FILIPINO STYLE BUBUR CHA-CHA



Filipino Style Bubur Cha-Cha image

A delicious dessert. Also from Flavours magazine. You can substitute other tropical fruit for jackfruit which is not always available. Would be delicious with mango.

300 g sweet potatoes, peeled and diced
300 g taro root, peeled and diced
300 g tapioca, peeled and diced (cassava)
400 ml thin coconut milk
6 jackfruit, cut into strips
3 bananas, sliced
200 ml thick coconut milk
150 g sugar
1/8 teaspoon salt

Steps:

  • Steam sweet potato and taro.
  • Boil cassava in a pot with the thin coconut milk.
  • Cook until cassava is tender and translucent.
  • Add sweet potato, taro, jackfruit and banana.
  • Add thick coconut milk and season to taste with sugar and salt.
  • If you wish to thicken mix a tablespoon of tapioca flour with some water and add to pot.
  • Stir and bring to boil before turning off heat.
  • Serve warm.

  • Peel and cut all potatoes and taro into cubes or desired shapes. Steam, separately, until cooked.
  • To make tapioca flour jelly, place the flour in mixing bowl. Pour in boiling water. Mix the flour and water until well incorporated. When the dough is cool, roll it out evenly on a well floured surface and cut into cube or desired shapes.
  • Bring a pot of water, add in 1 table spoon sugar, pour in banana and boil for 5 minutes. Drain and set aside.

  • The tapioca pearls I got do not need to be soaked. Bring a large pot of water to a boil. Add tapioca pearls and cook until they turn translucent and cooked through, about 10 minutes or so. Give them a stir every now and then to prevent sticking to the bottom of the pot. Try them out and see if they are cooked through or still hard in the center. If they are still hard in the center, boil for another 3-5 minutes and then check again. The water will turn cloudy and gooey because of the starch from the pearls
