Homemade Peach Crumb Bars image

These homemade peach crumb bars are always a hit. Wait until summer for fresh peaches or use frozen to get that wonderful peach flavor any time of the year.

1 ½ cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
1 pinch salt
10 tablespoons cold unsalted butter, cut into cubes
1 large egg yolk
1 tablespoon cold water
2 cups fresh peach slices, or more to taste
½ cup white sugar
2 tablespoons all-purpose flour
1 tablespoon lemon juice
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat an 8x8-inch baking pan with cooking spray.
  • Whisk flour, sugar, baking powder, and salt together in a bowl. Next, cut in the cold butter using 2 forks or a pastry cutter then slowly mix in the egg yolk and cold water. Don't worry if the dough seems really crumbly; it should be!
  • Press 1/2 of the crumble mixture into the prepared pan to make the crust. Save the rest for the top of the bars.
  • Stir together peach slices, sugar, flour, lemon juice, vanilla extract, cinnamon, and nutmeg until combined. Evenly add peach filling to the top of the crust.
  • Sprinkle the remaining crumble over the peach filling.
  • Bake in the preheated oven until golden brown and set, 30 to 38 minutes. Cool bars to room temperature, then cut and serve.

1/2 cup butter, softened
3/4 cup packed brown sugar
Dash salt
1-1/3 cups all-purpose flour
FILLING:
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon ground cinnamon
4-1/2 cups fresh or frozen sliced peeled peaches (about 20 ounces), thawed and drained
1/2 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Beat butter, brown sugar and salt until blended; beat in flour until crumbly. Reserve 1 cup mixture for topping. Press remaining mixture onto bottom of a greased 8-in. square baking pan. Bake until lightly browned, 12-15 minutes. Cool on a wire rack., For filling, mix flour, brown sugar and cinnamon; toss with peaches. Spread over crust; sprinkle with pecans. Top with reserved topping., Bake until topping is golden brown, 35-40 minutes. Cool on a wire rack. Cut into bars.

1 1/2 sticks (3/4 cup) cold unsalted butter, cubed, plus more for dish
1 1/2 cups unbleached all-purpose flour
2/3 cup light brown sugar
1 teaspoon kosher salt
1 stick (1/2 cup) unsalted butter, softened
1 cup light brown sugar
Pinch salt
1/3 cup light corn syrup
1/4 cup unbleached all-purpose flour
3 cups coarsely chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 13 by 9-inch baking dish with foil allowing an overhang about 2 inches off the sides. Butter the foil.
  • In a food processor, blend together flour, sugar, butter and salt until the mixture resembles coarse sand. Add 2 tablespoons cold water and mix until the dough just holds together. Press dough into bottom of buttered baking dish and bake in oven until golden in color, about 20 to 25 minutes.
  • Meanwhile, make the filling. In a stand mixer fitted with paddle attachment, add the butter, brown sugar and a pinch of salt and mix on medium speed until light and fluffy, about 3 minutes. Add the corn syrup, flour and pecans and mix until just combined. Spread the filling over the baked crust and bake until golden brown, about 30 to 35 minutes. Remove the dish from the oven and allow it to cool completely in the pan.
  • Remove from pan by pulling up the foil sides and putting it on a cutting board. Cut bars in desired size with a sharp knife and arrange them on a serving tray. Can be stored in an airtight container up to 2 days.

If you love fresh, summer peaches this dessert is for you! My Peaches & Cream Dessert Bars have a Pecan Sandie cookie crust, cream cheese filling, fresh peaches and toasted pecans! You don't have to be a Southerner to enjoy this fabulous dessert!

1 (11.3 oz) pkg., Pecan Sandies Cookies
1/2 c. pecans
1/4 c. sugar
1/3 c. melted butter
1 (8 oz. pkg) cream cheese, room temperature
2 Tbsp. milk
1 c. powdered sugar
1 (8 oz. container) frozen whipped topping, thawed
2 1/2 c. fresh or canned peaches, peeled & chopped
1 large (5.9oz. pkg) vanilla pudding mix
3 1/2 c. cold milk
1 (8 oz. container) frozen whipped topping, thawed
1/2 c. chopped, toasted pecans
fresh peach slices for garnish, if desired

Steps:

