These easy Baked Zucchini Fries with Parmesan and Panko are just as crisp as fried fries for a fraction of the calories! A healthy, kid-friendly side dish or appetizer.

3 medium 7-inch zucchini (cut into 1/2 inch x 3 1/2-inch "sticks" (about 1 1/4 pounds))
1/2 cup Panko breadcrumbs
1/3 cup white whole wheat flour (or all-purpose flour)
1/4 cup finely grated Parmesan cheese
1/2 teaspoon kosher salt
1/4 teaspoon onion powder
1/4 teaspoon ground black pepper
2 large egg whites
Nonstick cooking spray (olive oil or canola oil flavored)
1/2 cup non-fat plain Greek yogurt
2 tablespoons chopped fresh basil (or 1/2 teaspoon dried basil)
1 clove minced garlic (about 1 teaspoon)
1/4 teaspoon Worcestershire sauce
1/8 teaspoon kosher salt
1/8 ground black pepper

Steps:

  • Make the fries: Position racks in the center of your oven and preheat the oven to 425 degrees F. Coat a large, rimmed baking sheet with nonstick spray.
  • Spread the sliced zucchini onto paper towels or a damp kitchen towel. Lightly pat dry. Let rest on the towels while you prepare the coating.
  • In wide, shallow dish (a pie dish works well) combine the Panko, flour, Parmesan, salt, onion powder, and pepper. In a separate bowl that is large enough to coat the zucchini, briskly whisk the egg whites until lightly foamy.
  • Working five or six zucchini fries at a time, place the zucchini in the bowl with the egg whites, tossing to coat them evenly. Shake off any excess egg white, then add them to the bowl with the Panko. Coat them with the Panko, pressing it on lightly so that it adheres. Arrange the zucchini on the baking sheet. Line up the sticks so that they are near each other and all fit, but make sure they do not touch. Repeat with remaining zucchini.
  • Lightly but thoroughly coat the exposed sides of the zucchini with the cooking spray. Bake for 10 minutes, then remove from the oven and lightly coat with baking spray once more. Return to the oven, rotating the pan 180 degrees, then continue baking for 10 additional minutes, until the crumbles are crisp and golden and the insides are tender.
  • While the zucchini bakes, prepare the dipping sauce. In a small mixing bowl, whisk together all of the ingredients: the Greek yogurt, basil, garlic, Worcestershire, salt, and paper. Taste and adjust the seasoning as desired. Serve the fries immediately, with the sauce for dipping.

An easy recipe for potato fritters with zucchini and cheddar cheese. They're perfectly crispy, perfectly cheesy, and ultra-delicious.

3 cups shredded zucchini (about 13 ounces or 2 medium)
2 cups shredded Yukon gold potatoes (about 12 ounces or 2 small/medium, scrubbed and peeled)
1/2 medium yellow onion (shredded)
3 large eggs (lightly beaten)
1/2 cup seasoned whole wheat breadcrumbs
1/3 cup white whole wheat flour (or substitute all-purpose flour)
1 teaspoon garlic powder
1 teaspoon kosher salt (plus additional to season)
1/2 teaspoon ground black pepper
1 teaspoon baking soda
1/2 cup freshly grated sharp cheddar cheese
1-2 tablespoons olive oil (for frying)
Plain nonfat Greek Yogurt (for serving)
Chopped fresh chives (for serving)

Steps:

  • If you'd like to keep the fritters warm between batches, preheat your oven to 200 degrees F. Spread the shredded zucchini, potatoes, and onion onto a clean kitchen towel and press out as much moisture as possible, changing the towel once or twice as needed.
  • Place the shredded vegetables in a large bowl, then add the eggs, breadcrumbs, flour, garlic powder, salt, pepper, and baking soda. Mix until completely combined, using your fingers if needed to make sure all of the ingredients are evenly distributed. Fold in the shredded cheese.
  • In a large nonstick skillet, heat 1 tablespoon of the olive oil over medium heat. Scoop a scant 1/4-cup portion of the fritter batter onto the frying pan and flatten into an even layer, using either the back of the measuring spoon or the bottom of a drinking glass.
  • Cook for 3 to 4 minutes until golden on the first side, then flip and continue cooking until the second side is golden as well. Depending upon your skillet, you may need to adjust the heat as you go to ensure the pancakes cook all the way through but still get crisp on the outside.
  • Repeat with the remaining pancakes, keeping batches warm in the oven as desired. If excess liquid collects in the bottom of the bowl, discard it. Serve warm, topped with Greek yogurt and fresh chives.

1 tablespoon olive oil
2 zucchini, sliced
1 large onion, finely chopped

  • Bring a large pot of water to a boil. Add potatoes and boil for 5 minutes. Drain and set aside.

  • Meanwhile, set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Transfer skillet into the broiler and cook until golden brown, about 5 minutes.

4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
½ cup dry bread crumbs
¼ cup olive oil
paprika to taste
salt to taste
ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
  • Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

1 small yellow onion, chopped
2 potatoes, peeled and cubed (slightly larger than zucchini cubes)
2 zucchini, cubed
Coarse salt
Ground black pepper
1 teaspoon dry Italian seasoning (or a combination of oregano and thyme)
Chopped parsley, for garnish (optional)

Steps:

  • Heat a 12-inch straight-sided skillet. Add oil, onion, and butter. Add potatoes and cook 10 minutes, stirring occasionally. Add zucchini, salt, pepper, and Italian seasoning and saute 8 to 10 minutes more, until zucchini are just tender. To serve, garnish with parsley.

This is something that has been made in our family for several generations. Everyone loves it. It is good for breakfast with eggs and for dinner topped with fresh diced tomatoes.

8 large russet potatoes
5 small zucchini
2 large onions
1 lb lean bacon
salt & pepper , to taste

Steps:

  • 1. Chop the raw bacon into 1 inch strips. Cook in a skillet until crisp. Reserve 3 Tbsp drippings. Drain bacon on paper towels, set aside.
  • 2. Wash and peel the potatoes, dice into medium cubes. Wash the zucchini, trim ends, quarter and dice. Peel onions, dice into medium chunks.
  • 3. Add the reserved bacon drippings to a skillet. Heat the pan. Add the potatoes, cook until slightly tender and browned. Add the zucchini and onions, cook until tender and potatoes are done. Add the chopped bacon, mix well. Turn the heat up, cook until brown on one side, turn over and brown other side.
  • 4. Note: I usually cook it a bit longer to get some of the moisture out. It is good topped with fresh tomatoes and also good for breakfast served with eggs.

Stir in eggs until blended. Add the onion, garlic and zucchini mixture; toss to coat., Heat 2 tablespoons oil in a large nonstick skillet over medium heat. Drop batter by 1/4 cupfuls into oil. Fry in batches until golden brown on both sides, using remaining oil as needed. Drain on paper towels.
