LEMON FUSILLI WITH SHRIMP

Steps:
- Bring a large pot of water to a boil. Add salt and pasta. Cook until al dente according to package instructions, about 12 minutes.
- While pasta is cooking, heat oil over medium-high heat in a medium skillet. Add garlic and white parts of scallions, and cook until fragrant, about 30 seconds.
- Add shrimp, and cook 1 minute. Turn and cook until pink and firm, about 1 minute more. Stir in peas, lemon zest, and red pepper flakes. Add 1/2 cup pasta cooking water, and cook until peas are bright green and shrimp are cooked through, about 1 minute more. Transfer to a large bowl.
- Drain pasta and add to bowl with shrimp. Add watercress and mix gently. Drizzle with lemon juice. Season with salt and pepper, and toss to combine. Serve immediately, garnished with scallion greens.
FUSILLI WITH SHRIMP AND PEAS
You can use Spinach or Arugula instead of the Watercress. Serve warm or chilled for a nice salad for brunch.

- Note keep the white and the green of the scallions separate.
- Cook the fusilli until Al dente according to package directions. Drain and return to pot tossing with 1 tbsp oil. Cover to keep warm.
- While this is cooking saute the garlic and white of scallion in a saucepan in the remainder of the oil until fragrant, about 30 seconds.
- Add shrimp and cook 1 minute. Turn the shrimp and cook until pink and opaque approx one minute more. Stir in peas, wine, lemon zest, and red pepper. Cook 1 minute.
- Transfer shrimp mix to the pot and toss with pasta. Drizzle lemon juice over. Sprinkle with green scallion pieces and the watercress. Season with salt and pepper. Toss gently and serve.

Steps:
- Cook pasta according to package directions; drain. Return pasta to pan to keep warm.
- Heat oil over medium-high heat in a 12-inch skillet. Sprinkle shrimp with 1/4 teaspoon salt and pepper. Add shrimp to hot oil. Cook and stir for 3-4 minutes, or until shrimp are opaque. Remove shrimp from skillet; keep warm.
- Pesto: Add peas, broth, and garlic to skillet and bring to a boil. Reduce heat and simmer, uncovered, for 3 minutes. Remove from heat. In a food processor or blender, add pea mixture, mint, butter, and remaining salt. Cover and process/blend until smooth. Add vinegar; pulse to combine.
- Pour pesto over pasta and toss gently to combine. Top with shrimp.
- Serve immediately.
