OLD-FASHIONED MACARONI SALAD

Steps:
- To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
- While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
- In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.
- In a separate bowl, whisk together the mayonnaise, mustard, pickled relish, and salt and pepper, to taste. Add the dressing to the macaroni and toss to coat. Season with more salt and pepper, if needed. Cover and chill for 2 hours for the flavors to meld.
SWEET MACARONI SALAD
A sweet out-of-the-ordinary dressing makes this macaroni salad special. My aunt gave me the recipe and it has become one of my favorites. I occasionally leave out the green pepper if I know that people don't like it, and it still tastes great. -Idalee Scholz, Cocoa Beach, Florida

- Cook macaroni according to package directions. Drain and rinse in cold water; drain well., In a large bowl, combine macaroni and vegetables. Whisk together remaining ingredients until smooth and sugar is dissolved; stir into macaroni mixture. Refrigerate, covered, overnight.

When I got married this was one of the first recipes I asked from my mom. Prep and Cook Times, Servings are my guesses... It does make a lot!

- After cooking and draining macaroni, mix first set of ingredients together, while macaroni is still warm.
- In another bowl mix together second set of ingredients until it is smooth.
- Then pour it over the macaroni and stir.
- Cover and refrigerate OVERNIGHT.
- It will be bright yellow and real good the next day!
OVERNIGHT MACARONI SALAD
Marinating this salad overnight makes it just plain good!!

- 2. Combine macaroni and Italian dressing, cover and chill overnight.
- 3. Add vegetables and Velveeta. Mix well. Add sour cream and mayonnaise, stir gently. Sprinkle with bacon bits.

Steps:
- 1. These are some of the main ingredients used to make the salad. I prefer Mayonnaise over Miracle Whip for my salads, because of the extra punch of flavor I feel it gives, but that is a matter of choice. Use what you like best.
- 2. Cook pasta till Al Dente or according to directions on package. Then drain immediately and rinse in cold water. Set aside till needed. NOTE: LEAVING PASTA IN HOT WATER WILL ALLOW IT TO CONTINUE COOKING.
- 3. Prep all of the veggies and set aside till needed.
- 4. Add the condensed milk, Mayonnaise or Miracle whip, vinegar & sugar to a large bowl, add in the spices, then beat or whisk until creamy & smooth & blended together.
- 5. Add in all the veggies, chopped chive and stir until well mixed together.
- 6. Pour into casserole dish or 9 X12 size deep dish pan. Garnish as desired. Refrigerate at least 6 hours, but preferably over night. Stir just before serving.
