These super thick and fluffy flourless pumpkin pancakes are a filling, healthy, satisfying, protein-packed and easy breakfast recipe! Made with no eggs, butter, oil or flour, these pumpkin pancakes are naturally gluten free and vegan!

1 cup rolled oats (gluten free, if needed)
1/2 teaspoon pumpkin pie spice (can sub for a mix of cinnamon, ginger and cloves)
1 tablespoon maple syrup
1/2 cup pumpkin puree
1 tablespoon baking powder
1 tablespoon apple cider vinegar
1/4 cup milk of choice (* See notes)
1/4 cup chocolate chips (Optional)

Steps:

  • Combine all the ingredients in a blender and blend until smooth and combined. If the batter is too thick, add extra milk.
  • Let the batter sit for at least 5 minutes, for the mixture to thicken.
  • Preheat a nonstick pan over medium heat. Once hot, use a 1/4 cup and pour pancake batter on the pan. Cook for 2-3 minutes or until you can easily slide a spatula underneath. Flip. Cook for another 2-3 minutes on the second side. Repeat until all the batter is used up.

No flour? No problem! This No-Fuss Flourless Oat Pancakes recipe will be one you make even if you DID have flour - that's how good it is!

1 1/2 cups (4 1/2oz/128g) oats ((rolled or quick-cooking) )
1 teaspoon baking powder
1/8 teaspoon salt
2 large eggs*
2 medium (1 cup/7 1/2oz/214g) bananas, (mashed)
1 teaspoon vanilla extract
3 tablespoons (1 1/2oz/43g) butter, (melted)

Steps:

  • Either using a food processor or a hand blender, process the oats until they are finely ground, similar to oat flour.
  • Place the ground oats, baking powder, and salt in a medium bowl. Whisk until combined.
  • In a separate large bowl, mash the bananas until fine. Whisk in eggs and vanilla.
  • Add the dry ingredients into wet and mix until combined.
  • Finally, add in melted butter and mix again until combined.
  • Heat a large skillet or non-stick pan over medium/low heat. Spoon on about 1/2 cup of batter and let cook for 2-3 minutes on each side. Repeat with the remaining batter.
  • Serve fresh from the pan with fruit, syrup, and even a little Irish butter on top.
  • Store leftovers in the fridge for up to 2 days. Reheat in the microwave or on a pan again.

Steps:

  • Mix banana and eggs together in a bowl until smooth. Add ground flax seed and vanilla extract; mix batter well.
  • Heat coconut oil in a small skillet over medium-low heat. Scoop batter, about 1/4 cup per pancake, onto the skillet and cook until the center starts to bubble, about 30 seconds. Flip pancakes and cook until bottoms are lightly browned, 1 to 2 minutes more.

Add to the basic recipe with a few chopped nuts, blueberries, chocolate chips, etc., but remember that they will add some carbs to the whole count, which is under 10 for the entire recipe of more than 8 pancakes.

1/8 cup flax seed
1/4 cup protein powder, any flavor
3 eggs
2 teaspoons baking powder
1/4 cup overflowing heavy cream
1 dash vanilla
1 pinch salt
1/2 teaspoon sugar substitute (to taste)

Steps:

  • Grind the flax seeds in a coffee grinder, making approximately 1/4 cup of meal.
  • Add baking powder, protein powder, salt and sweetner to the meal.
  • In a separate small bowl beat the eggs with the vanilla and heavy cream.
  • Pour into the meal mixture and blend thoroughly with a fork or whisk.
  • Heat griddle to medium heat; melt butter or coconut oil, and drop pancakes by quarter cups full. Turn when bubble appear on top of pancake, cooking for just a minute more.
  • Serve with your favorite syrup.

1/2 cup all-white liquid egg substitute
3 tablespoons ground flax seeds
1 teaspoon baking powder
1/2 teaspoon vanilla
2 (1 g) packets Splenda sugar substitute
cinnamon
nutmeg
2 tablespoons cream cheese
vanilla
0.5 (1 g) packet Splenda sugar substitute

Steps:

  • Mix first seven ingredients in a small bowl. (The baking powder blobs up so you have to stir really well until it dissolves).
  • Spray a heated pan with non-stick spray and pour in half of the mixture. It will immediately sort of fluff up like a pancake. Brown on one side and flip. I cooked about 2 minutes on each side.
  • The "frosting" for this is optional; mix together the last three ingredients in a small cup and spread on pancakes. You can experiment with the ingredients to alter the sweetness. Also, try topping with some fat free yogurt in phase 2.

1 dash(es) vanilla extract
1 pinch salt
1/2 tsp sugar substitute (to taste)

Steps:

  • 1. Grind the flax seeds in a coffee grinder, makes about 1/4 cup meal.
  • 2. Add baking powder, protein powder, salt and sweetener to the flax meal.
  • 3. In a separate small bowl, break the eggs and beat with the vanilla and heavy cream
  • 4. Pour the egg/vanilla/cream mixture into the flax meal mixture and combine well.
  • 5. Heat your griddle/fry pan to medium; melt either butter or coconut oil and then using 1/4 cup pour the pancake batter onto the baking surface.
  • 6. Turn when the pancakes have bubbles all over, and then cook for another minute.
  • 7. Serve with your favourite syrup. I use maple syrup on mine...mmmm
