CHICKEN FRIED TOFU

Having lived in Texas, I got to know Chicken Fried Steak intimately.... specifically from a fast-food joint called Grandys. So in an effort to recreate that Texan comfort food I loved, I made this Chicken Fried Tofu. And oh man y'all - it IS good!

14 oz Tofu ((extra firm))
1 cup Unsweetened Almond Milk
2 tsp Apple Cider Vinegar (or lemon juice)
1/2 cup Chickpea Flour
1/2 tsp Onion Powder
1/4 tsp Salt
1/4 tsp Pepper
1 cup Panko Bread Crumbs
1 Tbs Paprika
2 tsp Garlic Salt
1 tsp Ground Ginger
1 tsp Dried Mustard
1 tsp Celery Seed
1/2 tsp White Pepper
1/2 tsp Salt
1/2 tsp Ground Thyme
1/2 tsp Dried Basil
1/2 tsp Oregano
1/4 tsp Black Pepper ((or to taste))
1/4 cup Flour
1 Tbs Nutritional Yeast
1 tsp Rubbed Sage
1/2 tsp Salt
1/2 tsp Black Pepper ((or to taste))
1 pinch Ground Thyme
3 cups Unsweetened Almond Milk ((or more to thin))

Steps:

  • Drain tofu and slice into 3 equally-thick steaks (about 1/2" thick)
  • Wrap the Tofu Steaks in paper towels and place something heavy on top to press out as much moisture as possible.
  • Press and drain for at least 20 minutes, changing paper towels as needed.
  • Whisk all dry ingredients together in a bowl, then spread evenly in a flat, shallow pan for dredging. Set aside.
  • Whisk all dry gravy ingredients together and then pour into a large skillet. Toast dry ingredients for 1-2 minutes over med-low heat, then slowly stir in 3 cups of almond milk.
  • Whisk to remove any lumps and stir often as it begins to thicken.Once the gravy has thickened to a thick, gravy-like consistency, remove from heat and set aside. ( It will thicken even more - thin with more almond milk if necessary)
  • Whisk all dry ingredients together in a small bowl.
  • Also, whisk either lemon juice or vinegar into almond milk to make the 'buttermilk'. Pour into the dry ingredients and mix until smooth.
  • Pour batter into a flat, shallow pan.
  • Preheat oven to 400 degrees F and place a wire cooling rack on top of a baking sheet.
  • With one hand place a Tofu Steak into the batter. Brush batter evenly to make sure it's evenly coated. With the same wet hand, place the battered Tofu into the breading.
  • Using your other (dry) hand, spoon or scoop the breadcrumbs evenly over the Tofu until evenly coated. Place Tofu Steak on pan.
  • Bake at 400 degrees F until brown and crispy, about 30 minutes.

FRIED CHICKEN AND GRAVY

1 pound self-rising flour
1 tablespoon pepper
1 tablespoon garlic salt
1 tablespoon salt
5 pieces bone-in chicken
Vegetable oil, for frying
1 small yellow onion, chopped

Steps:

  • Place the flour, pepper, garlic salt and salt in a large plastic resealable bag, and shake to mix. Set aside 5 tablespoons of the flour mixture for later use. Add the chicken to the resealable bag and shake until evenly coated.
  • Fill a cast-iron frying pan halfway with vegetable oil and heat over medium heat until a deep-frying thermometer inserted into the oil reaches 350 degrees F.
  • Add the chicken and fry until both sides are fully browned and reach an internal temperature of 165 degrees F, about 7 minutes for the white meat and 14 minutes for the dark meat. Drain the fried chicken on a paper-towel-lined plate.
  • Drain the oil from the frying pan, leaving behind the brown bits. Add the onions and saute over medium-high heat until they begin to brown, about 3 minutes. Add 3 cups of water and the reserved flour, and whisk until the gravy thickens, about 15 minutes.
  • Plate the chicken and pour some gravy over the top to serve.

1 cup all-purpose flour
3/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon rubbed sage
1/4 teaspoon pepper
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
Oil for frying
GRAVY:
2 tablespoons all-purpose flour
1/8 teaspoon salt
1-1/3 cups 2% milk

Steps:

  • In a large resealable plastic bag, combine the first five ingredients. Add chicken, a few pieces at a time, and shake to coat., In a large skillet over medium-high heat, heat 1/4 in. of oil; fry chicken until browned on all sides. Reduce heat; cover and cook for 30-35 minutes or until juices run clear, turning occasionally. Uncover and cook 5 minutes longer. Remove chicken to paper towels and keep warm., Pour off excess fat from the skillet, reserving the browned bits and 2 tablespoons drippings. Stir in flour and salt until blended; gradually add the milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serve with chicken.

Oh man this takes me back. Talk about the ultimate comfort food! I'm a sucker for creamy, peppery gravy! You must make mashed potatoes with this! This recipe is easy to double if you need. It's just me and DH, so I only make 2 breasts. I hope you like this as much as I do! Enjoy!

