DAFFODIL CAKE
I've made this cake for my children(see photo below), grandchildren and great-grandchildren. It is their favorite birthday cake...it's light and tasty, and lends itself beautifully to decorating. I often place a small arrangement of fresh flowers in the center.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add cream of tartar and vanilla; beat on medium speed until foamy. Gradually beat in sugar, 1 tablespoon at a time, until soft peaks form. Combine the flour, baking powder and salt; fold into egg white mixture. Set aside., In another large bowl, beat egg yolks and water until thick and lemon-colored. Combine the flour, sugar, baking powder and salt; gradually beat into egg yolk mixture. Beat in vanilla. , Alternately spoon yellow batter and white batter into an ungreased 10-in. tube pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Immediately invert pan; cool completely., For frosting, combine the sugar, flour and salt in a small saucepan. Stir in pineapple juice until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool. Fold in whipped topping. , Remove cake from pan to a serving plate. Spread frosting over top and sides of cake. Store in the refrigerator.

- Daffodils last longer in shallow water. Put them in a clean vase with cool water, and change the water every couple of days.
- The secret to keeping cut flowers looking good as long as possible is to minimize the growth of bacteria in the water and to provide nourishment to replace what the flowers would have received had they not been cut.
- When daffodil stems are cut, they emit a kind of sap that can be harmful to other flowers. Soak the cut daffodil flowers alone in water overnight and then rinse the stems before arranging them with other flowers.
- Display your flowers in a cool spot that's out of direct sunlight and away from heating or cooling vents.
- Don't place daffodils (or any other fresh flowers, for that matter) near ripening fruit. Ripening fruit releases small amounts of ethylene gas that can age flowers prematurely.

- Pick about 8-10 cups of fresh blooms. This isn't an exact science. For this batch, the kids and I picked one-part dandelions to two parts forsythia blooms. You can just make this with forsythia blooms, but I like the pollen and color boost the dandelions give the jelly.
- I don't bother to take the bottoms off the forsythia as they just taste "plant-y" but I do remove the green bottoms of the dandelions since they're bitter. I cut off the green part with kitchen scissors and keep the petals, pollen and fluff.
- Pour enough boiling water over the flowers to cover them—at least 4 cups. The more water you add, the weaker the tea will be and, therefore, the less golden flavor the jel-ly will have in the end. Fiddle with the recipe a few times until you find what you like.
