FROSTED BANANA BARS
These banana bars are always a hit at potlucks in the small rural farming community where my husband and I live. I also like to provide them for coffee hour after church. They're so moist and delicious that wherever I take them, they don't last long. -Karen Dryak, Niobrara, Nebraska

Steps:
- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended., Transfer to a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack., For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost bars.

FROSTED BANANA COOKIES
Here is another one of my favorite banana cookies. Banana bread is my all time favorite, so this cookie is no exception. These are tasty little jewels. They are great any time of year. I like to make these as prt of my Christmas baking.

Steps:
- Preheat oven to 350 degrees. In a large bowl cream butter and brown sugar, beat until creamy. Add bananas, egg, sour cream and vanilla; continue beating until well mixed. Reduce speed; add flour, baking powder, baking soda and salt, beat until well mixed.
- Drop by teaspoonfuls, 2" apart, onto ungreased cookie sheets. Bake for 8 to 10 minutes or until edges are lightly browned. Cool completely.
- For the frosting, melt butter in saucepan over medium heat. Add brown sugar and half & half. Continue cooking, stirring occasionally, until mixture comes to a boil, about a minute or 2. Remove from heat; add powdered sugar, vanilla and cinnamon; beat until mixed. Cool slightly. Frost cookies. Let stand until frosting is set.
PEGGY'S FROSTED BANANA BARS
This banana cookie bar recipe was given to me years ago by a friend in Nebraska; they come out perfect every time!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 10x15-inch rimmed baking pan.
- Beat 1/2 cup butter and white sugar together in a bowl using an electric mixer until creamy. Beat in bananas, eggs, and 1 teaspoon vanilla extract.
- Combine flour, baking soda, and salt in a separate bowl. Add to the banana mixture and mix well. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
- Beat cream cheese and 1/2 cup butter together in a bowl using an electric mixer until fluffy. Add confectioners' sugar and 2 teaspoons vanilla extract gradually; beat well. Spread frosting over the cooled bars and sprinkle walnuts on top.

These Frosted Banana Cookies are my new favorite way to put my soft brown bananas to use. They are so easy to make and taste absolutely amazing. If you are in need of a quick and simple snack or dessert recipe, these are perfect.

- Heat oven to 350 degrees.
- Cream sugar, butter, shortening, and vanilla until light and fluffy.
- Add bananas and then mix in the eggs.
- Blend in buttermilk. Add the dry ingredients until just combined. Do not over-beat. It will be a sticky batter. Drop by tablespoons onto a greased cookie sheet.
- Bake for 9-10 minutes, until slightly golden.
- Cool completely.
- Mix all ingredients together and spread over cooled cookies.

- Preheat your oven to 350°. Line 2 baking sheets (or use the same one) with parchment paper or grease your baking sheet. I use half sheet pans (they measure about 18x13 inches) for baking these cookies... sometimes called a jelly roll pan.
- Place all ingredients in your mixer and mix well. You can add more or less powdered sugar depending on how thick you want it. Make sure your butter and cream cheese are completely softened or your frosting will be lumpy (still delicious but lumpy).This recipe will leave you with some leftover frosting. You can easily half the recipe but in my opinion it is just not quite enough (but I like a lot of frosting!)
