24 frozen breaded cooked chicken nuggets
1/4 cup sour cream
2 teaspoons Old El Paso™ 40% less-sodium taco seasoning mix (from 1-oz package)
1 to 2 tablespoons milk
1 box (7.4 oz) Old El Paso™ hard and soft taco shells (6 hard corn shells and 6 soft flour tortillas)
3/4 cup shredded Cheddar cheese (3 oz)
1 1/2 cups shredded lettuce
1/2 cup Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Bake chicken nuggets as directed on package. Cover to keep warm. Reduce oven temperature to 325°F. Heat taco shells and tortillas as directed on box.
  • Meanwhile, in small bowl, mix sour cream, taco seasoning mix and enough milk for desired consistency. Set aside.
  • Fill each taco shell and tortilla with 2 chicken nuggets, cheese, lettuce and salsa. Drizzle each with sour cream mixture.

4 flour tortillas (6 inch)
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 tsp. ground cumin
1/2 tsp. chili powder
2 tsp. oil
1/2 cup chopped tomato
1 cup shredded iceberg lettuce
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oven to 425°F.
  • Crumble 4 sheets of foil to form 4 (2-inch) balls. Fold tortillas in half; place one foil ball inside each folded tortilla to resemble a taco shell. Place on two baking sheets. Bake 7 to 8 min. or until golden brown. Cool on baking sheets 5 min. or until taco shells are crisp. Remove and discard foil.
  • Meanwhile, toss chicken with spices. Heat oil in medium skillet on medium-high heat. Add chicken; cook 5 to 6 min. or until chicken is done.
  • Spoon chicken mixture into taco shells; top with remaining ingredients.

12 frozen breaded fully cooked chicken breast nuggets
1/4 c caesar dressing
4 flour tortillas,8 to 10 inches in diameter
2 c shredded iceberg lettuce
1 medium tomato,cut into 8 slices
1/2 c chow mein noodles

Steps:

  • 1. Bake or microwave nuggets as directed on package.
  • 2. Meanwhile, spread 1 T dressing over each tortilla, sprinkle each evenly with 1/2 cup lettuce. Arrange tomato slices and 3 nuggets down center of each tortilla, sprinkle nuggets with 2 T. chow mein noodles.
  • 3. Fold sides of tortillas over filling, slightly overlapping.

675 g Chicken Fillets, cubed small ( 1 1/2 pounds )
2 t Fresh Garlic, crushed
1 t Salt
1 cup Buttermilk
2 cups Self-Raising Flour
2 t Cayenne Pepper
1 TB Paprika
1 TB Dried Oregano
1/2 t Black Pepper
Oil , for deep-fry
3 TB Mayonnaise
1 small Lime, juice and zest
1 t Fresh Garlic, crushed
1 t Water
8 Soft Flour Tortillas, medium size (heat just before use)
2 cups Roma Tomatoes, quartered
2 cups Lettuce, shredded

Steps:

  • Toss together the Chicken, Garlic, Salt and Buttermilk - place in a marinating container and marinade 30 minutes
  • Combine the Flour, Cayenne Pepper, Paprika, Oregano and Black Pepper in a medium bowl
  • Heat the Oil for deep-fry
  • Meanwhile, shake off the excess marinade from the Chicken - dip into the Flour mixture and deep-fry 2 - 3 minutes in small batches - transfer to a paper towel lined plate and keep warm until all the Chicken are cooked
  • Dressing: Whisk together the Mayonnaise, Lime zest and juice, Garlic and Water - keep aside until needed.
  • To assemble: Scatter some Lettuce over one half of each warmed Tortilla, top with Tomato and Chicken Nuggets - drizzle over some Dressing - fold over the other half of the Tortilla

2 (12 ounce) boxes frozen chicken nuggets
1/2 teaspoon chili powder
1 large ripe avocado, diced
1 tablespoon lime juice
1 tablespoon vegetable oil
2 scallions, white and light green parts, chopped
1 small red bell pepper, seeded and diced
3 cups fresh corn (from about 4 medium ears) or 3 cups frozen corn kernels (from about 4 medium ears)
2 tablespoons chopped fresh cilantro
salt, to taste
8 (6 inch) corn tortillas, warmed

Steps:

  • Preheat oven to 375°F Line a baking sheet with foil. Arrange chicken nuggets on baking sheet and sprinkle with chili powder. Bake until crispy and cooked through, about 25 minutes.
  • Combine avocado and lime juice in a small bowl. Warm oil in a large skillet over medium heat. Add scallions and bell pepper and cook, stirring, until softened, about 3 minutes. Add corn and saute until warmed through, 5 to 7 minutes. Remove from heat, stir in cilantro and season with salt.

