TACO MACARONI SKILLET

This dish is very easy and full of flavor. Perfect for the nights when you don't want to be stuck in the kitchen for more than 30 minutes.

1 lb lean ground beef
2 1/2 cups water
1/3 cup yellow onion
2 -3 garlic cloves
1 (20 ounce) can rotell diced tomatoes with green chilies (undrained)
3 tablespoons taco seasoning
1 3/4 cups dried elbow macaroni
2/3 cup evaporated milk
1 cup shredded cheddar cheese, divided

Steps:

  • Cook onion & garlic until soft. Add ground beef, brown & drain.
  • Stir in water, tomatoes (including juice in can), & seasoning. Cook until mixture comes to a boil.
  • Add pasta and return mixture to a boil. Reduce heat to low & cover. Cook stirring occasionally for 15 minutes.
  • Remove from heat & stir in evaporated milk & 1/4 cup cheese. Sprinkle remaining cheese on top.
  • Cover, let stand for 5-10 minutes before serving.

You may be familiar with that one-skillet macaroni dish that comes in a box where all you have to add is ground beef? Well, this is my version, with a little Tex-Mex twist. The whole family will eat it up, and it's so easy to put together.

Number Of Ingredients 18

1 tablespoon vegetable oil
1 cup diced onion
2 cloves garlic, minced
1 pound ground chuck
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 tablespoons tomato paste
1 tablespoon chili powder
2 teaspoons ground cumin
1 1/2 cups beef stock
8 ounces elbow pasta, cooked according to package directions
One 8-ounce block sharp Cheddar, shredded
Kosher salt and freshly ground black pepper
Sour cream and chopped green onions, for serving, optional
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • Heat the oil in a large cast-iron skillet over medium heat. Add the onion, garlic, ground beef and House Seasoning. Cook until the veggies begin to soften and the beef is slightly browned and no longer pink, about 7 minutes. Stir in the tomato paste, chili powder, cumin and beef stock.
  • Increase the heat to medium-high and bring the mixture to a rolling boil. Reduce the heat to low and cook until the sauce reduces, 5 to 10 minutes. Add the pasta and continue to cook, stirring constantly, until the liquid starts to slightly absorb. Add the cheese and remove from the heat. Season with salt and pepper.
  • To serve, top with the sour cream and sprinkle with the green onions, if using.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

1 (1.25 ounce) package Ortega® Taco Seasoning Mix
½ cup dried elbow macaroni
1 cup shredded Cheddar cheese, divided
⅔ cup evaporated milk

Steps:

  • Cook beef in a large skillet, stirring frequently, until brown; drain.
  • Stir in water, tomatoes with juice, chiles, and seasoning mix. Cook until mixture comes to a boil.
  • Add pasta; return to a boil. Reduce heat to low; cover. Cook, stirring occasionally, for 14 to 16 minutes or until pasta is tender.
  • Stir in evaporated milk. Remove from heat; stir in 1/4 cup cheese. Sprinkle remaining cheese over top. Cover; let stand for 5 to 10 minutes before serving.

1/4 pound lean ground turkey
2 tablespoons chopped onion
2 tablespoons chopped green pepper
1 can (8 ounces) tomato sauce
1/2 cup uncooked elbow macaroni
1/2 cup water
1/4 cup picante sauce
2 tablespoons shredded reduced-fat cheddar cheese
1/4 cup crushed baked tortilla chip scoops
1/4 cup chopped avocado
Optional: Iceberg lettuce wedges and sour cream

Steps:

  • Heat olive oil in a large nonstick skillet over medium-high heat; add turkey, onion and green pepper. Cook until vegetables are tender and turkey is no longer pink. , Stir in the tomato sauce, macaroni, water and picante sauce. Bring to a boil. 1 lb extra lean ground sirloin
1 small onion, chopped
16 ounces can tomato sauce
16 ounces can water, use the empty tomato sauce can
16 ounces can diced tomatoes and green chilies, undrained
3 cups uncooked elbow macaroni
1/4 teaspoon salt
1/4 teaspoon pepper
1/2-1 teaspoon cumin
1/8-1/4 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1 teaspoon dried cilantro
1/2 cup milk
2 -2 1/2 cups shredded cheddar cheese, can use cheddar-jack

Steps:

  • In a large skillet, brown and crumble the ground sirloin with the chopped onion until no longer pink; drain excess fat, if desired (there shouldn't be that much if you've used the extra lean ground sirloin).
  • Return cooked beef/onions to skillet. Add the tomato sauce, water, diced tomatoes, dry macaroni and seasonings. Stir well and bring to a boil.
  • Reduce heat to medium-low. Cover tightly and simmer for 12-15 minutes (stirring once or twice) or until macaroni is tender.
  • Add milk and cheese and stir well, until cheese is smooth and melted.
  • Serve.
