shrimp in the eggs, then in the panko-coconut mixture. Transfer the breaded shrimp to a clean cutting board or baking sheet.
  • Liberally spray the shrimp on both sides with the coconut oil spray.
  • Set the air fryer to 360˚F (182°C).
  • Working in batches, place the shrimp into the basket of the air fryer, being careful not to overcrowd the basket. Cook the shrimp for 10 minutes, flipping halfway through, until golden brown and crispy on the outside and the internal temperature reaches 145°F (63°C). Repeat with remaining shrimp.
  • Squeeze the lime juice over the shrimp and season with salt to taste.
  • Serve the shrimp immediately with sweet chili sauce or the sauce of your choice, for dipping.

1 lb lean ground beef
1 ½ teaspoons garlic powder
1 teaspoon paprika
½ teaspoon cayenne
½ teaspoon black pepper
1 ½ teaspoons kosher salt
3 scallions, thinly sliced
⅓ cup panko breadcrumbs
2 large eggs
1 orange, zested
½ cup soy sauce
¼ cup brown sugar
2 garlic cloves, grated
1 teaspoon grated fresh ginger
¼ teaspoon red pepper flakes
⅛ teaspoon fresh ground black pepper
1 teaspoon cornstarch
2 teaspoons water
toasted sesame seed
scallion, thinly sliced on the bias

Steps:

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • Make the meatballs: In a medium bowl, mix together the ground beef, garlic powder, paprika, cayenne, black pepper, salt, scallions, panko bread crumbs, eggs, and orange zest until fully incorporated.
  • Use a 1½-tablespoon cookie scoop to portion the meatballs onto the prepared baking sheet in rows of 4, leaving 1½ -2 inches of space between each meatball.
  • Bake the meatballs for 20 minutes, until brown and cooked through.
  • Meanwhile, make the teriyaki sauce: In a small saucepan over medium heat, combine the soy sauce, brown sugar, garlic, ginger, red pepper flakes, and black pepper. Bring to a gentle simmer and cook for 2 minutes.
  • In a small bowl, mix together the cornstarch and water. Stir the slurry into the sauce and continue to simmer until thick enough to coat the back of a spoon, about 10 minutes.
  • Remove the meatballs from the oven and, using a fork, transfer a few at a time into the sauce to coat, returning to the baking sheet between batches. Coat the meatballs in the sauce a second time, then transfer to a serving platter.
  • Garnish with sesame seeds and sliced scallions. Serve warm.

18 uncooked jumbo shrimp (about 1 pound)
1/3 cup cornstarch
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
3 large egg whites
2 cups sweetened shredded coconut
Oil for deep-fat frying
APRICOT-PINEAPPLE SALSA:
1 cup diced pineapple
1/2 cup finely chopped red onion
1/2 cup apricot preserves
1/2 cup minced fresh cilantro
2 tablespoons lime juice
1 jalapeno pepper, seeded and chopped
Salt and pepper to taste
Lime wedges, optional

Steps:

  • Peel and devein shrimp, leaving tails intact. Make a slit down inner curve of each shrimp, starting with the tail; press lightly to flatten. In a shallow dish, combine the cornstarch, salt and cayenne; set aside. In a bowl, beat egg whites until stiff peaks form. Place the coconut in another shallow dish. Coat shrimp with cornstarch mixture; dip into egg whites, then coat with coconut., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry shrimp, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels., In a bowl, combine salsa ingredients. Serve with shrimp and, if desired, lime wedges.

1 small yellow onion, diced
½ red bell pepper, seeded and chopped

1 teaspoon kosher salt
½ tablespoon sugar

Steps:

  • Melt 1 tablespoon of butter in a large skillet over medium heat. Add the onion and cook until starting to soften, about 5 minutes.
  • Add the remaining tablespoon of butter and the red and green bell peppers. Cook until slightly softened, 3-4 minutes.
  • Add the coconut milk, fish sauce, lemon juice, pepper, salt, sugar, curry powder, and maggi and mix well. Bring to boil, then reduce the heat to low and simmer for 10 minutes, until the flavors start to meld together.
  • Add the shrimp and cook for 3-4 minutes, until pink and opaque.
  • Serve the curry with brown rice and garnish with cilantro.

3 young thai coconuts, meat removed

6 tablespoons semolina flour
1 ½ teaspoons kosher salt, plus more to taste
1 cup non-dairy milk, of choice
1 tablespoon apple cider vinegar
½ cup fresh parsley, chopped
1 lemon, cut into wedges

Steps:

  • Make the marinade: In a medium bowl, whisk together the caper juice, lemon zest, lemon juice, olive oil, and garlic.
  • Cut the coconut into ½-inch (1 ¼ cm) wide strips and add to the marinade. Cover and refrigerate for 2-4 hours.
  • Heat 1 inch (2 ½ cm) of canola oil in a large, high-walled skillet over medium-high heat until it reaches 375°F (190°C). Set a wire rack inside a baking sheet or line with paper towels and set nearby.
  • In a medium bowl, whisk together the all-purpose flour, semolina flour, and salt.
  • In a second medium bowl, whisk together the non-dairy milk and apple cider vinegar.
  • Working in batches, remove the coconut meat from the marinade and transfer to the non-dairy milk mixture. Allow any excess liquid to drip off, then transfer to the flour mixture, tossing to coat.
  • Working in batches to avoid overcrowding the pan, fry the battered coconut meat for about 2 minutes, until golden brown. Transfer to the wire rack to drain and immediately season with salt and lemon juice.
