RICH VANILLA CUSTARD SAUCE



Rich Vanilla Custard Sauce image

This rich vanilla sauce is a creamy, custard-like sauce made with an egg and milk or cream. Add cinnamon, nutmeg, or a little rum to the sauce.

1/2 cup granulated sugar or light brown sugar (packed)
1 tablespoon all-purpose flour
Pinch ground nutmeg or cinnamon
1 large egg
2 tablespoons butter
1 1/2 cups milk or half-and-half
Dash salt
2 teaspoons vanilla extract

Steps:

  • Gather the ingredients.
  • In a medium saucepan, combine the brown sugar, flour, nutmeg or cinnamon, the egg, melted butter, milk, and salt. Whisk until well blended and then place the pan over medium heat.
  • Cook, whisking constantly​ until the mixture has thickened and coats the back of the spoon. To test, dip a spoon in the thickened mixture and turn it over. Run a finger down the back of a spoon. If the mixture does not run into the path your finger made, the sauce is done.
  • Place a mesh sieve over a bowl and strain the sauce through it. Stir the vanilla extract into the sauce and refrigerate, covered, until serving time.
  • Serve and enjoy.

1 cup half-and-half cream
2 large egg yolks
2 tablespoons sugar
2 teaspoons vanilla extract
2 cups fresh berries

Steps:

  • In a small heavy saucepan, mix cream, egg yolks and sugar. Cook and stir over low heat until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°. Do not allow to boil., Transfer to a bowl; stir in vanilla. Refrigerate, covered, until cold. Serve over fresh berries.

For the Tart Shell:
1 1/4 cups all-purpose flour
1/2 cup cold butter, cut into small pieces
3 tablespoons ice water
1/2 teaspoon lemon zest
For the Custard:
3/4 cup granulated sugar
1/2 cup all-purpose flour
1/8 teaspoon salt
2 cups whole milk
2 large egg yolks
2 tablespoons butter, cut into small pieces
1 1/2 teaspoons pure vanilla extract
For the Fruit Topping:
3 to 4 cups sliced fresh fruit, such as strawberries, peaches, nectarines, mangoes, or berries
For Glazing:
1/4 cup apricot preserve

Steps:

  • Gather the ingredients.
  • Process the flour and butter in a food processor until coarse crumbs form.
  • With the motor running, add the water and lemon zest through the feed tube and process until the dough leaves the sides of the bowl.
  • Gather the dough into a ball, flatten, wrap in waxed paper, and refrigerate for 30 minutes or just until firm enough to roll out. If not using immediately, wrap with plastic and refrigerate for up to three days or freeze up to three months.
  • Gather the ingredients.
  • Place the flour and butter into a medium bowl.
  • Cut in the butter with a pastry blender or 2 knives until the mixture resembles coarse crumbs.
  • Add the water and lemon zest. Stir until the dough holds together.
  • Gather the dough into a ball, flatten, wrap in waxed paper, and refrigerate for 30 minutes or just until firm enough to roll out. If not using immediately, wrap with plastic and refrigerate for up to three days or freeze up to three months.
  • Press the prepared tart dough evenly into the bottom and up the sides of a 9- or 10-inch tart pan with a removable bottom. Freeze for 20 to 30 minutes until very firm.
  • Preheat the oven to 425 F. Using a fork, prick the bottom of the tart shell at 1-inch intervals.
  • Line the pastry snugly with foil.
  • Bake 12 to 15 minutes until crust is set and just beginning to brown.
  • Remove the foil and bake until the crust is golden brown, 10 to 12 additional minutes. Set the crust on a wire rack and cool completely.
  • Gather the ingredients.
  • In a medium saucepan, mix the sugar, flour, and salt. Whisk in the milk until the mixture has a smooth texture. Make sure the whisk reaches the corners of the pan.
  • Bring to a gentle boil over medium heat and, whisking constantly, boil for 4 to 5 minutes until the mixture thickens. Remove the pan from the heat.
  • In a small bowl, whisk the egg yolks.
  • Gradually whisk in about 1 cup of the hot milk mixture.
  • Pour the egg yolk mixture into the saucepan and, whisking constantly, simmer for 2 to 3 minutes until slightly thicker. Remove the pan from the heat.
  • Add the butter and vanilla and stir until the butter is melted.
  • Strain the custard through a fine sieve set over a medium bowl.
  • Place plastic wrap directly on the surface of the custard to keep a skin from forming. Refrigerate until cool, about 1 hour.
  • Gather the shell, custard, fruit, and preserve.
  • In a small saucepan over medium heat, warm the preserve until slightly thinner in consistency, about 5 minutes.
  • ​ Stir the chilled custard and spread it into the prepared crust.
  • Top with the fresh fruit of your choice.
  • Brush the fruit with the preserve. Serve the tart right away or refrigerate, covered, for up to 24 hours. Enjoy.

