GORGONZOLA FLATBREADS WITH PROSCIUTTO AND DATES



Gorgonzola Flatbreads with Prosciutto and Dates image

A topping of creamy Gorgonzola, chewy-sweet dates, and salty prosciutto makes for a high-impact Christmas hors d'oeuvre.

1 tablespoon olive oil, plus more for baking sheet
1 pound store-bought pizza dough (thawed if frozen)
All-purpose flour, for work surface
4 ounces Gorgonzola cheese, crumbled (1 cup)
2 ounces Fontina cheese, shredded (1/2 cup)
1/3 cup pitted dates, coarsely chopped
Ground pepper
4 ounces thinly sliced prosciutto

Steps:

  • Preheat oven to 450?. Lightly brush a large rimless baking sheet with oil. (Alternatively, use a rimmed baking sheet turned upside down.)
  • Divide dough in half. On a lightly floured work surface, roll and stretch dough to two 16-by-4-inch ovals (or as large as will fit on your baking sheet); transfer to prepared baking sheet. Dividing evenly, brush top of dough with 1 tablespoon oil.
  • Sprinkle dough with Gorgonzola, Fontina, and dates; season with pepper. Bake until crust of flatbreads is golden, 15 to 17 minutes.
  • Transfer flatbreads to a cutting board. Drape prosciutto on top of flatbreads, and cut crosswise into small triangles. Serve immediately.

Yield 1 flatbread (8 slices).

Number Of Ingredients 9

2 teaspoons olive oil
1 medium red onion, thinly sliced
1/8 teaspoon salt
1 prebaked 12-inch thin pizza crust
1 cup shredded part-skim mozzarella cheese
1/4 teaspoon Italian seasoning
1 large navel orange, peeled, sectioned and cut into 1/2-inch pieces
1/2 cup pitted dates, chopped
1/4 cup crumbled feta cheese

Steps:

  • Preheat broiler. In a large skillet, heat oil over medium heat. Add onion and salt; cook and stir 6-8 minutes or until onion is softened. Reduce heat to medium-low; cook 20-25 minutes or until deep golden brown, stirring occasionally., Place crust on an ungreased baking sheet; sprinkle with mozzarella cheese. Broil 3-4 in. from heat 1-2 minutes or until cheese is melted., Top with Italian seasoning, onion, orange and dates. Sprinkle with feta cheese. Broil 2-3 minutes longer or until heated through.

Martha puts a savory twist on mardouf, a traditional Omani flatbread sweetened with dates, by adding saffron and fresh chives. She made this recipe on "Martha Stewart's Cooking School" episode 504.

Number Of Ingredients 8

1/2 cup pitted Medjool dates (7 to 10)
Pinch of saffron threads
1 cup boiling water
2 1/4 cups unbleached all-purpose flour, plus more for dusting and rolling
1 teaspoon kosher salt, plus more for serving
1 large egg
1/4 cup ghee, melted, plus 1/3 cup for brushing and frying
3/4 cup chopped fresh chives

Steps:

  • Place dates and saffron in a glass measuring cup or small bowl and add boiling water; let soak until softened, about 1 hour. Puree until smooth using an immersion blender or a food processor. Strain mixture through a fine-mesh sieve and discard solids. Set date puree aside.
  • Whisk together flour and salt in a large bowl. Using a fork, stir in egg and 1/4 cup melted ghee and mix until a crumbly dough forms. Mix in reserved date puree with a fork or your hands until the dough starts to come together. On a lightly floured surface, knead dough until smooth and elastic, 2 to 4 minutes.
  • Divide dough into 12 equal pieces and knead until smooth. Form into balls and transfer to a parchment-lined baking sheet. Cover with plastic and let rest for 1 hour.
  • On a lightly floured surface, use a floured rolling pin to roll one ball of dough into a rough oval, 8 to 10 inches in length. Brush surface with melted ghee, sprinkle with 1 tablespoon chives, and fold bottom third of dough up to the middle of the dough. Then fold top third of dough down over dough until it just touches the bottom edge. Brush surface again with ghee and fold each side in, one on top of the other to make a square. Roll the dough square out, turning several times, to form a rectangle about 5 by 7 inches. Brush both sides with ghee. Transfer to a baking sheet. Repeat process with remaining dough balls.
  • Heat a large cast-iron griddle or skillet over medium. Working with one piece of dough at a time, cook until golden brown and bubbling, about 1 minute per side, brushing with more ghee as necessary. Transfer to a plate and sprinkle with salt before serving.
