Heat oil in a wok, add chopped onion and fry till soft and translucent. Now add pepper, lemon juice and salt and mix well. Add rice, stir well and stir fry for 2 minutes. Mix in cilantro and remove from heat.
Heat an iron skillet, brush melted butter over the tortillas and heat'em each side for 1-2 minute till they appear slightly buttery and crispy. Remove from heat, top each tortilla with 1/4 cup of rice and wrap it tight, slice it in half, secure with a tooth pick or place rolled end down on a serving tray. Serve with glass of orange juice and enjoy!!