Heavenly! These luscious, richly fragrant vanilla pudding custard parfaits are made with real vanilla bean, a hint of brandy, fresh seasonal fruits, lemony herbs from the garden, prepared mini shortcakes and fresh whipped cream--they're extraordinary! And, so simple to make (uses a box of vanilla pudding mix, not instant). If you are a vanilla lover as I am, then this is most definitely for you! Better make extra, as you'll be longing for more! :) These parfaits are best eaten while the pudding custard is still warm, but they're good the next day, too. Tip: I make the fruit salad in the morning or a day ahead, and make the vanilla pudding custard right before serving. Enjoy!!

1 (8 ounce) package vanilla pudding mix (not instant)
3 1/2 cups whole milk
1 vanilla bean, split and scraped
1/2 teaspoon pure vanilla extract
3 tablespoons brandy (or cognac)
about 3 cups fresh fruit (I used blackberries, blueberries, apricots, strawberries, and bananas)
1 tablespoon lemon juice
1/4 cup sugar (to taste)
1 tablespoon finely minced fresh lemon verbena leaf
1 tablespoon finely chopped fresh lemon balm leaves
1/2 pint whipping cream
1/2 teaspoon vanilla extract
3 tablespoons sugar
8 prepared mini shortcakes

Steps:

  • Make the fruit salad: Combine the fresh fruits in a bowl with the sugar, lemon juice, lemon verbena and lemon balm. Cover and refrigerate.
  • Make the Vanilla Pudding Custard, about 1 hour before serving: In a microwave safe 2-quart bowl, whisk together the pudding mix, milk, brandy, vanilla extract and scraped vanilla bean and seeds. Cook in the microwave on high heat for 6-8 minutes, whisking every two minutes, until thickened.
  • Make the Whipped Cream: Whip the cream until soft peaks form; add the vanilla extract and sugar. Whip until stiff peaks form.
  • Assemble the parfaits: Place a mini shortcake in the bottom of each individual dessert or parfait glass (I used mini trifle glasses). Ladle the warm vanilla pudding custard over the shortcakes. Spoon the fruit salad over, and top with whipped cream. Garnish tops of parfaits with fresh sprigs of lemon verbena, lemon balm, or fresh fruit.

A simple and delicious custard sauce to serve over cake, fresh fruit, pie or anything else that could use some dressing up! Note - the cooking time does not include 30 minutes to steep the vanilla bean in the custard or cooling time.

1 1/2 cups half-and-half
1 vanilla bean, split lengthwise
6 large egg yolks
1/3 cup sugar

Steps:

  • Place half and half in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer. Remove from heat, cover, and let steep 30 minutes.
  • Whisk yolks and sugar in medium bowl until thick. Whisk half and half with vanilla bean into yolk mixture 1 TBLS at a time until the eggs warm up to prevent cooking. Return mixture to same saucepan. Stir custard over low heat until thickened enough to leave path on back of spoon when finger is drawn across, about 6 minutes (do not boil). Pour into bowl. Chill uncovered until cold, about 2 hours. Then cover and chill until you use it, can be made 1 day ahead. Cover; chill. Remove vanilla bean before using - you can rinse dry it and add it to a jar of sugar for vanilla sugar.
  • Note - some people like warm custard sauce over cake - just cool to your prefered temp and frig any leftovers.