1 tablespoon water
2 1/2 cups RICE KRISPIES® cereal
1 1/2 teaspoons paprika*
1 teaspoon seasoned salt*
1/8 teaspoon garlic powder*
1/8 teaspoon onion powder*
1 pound boneless, skinless chicken breasts
1 tablespoon butter or margarine, melted
1/4 cup reduced-fat ranch salad dressing

Steps:

  • In shallow dish combine egg whites and water. On large sheet of wax paper combine KELLOGG'S® RICE KRISPIES® cereal, paprika, seasoned salt, garlic powder and onion powder.
  • Cut chicken into 1 1/2-inch pieces. Dip chicken pieces into egg white mixture, coating all sides. Roll in cereal mixture. Place in single layer on ungreased baking sheet. Drizzle with melted butter. Bake at 450 degrees F about 12 minutes or until no longer pink in center.
  • Serve warm with salad dressing as dipping sauce.
  • This recipe makes 4 main dish servings or 8 appetizer servings.

2 tsp rapeseed oil
1 tsp ground cumin
1 tsp smoked paprika
450g skinless chicken breasts, preferably organic
4 medium tomatoes, preferably on the vine, halved
1 red pepper, quartered
1 small red onion, cut into 8 wedges
¼ tsp rapeseed oil
2 tsp lime juice
¼ tsp ground cumin
good pinch of chilli flakes
2 medium-sized ripe avocados, stoned, peeled and roughly chopped
4 tsp lime juice
2 spring onions, ends trimmed, finely chopped
3 tbsp chopped coriander
good pinch of chilli flakes
8 corn tacos shells
8 tsp 0% Greek yogurt
2 Little Gem lettuces, shredded
chopped coriander
lime wedges, for squeezing over

Steps:

  • Mix the oil with the cumin and paprika on a large plate. Sit the chicken on the plate and rub the spiced oil all over it. Season with pepper and a pinch of salt, then cover and set aside while you prepare the salsa.
  • Heat the grill to high for 10 mins. Meanwhile, line a large baking tray with foil and lay the tomatoes (cut-side up) on it, along with the pepper and red onion. Brush the oil over the onion, and season the tomatoes and onion with pepper. Grill for 12-15 mins, turning the tomatoes and onion halfway through, until well charred. Remove (leaving the grill on) and set aside to cool - put the pepper in a bowl and cover with cling film so that it's easier to skin later.
  • For the guacamole, put the avocado in a bowl and briefly mash with a fork, leaving some chunky pieces for texture. Gently mix in the lime juice, spring onions, coriander and chilli flakes. Season with pepper and a pinch of salt.
  • Re-line the baking tray with foil and lay the chicken on it, plump-side up. Grill for about 10 mins until cooked - there is no need to turn it. Meanwhile, scoop out and discard as much of the seeds and juice from the tomatoes as you can (so the salsa isn't too wet), leaving the pulp and charred skin. When the pepper is cool enough to handle, peel off and discard the skin. Chop the tomatoes and onion, and dice the pepper. Combine in a bowl with the lime juice, cumin, chilli flakes, some pepper and a pinch of salt.
  • When the chicken is cooked, remove from the grill, cover loosely with foil and set aside for 5 mins.
  • Heat oven to 180C/160C fan/gas 4. Cut the chicken into chunky slices and spoon over the juices. When ready to serve, lay the taco shells on a baking sheet and warm through for 2-3 mins. Serve the chicken, taco shells, yogurt, lettuce, coriander and lime wedges in separate bowls, so that everyone can build their own tacos.

  • Dip nuggets into egg, then into crumbs, coating evenly.
