Time 30m

Number Of Ingredients 11

1 pound rigatoni
Kosher salt and freshly ground pepper
3 tablespoons butter
1/4 cup flour
2 teaspoons mustard powder
2 3/4 cups warm whole milk, warmed
1/4 cup dry vermouth
1/2 cup (2 ounces) finely chopped Raclette
2 cups (8 ounces) grated Gruyere
2 cups (4 ounces) grated Emmentaler
Chopped fresh flat-leaf parsley, for serving

Steps:

  • Boil pasta in a medium pot of boiling salted water until al dente, about 2 minutes less than per package instructions. Drain, reserving 1 cup pasta water.
  • Return empty pot to medium heat and add butter. When butter melts and foams, add flour and whisk until darkened slightly, 1 to 2 minutes. Add mustard powder and whisk to combine. Slowly whisk in milk and vermouth. Bring to a boil, then reduce heat to medium and cook, stirring often, until thick enough to coat the back of a spoon, 3 to 4 minutes.
  • Reduce heat to low and add cheese in 3 batches, starting with Raclette. Follow with Gruyere and Emmentaler. Whisk to fully combine after adding each cheese. Season with salt and pepper. Add pasta, stir to coat, and serve, sprinkled with parsley and more pepper.

FONDUE MAC & CHEESE

Fondue Mac & Cheese image

I was looking for a "grown up" macaroni and cheese recipe and this is what I came up with after reading a few different recipes and combining the best parts of each, this is what I came up with! It's a favorite and I always double the recipe for leftovers!

Provided by Jim Pentland

Categories     Pasta Sides

Time 45m

Number Of Ingredients 12

1 lb pasta of your choice
3/4 lb bacon (i use pre-cooked - much less messy)
3 Tbsp butter
3 Tbsp flour
3 c hot milk
1 c shredded raclette (plus 1/2 cup for topping)
1 c shredded gruyere
1 c shredded fontina
1/2 c panko bread crumbs
fine sea salt
freshly ground black pepper
freshly grated nutmeg

Steps:

  • 1. Preheat oven to 375 Farenheit
  • 2. Cook the macaroni in a large pot of liberally salted water a few minutes short of al dente.
  • 3. While the pasta cooks, melt butter in a large sauce pan over medium heat. In another sauce pot, heat milk (DO NOT BOIL). Add 3 tablespoons of flour. Cook the roux, stirring constantly, until thickened and nutty in color about 3 minutes. Pour in the hot milk and wisk constantly until thickened and the sauce coats the back of a spoon, about 5 minutes. Season lightly with salt, pepper and nutmeg. Stir in the cheeses a handful at a time and continue to stir until melted. Stir in the macaroni until evenly incorporated.
  • 4. Grease large baking dish (or four 6 inch mini-skillets or six 12 inch ramekins) with butter. Add macaroni and cheese mixture, mounding the top. Sprinkle top of dish with remaining raclette and breadcrumbs. Drizzle 1-2 tablespoons melted butter.
  • 5. If using large baking dish, bake 25 minutes or until golden brown and bubble. If using individual ramekins, bake 15 minutes. Let sit for 5 minutes and serve!
  • 6. This is a great make ahead dish you can freeze and bake off when you need it. I sometimes make this and put it in individual loaf pans, freeze and give it to friends and family - they always look forward to it!

CLASSIC CHEESE FONDUE

Classic cheese fondue image

Get together with friends around the ultimate sharing dish - a classic cheese fondue. Enjoy with crusty bread, boiled potatoes, crudités and pickles

Provided by Anna Glover

Categories     Dinner

Time 35m

Number Of Ingredients 8

200ml dry white wine
1 tbsp lemon juice
200g comte or gruyère, grated
200g emmental, grated
2 tsp cornflour
1 tbsp kirsch or schnapps
1 garlic clove, halved (optional)
crusty bread, boiled new potatoes, vegetable crudités and cornichons, to serve

Steps:

  • Pour the wine and lemon juice into a heavy-based pan over a medium-low heat and warm until steaming. Add all of the cheese, a handful at a time, whisking between each addition until all the cheese has been added. Continue to stir for 4-5 mins until everything is fully melted, smooth and creamy. Mix the cornflour with the kirsch in a small bowl, then stir this into the cheese mixture. Continue to cook over a low heat for a minute more.
  • Rub the garlic on the inside of the fondue pot, if you like, then carefully pour the cheese mixture into the pot and immediately place it over the flame. (If you don't have a fondue set, add the garlic along with the wine in step one, then remove and discard it before you add the kirsch mixture.) Serve immediately with crusty bread, boiled new potatoes, vegetable crudités or cornichons for dunking, if you like. You can place the fondue back over a low heat if you need to reheat it after serving.

  • Cook the pasta to just shy of al dente, so it is still firm. Drain and set aside. Toss it with a tiny bit of olive oil so it doesn't clump.
  • In a bowl, toss the grated cheeses with the cornstarch and set it by the stove. The cornstarch is important because it helps the wine and cheese blend into a smooth emulsion
  • In a saucepan, heat the wine to a simmer, and then slowly add the cheese, a handful at a time, stirring or whisking continuously to incorporate it before going on to the next handful. The mixture should be hot but not boiling, and it only takes a short time...don't walk away.