  • Preheat oven to 350. Lightly spray a 9x13 pan with non-stick spray. Set aside.
  • In a food processor, crush the cookies, pecans and sugar together. Stop to pour in the melted butter. Pulse a few more times to combine. Pour out into the prepared pan. Press crust mixture firmly and evenly into the bottom of the pan. Bake at 350 for 5-7 minutes just to set the crust. Remove from oven and let cool.
  • For the cream cheese layer, cream together the cream cheese, powdered sugar and milk until smooth. Fold in the thawed whipped topping. Spread over the bottom crust. Place in refrigerator while making the second layer.
  • For the peach layer, peel and cut fresh or canned peaches into chunks. Add the peach chunks to the top of the cream cheese layer. Mix the pudding mix and milk. Pour over the top of the peaches.
  • Top with the remaining container of frozen whipped topping and sprinkle with the toasted pecans. Refrigerate for at least 2 hours before serving for the dessert to set-up.
  • Slice and top with additional peach slices if desired.

1-1/2 cups sugar, divided
1 teaspoon baking powder
1/2 teaspoon salt
Dash ground cinnamon
1 cup shortening
1 large egg
1 teaspoon vanilla extract
9 medium peaches, peeled and chopped
1 teaspoon almond extract
4 teaspoons cornstarch

Steps:

  • Preheat oven to 375°. Whisk flour, 1 cup sugar, baking powder, salt and cinnamon; cut in shortening until crumbly. In another bowl, whisk egg and vanilla until blended; add to flour mixture, stirring with a fork until crumbly., Reserve 2-1/2 cups crumb mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. baking pan., Toss peaches with almond extract. In another bowl, mix cornstarch and remaining sugar; add to peaches and toss to coat. 1 cup unsalted butter, softened at room temperature for 1 hour
1/2 packed cup dark brown sugar
2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon salt
1/2 teaspoon ginger
1/8 teaspoon cinnamon
Peach Filling
2 pounds peaches, unpeeled (about 8 peaches)
1 tablespoon sugar
1 tablespoon cornstarch
1/4 teaspoon salt
Pecan Oat Topping
1/2 cup unsalted butter, softened at room temperature for 1 hour, divided
1 cup old-fashioned oats
1/2 cup flour
1 cup pecans, finely chopped
1/4 teaspoon cinnamon
1/4 teaspoon salt
Glaze
Juice of 1 lemon, about 3 tablespoons
1/2 to 1 cup powdered sugar

Steps:

  • Heat the oven to 350°F and lightly grease a 9x13-inch baking dish. In the bowl of a stand mixer (or in a large bowl, using a hand mixer) cream the butter with the brown sugar and vanilla until light and fluffy. Turn off the mixer and add in the flour, salt, ginger, and cinnamon. Mix dry ingredients in just until the dough is soft and pulled together. Press the dough firmly into the bottom of the prepared baking pan and refrigerate while preparing the filling and topping. Roughly chop the peaches into 1/2-inch pieces and toss with the sugar, cornstarch, and salt. Set aside. Wipe out the mixer bowl and mix 1/4 cup softened butter with the oats, flour, pecans, cinnamon, and salt until soft and crumbly. Melt the remaining 1/4 cup butter and set aside to cool. Spread the chopped peaches over the chilled dough base. Evenly crumble the topping over the peaches, and drizzle with the melted butter. Bake for 45 minutes or until the topping is lightly browned. Whisk together the lemon juice with enough powdered sugar to make a thin glaze. Drizzle over the bars. Cool (or chill) for at least an hour before slicing and serving. I do recommend chilling these; they will stay fresh (and slice more cleanly) for about 5 days when stored well-covered in the fridge.

  • Combine peaches with the flour, sugar, salt, and vanilla in a large bowl. Toss gently until combine. Spoon into prepared baking dish.
  • Whisk the brown sugar, flour, oats, cinnamon, salt, and pecans together. Make sure to get out all those brown sugar lumps. Add the butter and stir with a rubber spatula or a wooden spoon to break up the butter until the mixture is crumbly. (A fork works for this too!) Evenly sprinkle topping over peaches.
  • Bake for 40-45 minutes until the topping is golden brown and the peach juice is bubbling on the edges. Remove from the oven, place on a wire rack, and allow to cool slightly before serving. Serve warm, room temperature, or cold. Cover leftovers and store in the refrigerator for up to 5 days.
