Flounder With Bananas, Almonds and Rum image

A requested favorite served at the Black Dog restaurant on Martha's Vineyard. This is a fun, tropical combination of ingredients and flavors. It's pretty healthy, too. Enjoy!

Number Of Ingredients 13

1 cup flour
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
2 lbs flounder, flillets
2 eggs, beaten
2 tablespoons canola oil
1 tablespoon unsalted butter
1/4-1/2 cup sliced almonds
2 ripe bananas, sliced
1/4 cup rum
2 tablespoons unsalted butter
1 pinch ground nutmeg
kosher salt & freshly ground black pepper, to taste

Steps:

  • Warm oven to 200 degrees F. or lowest setting - to keep fish warm.
  • Mix the flour with the salt and pepper on a large plate.
  • Dredge the flounder in the flour, shake off excess, and dip in the beaten egg.
  • Combine the butter and oil in a large saute pan and put over med-high heat.
  • Add the flounder fillets and saute quickly, about 2-3 minutes per side.
  • Remove from the pan and set aside in a warm oven.
  • To the same pan, add the almonds and saute briefly, then add banana slices.
  • Hold pan away from the heat (very important so it doesn't flame) and add rum. * Never pour rum directly from the bottle into a hot pan, since it is highly flamable.
  • Return the pan to heat.
  • Add the butter and nutmeg - adjust seasoning.
  • Cook briefly and pour sauce over the flounder.
  • Enjoy!

This dessert is to die for. A moist gingerbread cake that stands very well on it's own with no other garnish, but you just have to have the bananas as they tip what is quite delicious to over the top!

1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
2 cups flour
2 1/3 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups boiling water
3/4 cup molasses
3/4 teaspoon baking soda
6 tablespoons unsalted butter (room temperature)
3/4 cup light brown sugar (Packed)
1 large egg (room temperature)
1 tablespoon unsalted butter
1/2 cup heavy cream
3 tablespoons light brown sugar (Packed)
1/2 teaspoon ground cinnamon
1 tablespoon dark rum
3 bananas (Peeled and sliced 1/4 inch thick)
whipped cream, for serving

Steps:

  • Preheat the oven to 350*F.
  • Butter and flour an 8 inch square dish and set aside.
  • Whisk together the spices, flour, baking powder and salt. Set aside.
  • Stir together the molasses, soda and hot water and set aside to cool to room temperature.
  • Cream together the butter and brown sugar until light and fluffy. Beat the egg into the creamed mixture.
  • Add the cooled molasses mixture, then the dry ingredients, mixing only until blended. Pour into the prepared pan and bake in the oven until tests done, 30 to 40 minutes.
  • In the meantime do the banana sauce. In a medium saute pan, combine the butter, cream, brown sugar, cinnamon and rum. Bring to a boil, then reduce the heat and cook for several minutes longer, stirring constantly until the sauce thickens slightly, about 2 minutes longer. Gently stir in the bananas and heat until heated through.
  • To serve, cut the gingerbread into rectangles and place on dessert plates. Top each portion with some of the banana sauce and then a dollop of freshly whipped cream.

3 tablespoons butter
3/4 cup packed brown sugar
Dash ground nutmeg
4 medium firm bananas, halved and sliced
1/4 cup golden raisins
1/4 cup rum
2 tablespoons sliced almonds, toasted
1 quart vanilla ice cream

Steps:

  • In a large nonstick skillet, melt butter over medium-low heat. Stir in brown sugar and nutmeg until blended., Remove from the heat; add the bananas, raisins, rum and almonds. Cook over medium heat, stirring gently, for 3-4 minutes or until bananas are glazed and slightly softened. Serve with ice cream.

A friend of mine gave me this recipe a while ago and I cannot keep them in the house! They are simple, delicious, and easy to make! These banana muffins use only bananas to sweeten and almond flour for added nutrition! You can add chocolate chips for an added bonus!

5 ripe bananas, mashed, or more to taste
½ cup melted butter
1 egg
¾ cup almond flour
¾ cup whole wheat pastry flour
1 teaspoon baking soda
1 pinch salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  • Mix bananas, butter, and egg together in a mixing bowl. Stir in almond flour, pastry flour, baking soda, and salt until blended.

  • In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in egg, mashed bananas, sour cream, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour and the almonds.
