Chile-Rubbed Steak with Creamed Corn image

1 tablespoon ancho chile powder
2 teaspoons sugar
Kosher salt and freshly ground pepper
1 1/2 pounds flank steak
2 tablespoons extra-virgin olive oil
1 white onion, diced
2 Cubanelle or banana peppers (or 1 large green bell pepper), seeded and diced
2 cups frozen corn
1 5-ounce can evaporated milk (about 2/3 cup)
3 scallions, thinly sliced
Lime wedges, for serving

Steps:

  • Preheat the broiler. Combine the chile powder, sugar and1 teaspoon each salt and pepper in a small bowl. Brush the steak all over with 1 tablespoon olive oil, then rub the spice blend on both sides. Transfer to a broiler pan; let sit 10 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a medium saucepan over medium-high heat. Add the onion and peppers and cook, stirring occasionally, until the onion is translucent, about 4 minutes. Add the frozen corn; cook, stirring, 2 minutes. Reduce the heat to medium and add the evaporated milk. Cook until thick and creamy, about 7 minutes. Season with salt and pepper.
  • Broil the steak 3 to 4 minutes per side for medium rare. Transfer to a cutting board and let sit 5 to 10 minutes, then slice against the grain. Serve the steak with the creamed corn; sprinkle with the scallions and serve with lime wedges.

4 teaspoons chili powder
2 teaspoons ground coriander
2 teaspoons light-brown sugar
1 teaspoon dried oregano
Coarse salt and ground pepper
2 1/2 to 3 pound beef skirt steak, cut into 8 even pieces
1 tablespoon olive oil

Steps:

  • Heat broiler with rack 4 inches from heat. In a small bowl, combine chili powder, coriander, sugar, oregano, 1 tablespoon coarse salt, and 1/2 teaspoon pepper. Coat steaks evenly on both sides with oil, then spice mixture, patting to adhere.
  • Place half the steaks on a rimmed baking sheet or broiler pan. Broil, without turning, until medium-rare, 5 to 8 minutes, depending on thickness. Transfer to a large platter, and cover with aluminum foil; let rest 10 minutes. Meanwhile, broil remaining steaks; transfer to a large plate, let cool to room temperature, then cover and refrigerate to use later for Steak Sandwich with Peppers.
  • Remove foil and divide steaks among four serving plates. Drizzle with any accumulated juices, and serve with Romaine-Heart Salad.

You can use a spoon or spatula to put on the rub to avoid getting the spicy rub all over your hands. If chipotles are not available, you can use jalapenos or other red chilis. This is great served with Lone Star coleslaw and jalapeno cornbread.

5 garlic cloves
1/2 teaspoon ground cumin
1/4 cup cilantro
1 (7 ounce) can red chipotle chilies (not the liquid)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
4 lbs flank steaks

Steps:

  • Place the garlic, cumin, and cilantro in a food processor and blend till coarsely chopped.
  • Add the chilis(this will be quite spicy-use less if desired), olive oil, salt, and pepper and process until smooth.
  • Rub the chili mixture onto the steak. Let the steak stand at room temperature 2-3 hours(or in the refrigerator overnight). If you refrigerate, allow the meat to come to room temperature before grilling.
  • Grill over a hot falme for about 5 minutes per side for medium rare, a few minutes longer for well done. Enjoy!

1 tablespoon chili powder
2 cloves garlic, minced
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
A pinch cayenne pepper
1 1/4 pound top sirloin steaks cut 1-inch thick
12 small corn tortillas (5 to 6 inches in diameter)
3 cups shredded red cabbage
1/2 cup chopped cilantro leaves
1 lime, cut into wedges
2 cups Avocado Lime Salsa, recipe follows
1 large cucumber peeled, seeded and cut into chunks (about 2 cups)
2 avocados, cut into chunks
1/2 red onion, diced
2 limes, juiced (about 1/4 cup)
Salt
1/4 cup chopped cilantro leaves
2 jalapeno chiles, chopped, plus more to taste

Steps:

  • In a small bowl stir together chili powder, garlic, cinnamon, salt and cayenne pepper. Rub spice mixture on both sides of steaks.
  • Grill or broil steaks for 5 to 6 minutes on each side for medium rare, turning once. Remove from grill and let meat sit for 10 to 15 minutes. Carve into thin slices.
  • Warm tortillas by placing them on the grill, for about 30 seconds, turning once. Or place 6 tortillas at a time between 2 moist paper towels and microwave for 45 seconds. Wrap in cloth napkin or place in a tortilla warmer to keep warm. Place the carved steak, warm tortillas, cabbage, cilantro, lime and Avocado Lime Salsa in serving dishes and let diners make their own tacos at the table.
  • Place cucumber, avocado and onion in a large bowl and add lime juice and salt. Add cilantro and chiles and toss gently.

4 teaspoons olive oil
1/4 cup olive oil
6 cups shredded red cabbage
coarse salt
pepper
1 (18 ounce) package plain prepared polenta
1 tablespoon chili powder
1 tablespoon sugar
1 1/2 lbs flank steaks

Steps:

  • Heat broiler; set rack 4 inches from heat. Whisk vinegar and 3 teaspoons oil together in a large bowl, then add the cabbage. Season with salt and pepper and toss thoroughly. Refrigerate.
  • Slice polenta crosswise into 8 equal pieces. Heat 1/4 cup oil in a large skillet on medium heat, then add polenta and cook until golden on both sides, about 10 minutes per side. Remove to paper towel, season to taste.
  • Combine chili powder, sugar, 1 teaspoon salt, and 1/4 teaspoon pepper. Place steak on a broiler-proof pan. Coat both sides with remaining teaspoon oil and spice mixture. 2 tablespoons tomato paste
2 teaspoons chili powder
salt
1 lb flank steak
4 (10 inch) flour tortillas
1 cup salsa
1 cup shredded cheddar cheese
1 cup iceberg lettuce, thinly shredded

Steps:

  • Preheat broiler and place rack about 6" from heat source.
  • Line a broiling pan with foil.
  • Combine tomato paste, chili powder and a pinch of salt in a small bowl.
  • Rub tomato mixture onto steak, using fingers to press as much as possible onto meat.
  • Place steak on pan and broil for about 6 minutes per side for medium rare.
  • Remove steak to a cutting board and let stand for 10 minutes.
  • Working against the grain, cut steak into very thin slices.
  • Heat tortillas.
  • Lay tortillas flat on a work surface and spread 1/4 cup salsa evenly over bottom of each.
  • Arrange equal amount of steak on each tortilla, placing it on salsa.
  • Sprinkle 1/4 cup cheeseand 1/4 cup lettuce over steak.
  • Carefully roll each tortilla into a thich cylinder, tucking in sides as you go.
  • Cut in half crosswise and secure with toothpicks.