2 chicken breasts, pounded to about 1/2-inch thick
1 (12 ounce) can evaporated milk
1 teaspoon lemon juice
1/3 cup flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/3 cup vegetable oil

Steps:

  • Combine milk and lemon juice in a shallow bowl. In another shallow bowl, combine flour, salt, pepper and cayenne.
  • Dip chicken in milk and then flour. Reserve leftover flour and milk for gravy.
  • In a large skillet, heat oil over medium-high heat. Let oil get really hot before adding chicken! Fry chicken about 5 minutes on each side, until golden brown and cooked through. Remove chicken from pan.
  • Add remaining flour to skillet with pan drippings. Cook, stirring constantly over medium-high heat until flour is golden, about 1 minute.
  • Gradually stir in remaining milk. Cook, wisking well until gravy is smooth and thickened, which should be about 2 minutes.
  • Spoon gravy over chicken and serve!

3 (8 ounce) beef eye of round steaks
½ teaspoon salt
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
5 cups all-purpose flour
½ cup buttermilk
2 large eggs
2 tablespoons hot sauce (such as Frank's RedHot ®)
1 cup dry bread crumbs
2 tablespoons baking powder
1 ½ tablespoons garlic powder
1 ½ tablespoons smoked paprika
1 tablespoon onion powder
1 tablespoon Cajun seasoning
1 tablespoon sea salt
1 tablespoon ground ancho chile powder
1 teaspoon ground black pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon sweet paprika
1 teaspoon ground chipotle powder
1 teaspoon ground cumin
½ teaspoon ground sage
½ teaspoon ground mustard powder
½ teaspoon cayenne pepper
1 quart peanut oil for frying, or as needed
2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups beef broth
¼ cup heavy cream
salt and ground black pepper to taste

Steps:

  • Trim fat caps off steaks. Rub steaks with salt, then Worcestershire sauce and soy sauce. Let rest for 30 minutes.
  • Transfer one steak to a cutting board and cover with plastic wrap. Use a meat mallet to pound the steak until it is about half the original thickness and twice the original area. Repeat with remaining two steaks.
  • Place 2 cups flour in a shallow bowl. Whisk buttermilk, eggs, and hot sauce together in a second bowl. Combine remaining 3 cups flour, bread crumbs, baking powder, garlic powder, smoked paprika, onion powder, Cajun seasoning, sea salt, chile seasoning, black pepper, thyme, oregano, sweet paprika, chipotle powder, cumin, sage, mustard powder, and cayenne pepper in a third, large bowl.
  • Dunk each piece of steak in the plain flour, then in the egg wash, and then in the breading, making sure it gets completely coated in each step. Transfer to a plate and refrigerate for 1 hour; this is crucial and ensures the breading will adhere to the meat.
  • When ready to cook, prepare gravy: Melt butter in a saucepan over medium heat. Whisk in flour and stir until the mixture becomes paste-like and light golden brown, about 5 minutes. Gradually whisk beef broth into the flour mixture, then gradually whisk in cream, and bring to a simmer over medium heat. Reduce heat to low and cook, stirring occasionally, to let it further thicken. Keep warm as you cook the steaks.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Drop steaks into the hot oil and fry until breading is crisp and golden brown, 6 to 7 minutes. Transfer to a paper towel-lined plate to drain.
  • Serve hot steaks with gravy.

1/2 cup nutritional yeast
1 tablespoon shoyu or 1 tablespoon tamari
1 tablespoon olive oil

Steps:

  • slice tofu into cutlets about 1/4 inch thick.
  • press the water from the tofu cutlets for about 15 minutes.
  • coat cutlets in nutritional yeast.
  • in a large skillet (cast iron works best) heat oil over medium-low heat. when oil shimmers add tofu, dropping a small amount of shoyu onto each cutlet.
  • when the cutlets get brown on the bottom (4-5 minutes) flip and brown on the other side.
  • serve with gravy and enjoy.

frying oil (enough to cover the bottom of a skillet)
2 -3 tablespoons sesame seeds
1 lb tofu, sliced
1/2 cup good-tasting nutritional yeast flakes (use any leftover flakes for the gravy)
2 tablespoons tamari
2 tablespoons margarine
1/3 cup flour
1 -2 cup soymilk, milk (milk makes a very rich, thick gravy) or 1 -2 cup water (milk makes a very rich, thick gravy)
salt, pepper, and tamari to taste

Steps:

  • Heat the oil in the skillet.
  • Add the sesame seeds.
  • While these are heating, dredge each slice of tofu in the nutritional yeast flakes until both sides are generously coated.
  • When the seeds start to sizzle, arrange the tofu in the skillet.
  • Drizzle the tamari over the top.
  • Turn the slices and fry on both sides until crispy and brown. This can take anywhere from 15 minutes to 1 hour depending on how you like it.
  • For the gravy, leave the skillet as it is from making the fried chicken tofu.
  • Add the margarine and let it melt.
  • Stir in the flour and yeast until mixed, and let brown a little (but not burn) on medium-low heat.
  • Add your liquid and continue stirring until thickened.
  • Add salt, pepper, and tamari to taste.
