For a great late night treat, I whip up this snack mix. The blend of the fruit and nuts is so delicious!-Donna Brockett, Kingfisher, Oklahoma

Number Of Ingredients 10

1 cup sunflower kernels
1 cup pecan halves
1 cup whole salted cashews
1 cup salted peanuts
1 cup raisins
1 cup semisweet chocolate chips
1 cup creamy peanut butter or butterscotch chips
1 cup coarsely chopped dried apricots
3/4 cup coarsely chopped dried peaches or apples
1/2 cup dried cranberries

Steps:

  • In a large bowl, combine all ingredients. Store in an airtight container.

These hearty cookies are packed with wholesome dried fruits and nuts. They borrow their delicious flavors from the traditional holiday fruitcake.

Number Of Ingredients 13

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter
1 cup packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups sweetened shredded coconut
1 1/2 cups chopped dried apricots
1 1/2 cups chopped dates
1 1/2 cups chopped macadamia nuts
1 1/2 cups chopped pistachios

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt in a medium bowl.
  • Put butter in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth. Add sugars, and mix until pale and fluffy, about 3 minutes. Mix in eggs one at a time until combined; mix in vanilla.
  • Reduce mixer speed to low. Add flour mixture and mix until just combined. Stir in coconut, apricots, dates, macadamias, and pistachios.
  • Drop batter, 2 heaping tablespoons at a time, onto prepared baking sheets, spacing 2 inches apart. Flatten slightly. Bake, rotating sheets halfway through, until golden brown, 12 to 15 minutes. Remove from oven; transfer cookies on parchment paper to a wire rack to cool completely.

9 1/2 ounces mixed nuts (I used Planters Select Cashews with almonds, and pecans)
6 ounces smoked almonds (I used Blue Diamond smokehouse almonds)
8 ounces dried apricots, using kitchen shears cut in halves (or thirds)
8 ounces dried cranberries

Steps:

  • Combine all ingredients. Store in airtight container or bags.

1 package (6 ounces) dried apricots, quartered
3/4 cup golden raisins
3/4 cup walnut halves
1/2 cup salted cashews
1/2 cup sunflower kernels
1/3 cup dried cranberries
1/4 cup sugar
1-1/2 teaspoons Chinese five-spice powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 large egg white
1 teaspoon water

Steps:

  • Preheat oven to 250°. Coat a foil-lined 15x10x1-in. baking pan with cooking spray; set aside. In a large bowl, combine the first 10 ingredients. In a small bowl, beat egg white and water on high speed for 1 minute or until frothy; fold into fruit mixture. , Spread into prepared pan. Bake until aromatic and nuts are lightly browned, about 1 hour, stirring every 15 minutes. Cool completely. Store in an airtight container.

  • Heat the oven to 275ºF. Line a small baking pan with parchment paper. Soak the chia seeds in 2 tablespoons of cold water.
  • Place the next 6 ingredients – cranberries through almond flour – in the bowl of a food processor and pulse until everything is finely chopped but not powdered. Keep checking until you’re happy with the texture.
  • Pour the mixture into a big bowl and stir in the cinnamon, sesame seeds, pine nuts, soaked chia seeds with their liquid/gel, and raw honey. Mix until everything is well combined and sticks together like dough when you squeeze it. It’s best to use your hands for this. If the mixture is too dry, add a bit of water.
  • When the mixture is uniform, push it down into the lined baking pan with your fingers, to a depth of about 1/2 inch or so. If it’s sticky, wetting your fingers will help. Bake for 55-60 minutes or until the whole surface looks dried out and starts to turn golden.
